How I Came Up With This Easy Keto Meal Recipe

Long story short, I got the idea for this recipe from my hairdresser. I was getting my hair colored a few weeks ago when we started talking about all things food. My hairdresser said she had prepared a very delicious chicken salad with pesto. I actually didnt ask for further details, but I understand her salad also contained some pasta as she is not a ketoer or even a low-carber.

After that, I was so intrigued with the idea of a Chicken Pesto Salad that I wrote it down to my idea list. I was playing with the recipe idea somewhere at the back of my mind and finally decided to create the actual recipe this week.

My original plan was to add keto pasta, i.e., shirataki noodles, to the salad, but I gave up the idea. As you know, shirataki is not very nutritious it just fills your stomach and as Im a proponent of real food, I avoid ingredients that are void of nutrients. Dont get me wrong, shirataki noodles or rice are still good ingredients for keto, especially if you want to eat low-calorie food.

So, for my keto Chicken Pesto Salad, I naturally needed chicken and pesto, but what else? Lettuce, maybe. On the other hand, cabbage or another crunchy vegetable might lend a fabulous texture, I thought.

Well, I decided to opt for the lettuce anyway and picked some gem lettuce from the supermarket shelf.

I originally wanted to add pine nuts to the salad but thought that they wouldnt provide enough value, and on the other hand, pesto contains some pine nuts as well.

Ingredients Needed For Chicken Salad

  • Cooked chicken breasts I like to use rotisserie chicken. Youll need a large rotisserie chicken to get 3 cups cubed chicken breasts .
  • Lemon be sure to zest first before slicing and juicing as this recipe calls for both.
  • Celery this gives the chicken salad a nice light crunch. Dice it up small.
  • Green onions red onions can be substituted for a stronger flavor.
  • Parsley skip the dried it doesnt have near as much flavor as fresh.
  • Mayonnaise use good quality mayonnaise for best flavor, such as Hellmans/Best Foods. I really does make a difference since theres a fair amount used.
  • Dijon mustard feel free to add more to taste if you like a stronger mustard flavor.
  • Bread or lettuce for serving.

What Kind Of Salsa To Use

Again, you can use any kind of salsa. If you’re making this for kids who can’t tolerate spicy foods, then make sure to use super mild salsa, or a homemade salsa with no spice. You can even experiment with some fruit salsas, such as a peach-tomato salsa, or a mango-tomato salsa for a hint of sweetness.

The recipe calls for about 2 tablespoons of salsa, but feel free to adjust it to taste.

Ingredient Chicken Salad Directions:

  • Rinse & strain the canned chicken . If youre using fresh chicken breasts, bring them to a roaring boil and then cook on stove-top for 10-15 minutes on medium heat. Once cooked through, strain the breasts and use hand mixer to shred the chicken. You can also use a rotisserie chicken and pull apart pieces to use.
  • Next, put the chicken in a mixing bowl and continue to shred it using two forks. Then add in the miracle whip, sour cream and vegetable recipe mix.
  • Use a spatula or spoon to mix thoroughly until evenly combined. You can add a dash of salt and pepper while mixing if you wish.
  • Refrigerate at least an hour before serving or make the day before and refrigerate overnight.

    What I like to do is put a pot of 2 quarts of water and 1 tablespoon salt on to boil. As the water is heating, I cut skinless boneless chicken breasts into large chunks. When the water boils, I add the chicken, and return the pot to a simmer. Then I turn off the heat, and cover the pot and let the meat sit for 15 minutes in the hot water while I prepare everything else. Poaching chicken this way allows the chicken to cook gently, so the chicken retains more moisture.

    After the chicken is finished cooking you can save the poaching liquid as light chicken broth.
