We are having our good friends, Bud and Betty Rae, for dinner Friday night and caesar salad is on the menu. It has been a few months since I prepared my recipe for homemade croutons and caesar salad dressing as a caesar salad isnt exactly a low-fat type salad. But these are special friends and I know they like caesar salad.

Caesar salad is also a family favorite and our three grandsons, Joshua, Aidan and Travis are always happy to see it on the table. I have good memories of seeing them sneak out the crunchy croutons and devouring them.

I have half a loaf of bread that is a little stale and it will be perfect for making croutons and actually is probably more cost effective than buying them ready-made. There isnt much to making your own croutons, just cut or tear the bread into pieces, toss with olive oil and toast them in the oven until golden.

These little guys would easily get lost in a pile of romaine lettuce and Caesar dressing they are tiny. The uniformed squares look like they should be extra herby, thanks to all the dried herbs coating them, and they are. Time will depend on how thick your bread pieces are and how your oven cooks. Remove from the oven and let cool completely. Warning, it is hard to walk by the pan and not grab a crouton or twoor a handful:)
  • Store croutons in an airtight container for up to 1 week.

  • Wash and spin dry chopped romaine lettuce. It is really crucial to remove all the excess liquid from your lettuce before assembling the salad. That way the dressing can adhere and the lettuce leaves and not become watered down.
  • Place a bit of the prepared Caesar dressing in the bottom of a large mixing bowl. I recommend starting with ¼ cup and adding more dressing as desired, to prevent an overly dressed salad.
  • Add the chopped lettuce to the mixing bowl and using tongs, toss the lettuce with the dressing until the leaves are evenly, yet lightly coated with the dressing. At this point, you can add additional dressing, 1 tablespoon if needed.
  • Add half the parmesan cheese to the dressed greens and toss again to evenly distribute.
  • Serve the salad immediately with additional parmesan and croutons. I also like to have the remaining dressing available for guests to add to their salad if they like.

A Modern Caesar Salad Dressing

And now we get to the real crux of the authentic-versus-modern question: emulsified dressing or tableside tossing? And, more importantly, do we use anchovies or not?

Frankly, I prefer the modern, emulsified-dressing approach. Lettuce leaves have a waxy, hydrophobic coating, a natural evolutionary adaptation that helps regulate moisture levels inside and outside the plant, even with varying humidity or rainfall. Oil sticks to leaves, but water doesn’t. So, with an un-emulsified dressing, the olive oil and bits of egg yolk will stick to your leaves, but the lemon juice and other water-based, liquid elements will fall to the bottom of the bowl.

Emulsified dressings, on the other hand, cling well to all sorts of surfaces, including hydrophobic lettuce leaves. Emulsion + even coating = better flavor in each bite. And I’m perfectly content to remove cheffy flair in the pursuit of better flavor.

When it comes down to it, an emulsified Caesar salad dressing is essentially a flavored mayonnaise. Fortunately for us, because of the large amounts of solid particles it contains in the form of Parmesan and black pepper, it’s far easier to emulsify a Caesar dressing than a standard mayonnaiseyou’d have no problem doing it with a bowl, a whisk, and a bit of elbow grease. That said, the absolute easiest way to do it is using my Foolproof Two-Minute Mayonnaise technique.

Technically, you can use any loaf of bread to make croutonswhether its fresh or stale! Croutons are a great way to make use of stale bread, as is French toast.

You could even make croutons out of sandwich bread. Ideally, though, youll use bread that you can slice yourself into relatively thick slices . That way, we can make even cubes.

For the best croutons, seek out a crusty loaf of bread with great flavor. I love to use my favorite whole grain sourdough from our local bakery. French bread works very well. You could even use a loaf of rye bread or homemade cornbread if its unique flavors will complement your meal.

This Caesar Salad can be as healthy as you want! If you are watching calories, you can omit the croutons and add more nutrient rich vegetables such as chickpeas and use less cheese. You can also try mixing half spinach and kale with the Romaine lettuce.

The Caesar Dressing does not contain very much mayonnaise, so it is naturally a healthier dressing option, but you can make it healthier by swapping the sour cream for nonfat Greek yogurt.

  • Step 1: Make the Caesar Dressing. Make the dressing first so it has time to chill. Start by chopping the anchovies until finely minced, then mash them by pressing down and sliding the knife against the cutting board. Next, add all of the dressing ingredients to a mixing bowl and mix until smooth -thats it!
  • Step 2:Make the homemade croutons. Cube the bread into bite size pieces and toss with olive oil, dried basil, dried parsley, garlic powder, salt and pepper, then bake until golden and crispy.
  • Step 3:Toss the salad. In a large mixing bowl, combine the lettuce, homemade croutons, and Parmesan. Drizzle with your desired amount of Caesar Dressing, then toss until combined.
  • Step 4:Serve. Taste, then season with freshly cracked pepper as needed. Dig in!

Why Restaurant Caesar Salad Dressing Tastes Better

Egg yolk. And anchovies. Thats why. Sorry. Thats how they do it.

This dressing is old school. Thin. More oily than creamy. Lemony. Not the mayonnaise based supermarket style. Like what you get at a decent Italian restaurant.

Theres anchovy paste in this dressing. Its not the tastiest stuff straight from the tube. But a Caesar salad is just not right without anchovy.

Thats my opinion anyway. You can leave it out. It can be a great salad. But it wont have the magic. If you make Caesar salad dressing and it doesnt quite taste right I bet thats why.

The Food Lab: Homemade Mayonnaise In Two Minutes Or Less

The only difference is in the base ingredients. Just as with a regular mayonnaise, you don’t want to use extra-virgin olive oil with an electric blender. It causes the olive oil to break down and turn bitter. Instead, use a neutral oil, like canola, to begin the emulsion. Then, when it’s stable, whisk in the extra-virgin by hand.

Instant Pot Shredded Chicken For Caesar Salad

My husband and I are completely addicted to how the Instant Pot can make deliciously tender, juicy and flavorful shredded chicken so quickly. I can not sing Instant Pots praises loud enough when it comes to cooking chicken breasts and it was amazing in this homemade salad.

To easily make shredded chicken in the instant pot place the chicken breasts on the bottom of the liner. Sprinkle on the chili pepper flakes and garlic powder. Add the lemon juice and broth to the pot and sea your IP. Cook on high pressure for 6 mins and do a Natural Release for 5 mins and then a quick release.

If you like larger pieces of shredded chicken then immediately removed chicken breasts once the quick release is done and using 1 or 2 forks shred the chicken.

Once shredded salt and pepper the chicken chunks to taste and add in about 1/4 to 1/3 cup of the cooking liquid from the pot. Stir well and place in covered container or wrap with aluminum foil. Refrigerate until chilled.
