I first marinated the chicken in Dijon mustard, vinegar, and garlic cloves for about an hour.

Then when I was ready to begin cooking, I tossed the potatoes, onions, and carrots in a bowl with olive oil, salt, and garlic powder. I transferred them to the roasting pan to make a beautiful bed for my chicken to rest on.

Make sure to sprinkle with a little fresh parsley for added color and flavor.

Next, I added the pork sausage, chicken thighs, and garlic cloves to the pan.

I drizzled about a tablespoon of olive oil over the chicken and seasoned with salt, pepper, and a little more chopped parsley.

All of those lovely ingredients get roasted in the oven for forty to fifty minutes. You only need to rotate the pan half way through so it cooks evenly. And its ready to serve!

Pro Tips And Recipe Notes

  • Since the sausages take less time to cook, I have found that it is best to add them about 15 minutes before the chicken is done.
  • Add 1 hour to prep time for marinating the chicken.

My family loved this recipe. Proof: in order for my son to take these photos after dinner, I had to set aside some of the chicken and potatoes. When my kids came back for seconds, they were horrified to see there was no more food left in the pan.

I promised they could have some more once the photos were finished. Of course, this also meant that there were no leftovers for the next day. Enjoy! Have a happy and healthy week!

Now How Do I Make These Balsamic Glazed Pork Chops

Once you have your bottle of Annies Organic Balsamic Vinaigrette, its time to make those balsamic glazed pork chops. Heres what youll need:

Start by combining the olive oil, garlic, thyme, salt and pepper in a small bowl. Rub that mixture evenly over all sides of your pork chops and place the chops in a plastic bag to marinate for at least an hour and a half in the fridge. Half an hour before cooking, take them out of the fridge to allow them to come to room temperature.

When youre ready to cook, preheat your oven to 400°. Line a baking sheet with aluminum foil and place your pork chops on the sheet. Cook for 25 minutes or until a meat thermometer reaches 155°.

Remove those chops from the oven and place them on a cutting board. Tent with foil while you make your glaze.

Transfer any drippings from the roasting pan to a medium saucepan. Add the veggie broth and balsamic vinaigrette. Bring to a boil and allow to cook, stirring often, until reduced by half . Season with salt and pepper to taste.

Slice up your pork chops, drizzle on your glaze and dig in!

I love pairing these chops with roasted veggies , but side options are truly endless.

  • Thickness/consistency: Sometimes the oils in tahini separates while in the bottle, so make sure your tahini is well-stirred before adding it to the blender. The dressing thickens as it cools in the fridge. You may need to add a splash of water before serving.
  • Serving ideas: Try out this tahini goddess dressing on a warm kale salad with roasted butternut squash or this kale salad with chickpeas.
  • Make it green goddess by adding a total of 1 cup of fresh chopped herbs like cilantro, parsley, dill, and/or basil. You can include the stems.

How long does the dressing last?

This recipe makes 5-6 servings of tahini dressing. It lasts in the fridge for about a week, or you can make it in bulk and freeze in individual jars.

Can I freeze this dressing?

Yes! Tahini dressing freezes well. I like to freeze it in pint sized ball jars. Leave at least ½ inch of space at the top of the jar. Freeze for up to 3 months and let thaw overnight in the fridge before using. Just place a jar to thaw in the fridge for 1-2 days prior to use.

Do you refrigerate tahini?

Yes! Tahini is high in oil content which can cause it to spoil quickly. For best quality, store tahini in the fridge or according to label instructions.

Is this gluten-free?

Use tamari in place of soy sauce to make this recipe gluten-free and soy-free. Choose a tahini that is certified gluten-free as sometimes gluten-containing ingredients are added to help with shelf life.
