Aldi Salad Idea #: Pesto Tortellini Salad

This recipe is just 5 ingredients and couldnt be easier to prepare. It goes well with burgers, steak, grilled chicken, or shrimp. Its also a perfect salad for a potluck.

Ingredients Needed:

  • 2 packages of Priano Three Cheese Tortellini I found these in the refrigerated cheese section. $1.99. There are dried tortellini packages by the pasta, but we prefer the refrigerated version.
  • 1 jar 6.7 oz Pesto Sauce $1.69
  • 1 package of grape tomatoes $1.99 $2.89. We prefer Cherub Tomatoes which cost a few cents more.
  • red onion, diced A bag of red onions costs $2.19. You will use red onions in other recipes. Use 1/2 1 full onion depending on your love of onions.
  • fresh mozzarella $2.39. Chop the mozzarella into bite-sized pieces or look for the mini mozzarella balls.

Instructions:

  • Prepare the tortellini according to package instructions, BUT after draining rinse in very cold water until the pasta has cooled.
  • In a large serving dish, combine all of the ingredients. Use as much of the pesto sauce as youd like. I use about 1/2 3/4 of the jar.

    How To Make Mexican Stuffed Capsicum

    Black Bean Salad

    Method:

  • Preheat oven to 200°C . Line a baking tray with baking paper.
  • Halve the red capsicum crossways and scoop out seeds and pith. Place on baking tray and bake in oven for 10 minutes or until a little tender.
  • Cook the microwaveable rice pouch to packet directions and fluff into a bowl, with a fork. Set aside.
  • Remove stalk of green capsicum and carefully remove pith and seeds. Finely chop the green capsicum and the onion. Heat the oil in a large frying pan over medium heat. Add onion and green capsicum and cook for 5 minutes or until soft. Add the cumin and paprika and cook for 1 minute while stirring.
  • Add the brown rice and quinoa, black beans, salsa, corn and honey and half cup water to frypan. Cook for 1 minute, stirring, until combined.
  • Season to taste with salt and black pepper. Fold through three-quarters of the cheese.
  • Spoon the mixture into the halved capsicum and return to baking tray. Sprinkle with remaining cheese.
  • Bake in oven for 20 minutes or until the filling is heated through, the capsicum tender and cheese melted and golden.
  • Sprinkle with pepitas and serve with lemon wedges. Garnish with coriander sprigs, if using.

    Is Quinoa Salad Healthy

    Quinoa is rich in fiber, minerals, antioxidants and all nine essential amino acids, making it one of the healthiest and most nutritious foods. Add mango, black beans and bell peppers, and this quinoa salad packs with vitamin C, vitamin A, fiber, folate, iron and lutein, so its not just tasty, its also good for you.

    Black Bean And Vegetable Loaded Sweet Potatoes

    Method

  • Preheat oven to 200°C . Rinse sweet potatoes in cold water. Sprinkle with salt and place on baking tray. Bake for 50-55 minutes or until tender.
  • Combine 2 tablespoons oil, 2 tablespoons vinegar, mustard and 1 teaspoon of sugar in a large bowl. Season with salt and black pepper. Cut the stems from the kale and shred. Add to bowl and toss with the dressing.
  • Thinly slice green beans on the diagonal. Steam for 1-2 minutes over boiling water. Cool in cold water, drain and add to kale mixture.
  • Finely chop the spring onions, quarter the tomatoes and crumble the feta. Grate the carrots. Reserve.
  • Slice onion, rinse and drain the black beans. Combine paprika, cumin and bbq spice in a small bowl.
  • Heat 3 tablespoon of oil in a large frying pan. Add the onion and cook for 5 minutes or until softened. Add the spice mixture and cook for 1 minute stirring. Add the black beans, tomato passata, grated carrot, remaining sugar, remaining vinegar and ½ cup water. Cook, stirring over medium heat for 1-2 minutes or until heated through.
  • Thinly slice the apple and add to kale salad. Place cooked sweet potatoes on 4 plates and cut a split in the top of each. Squeeze open and fill with bean mixture. Sprinkle with the spring onions, feta and tomatoes. Serve with the kale and apple salad.
  • Serves:

    • 50g Emporium Selection Greek style fetta
    • 2 x 400g cans El Tora black beans
    • ½ cup Just Organic Italian tomato passata
    • 100g green beans
    • 3 tbsp white wine vinegar
    • 1 tsp dijon style mustard

    A little over a week ago, Ryan and I found out that our new neighbors were big fans of Survivor and tuned in every Wednesday night to watch the reality show unfold. Since Ryan and I were borderline convinced we were the only Survivor fans remaining, we had to take advantage of stumbling upon local fans and planned a casual watch-party cookout .

