Chicken Salad Chick

Meet Tim and Kelly Paslawski, proud owners of Chicken Salad Chick of Statesboro. While living in Roswell, GA, Tim discovered Chicken Salad Chick while traveling for his sales job. Tired of the usual fried options, Tim instantly fell in love with Chicken Salad Chick and started bringing home different flavors to share. When he brought the Classic Carol and Pimento Cheese to his mother-in-law, she claimed it was the best shed ever had.

Tim and Kelly knew at that point they had to be part of the Chicken Salad Chick family. They decided to relocate back to Savannah, where they had friends and family close by, to open their very own Chicken Salad Chick, and never looked back! In addition, Tim and Kelly also own several other Chicken Salad Chick locations.

Kelly is a graduate of UGA, coincidentally with a minor in Poultry Science, while Tim is a former active duty Marine and a massive Georgia Bulldog fan. They love when customers thank them simply for being open. Kellys favorite Chick is Sassy Scotty while Tims is Jazzy Julie.

How To Shred Chicken Breasts Easily

There are four different methods you can use for easily shredding chicken breasts.

  • Two forks: Old school and analog but super simple. Take two forks and shred the chicken breasts, working the forks on the chicken in small strokes away from each other. This method takes the longest but is the simplest.
  • Stand mixer: The easiest. Break up the cooked chicken breasts into chunks and place them in the bowl of a stand mixer with the paddle attachment affixed. Mix on medium-low speed until the chicken breast chunks are all shredded.
  • Hand mixer: Follow the same method as the above, using the standard attachments on your hand mixer and working at medium speed.
  • Food processor: The best texture. This method results in shorter pieces of chicken than the other three, and its my favorite for shredded chicken salad. Break up the cooked chicken breasts into chunks and, working in about 2 batches here, add to the food processor with the dough blade attached. Its plastic and will not turn your chicken into mush as the metal blade will. Process for about 30 seconds or until uniformly shredded. Repeat with remaining chicken.

    Can You Use Rotisserie Chicken

Chicken Salad Chick menu in Savannah, Georgia, USA

Totally! Youll want to use 2 1/4 pound worth of rotisserie chicken meat to replace the chicken breasts in this recipe. You can also use the shredded rotisserie chicken from Costco. That stuff is good, right?!

Whole30 note: Both the rotisserie chicken and the packaged, shredded rotisserie chicken are not Whole30-compliant. Like, not at all. Dont go there!

    • You can use rotisserie chicken to make it easier than ever.
    • The sauce is rich and creamy, but its dairy-free, paleo, Whole30, and low carb friendly.

    How To Make It

“Life. Style. Live!”: Chicken Salad Chick puts a twist on a southern classic dish

Cook the chicken: place the chicken breasts in a wide skillet and cover with chicken broth. Bring to a boil then reduce heat to a simmer cover and cook about 20-25 minutes or until chicken breasts are cooked through and reach 160º F internally. Remove from skillet but reserve broth.

Alternately, use 2 1/4 pounds cooked chicken with the skin removed.

Shred the chicken using your selected method from above.

Place all ingredients but chicken broth in a large bowl and stir together. Add chicken broth, 1 tablespoon at a time, to the mixture until the desired texture and creaminess is reached. I use about 4-6 tablespoons of chicken broth.

Keep in an airtight container in the fridge for up to 5 days.

    How To Make

    2017 Bulldog 100

First, gather the ingredients for the aromatics and the spices. Chop the onion and mince the garlic.

Next, gather the rest of the ingredients: chicken drippings and broth, plus the pulled meat and the veggies.

Chop up the fresh vine ripened tomatoes, and weigh the pulled chicken and pulled pork.

Heat up the oil in a large stock pot over medium high heat until shimmering. Sauté the onion until soft, then add the garlic and cook until fragrant.

Reduce the heat to medium low and add the spices, liquid smoke, Worcestershire and Tabasco sauce. Cook for 3 minutes, stirring occasionally.

Pour in the two kinds of BBQ sauce .

Add the pulled chicken and the pulled pork.

Stir well to coat the meat. Cover and cook for 10 minutes on medium low heat, stirring occasionally.

Pour in the drippings from the roasted chicken. If you don’t have any, use chicken broth or chicken stock.

    Pour in the chicken stock.

Stir with a large wooden spoon before adding the canned and fresh tomatoes.

Finish by mixing in the yellow corn and butter beans. Cover and bring to a boil over medium high heat, stirring every so often to prevent it from burning.

Once it starts to boil, lower the heat to medium low. Uncover the pot and let it simmer for at least 1 hour, stirring every 10 minutes.

Once it’s done cooking, transfer most of the soup to a Dutch oven so it can fit in the fridge easier.