    We figured it would be an excuse to get way too into the reality show and a great way to get to know our new neighbors over yummy food!

    Since the cookout was a super casual gathering, I didnt feel a ton of pressure to entertain and kept everything very simple. I planned out easy but delicious dishes and did all of the shopping for our cookout at ALDI. The vast majority of the produce I purchased was organic and the chips, salsa and pantry staples I brought home were almost all from the ALDI SimplyNature line, which is super affordable, includes a lot of organic items and is completely free of any artificial colors or flavors.

    You guys, I am honestly blown away by my grocery bill every time I leave ALDI. Ever since Ryan and I visited the revamped Mooresville location after church a few weeks ago following my friend Jess praises about their affordable organic foods, Ive tried to pop in whenever I find myself in the area because the prices and quality cannot be beat.

    How To Make It:

    Prepare the salad. First, youll combine chickpeas, edamame, carrots, bell peppers, and cranberries in a serving bowl.

    Make the dressing. Next, youll whisk together olive oil, red wine vinegar, garlic powder, salt, black pepper, cumin, and Italian seasoning in a small mixing bowl.

    Dress and serve. Last, youll pour the dressing over the salad and mix to combine. You can serve right away or chill for several hours to overnight.

    The main ingredients in this chickpea edamame salad are:

    • Edamame. Best is frozen and shelled, but you can also use canned edamame, just drain the liquid.
    • Chickpeas. Choose a quality brand of chickpeas and you will have little to no chickpea shells to remove.
    • Carrots. Fresh shredded or grated carrots are the way to go here. In a pinch, you can use matchstick carrots but I find they can be dry and dont have as much flavor.
    • Dried cranberries. Or you might call them Craisins. These add a yummy, tangy and slightly sweet flavor!

    An awesome tasting Garden Bean Salad packed with three types of beans, spinach, avocado and dressed in an Asian style dressing.

    Summer cooking in my kitchen means lots of light meals and salads, and the chunkier and more stuffed with good things the better!

    Because Im responsible for dinner every night, I try to keep things on the healthier side. My kids know that we have a three-bite rule and they cant just look at something on the plate and proclaim to not like it. Luckily for some awesome reason, salads are something that they really like.

    As part of my ALDI partnership and shopping experience I made this tasty Garden Bean Salad with all of the ingredients easily available from an ALDI store near you. This recipe made a seriously giant bowl of salad, enough to easily feed four adults and it only costs $1.12 per serving because ALDI can offer up fresh produce and other goods at up to 50% less than other grocery stores.* Thats hard to beat and especially with several of the ingredients being organic!

    We are a crouton-loving family, but for this salad, I made pita crisps. Theyre so easy to make and very addicting to snack on with hummus. You can buy a box of pita crisps for less, but the homemade version is much better and worth the extra 65 cents and time.

    Ingredients Needed:

    • chicken breasts or tenders $6.34
    • romaine hearts organic $2.79 or non-organic $2.59
    • 1/2 to 1 red onion, according to taste. Diced.
    • cucumbers seedless $1.19 or regular .59. Diced
    • avocado -.79 each. Peeled, seeded, chopped.
    • grape tomatoes I prefer the Cherub Tomatoes at $2.89.
    • chickpeas -.50/can. Drained and rinsed.
    • Feta Crumbles $2.19.
    • kalamata olives if available. These olives can be pricey, but take this salad up a notch.
    • 1-2 lemons $1.49 for bag.

    This salad is my go-to for potlucks. It makes a lot, and I ate the leftovers for lunch over a bed of romaine.

    Ingredients:

    • 1 can of black beans, rinsed and drained. 89 cents
    • 1 container cherry or grape tomatoes, sliced. $1.99 $2.89. We prefer Cherub Tomatoes which cost a few cents more.
    • 1 cucumber, chopped into small pieces. I like the seedless tomatoes for $1.19, but regular cukes were 59 cents.
    • 1-2 Tbsp chopped fine Parsley. If you cant find fresh parsley at ALDI, they often have cilantro.

    This Mexican bean salad couldnt be easier to make, but the best thing about this Black Bean Salad recipe is that you dont have to turn the oven on to make it! Heres a quick overview of the preparation steps:

  • First, drain and rinse the black beans.
  • Then dice all the veggies on a cutting board. The veggies should all be in small pieces and evenly sized.
