Heres what you need to make a delicious chicken Caesar salad:

  • Chicken I used my lemon-thyme baked chicken breast recipe. Its my favorite marinade for chicken! Even 30 minutes gives great results. Lemon juice makes the chicken very tender. You could also pan-fry chicken breasts with your favorite seasoning. Were cooking chicken from scratch here but if youre short on time you can use leftover chicken, rotisserie, or grilled chicken.
  • Lettuce crunchy and sturdy Romaine lettuce is the best for this recipe. You can use either Romaine hearts or a whole Romaine head.
  • Homemade croutons they taste so much better than store-bought. Its a must for this salad and I promise you wont be able to stop snacking on them!
  • Crispy bacon baking bacon is my favorite method of cooking it. Its easy and hands-off. In this recipe, its baked conveniently with the chicken in the oven. You can, of course, also pan-fry the bacon, if thats what you prefer.
  • Caesar dressing homemade Caesar dressing is quick to whip up and tastes so much better than store-bought. You just need a couple of ingredients.
  • Eggs eggs are optional for this salad but its really worth adding them. They go here really well.
  • Parmesan cheese both grated and shaved are used for this salad. Make sure to use the real Parmigiano-Reggiano cheese.

To poach the chicken, simply place the raw chicken breast in a large pot. Next, add the salt, peppercorns, crushed garlic cloves, and bay leaves.

This easy Chicken Caesar Salad comes together with just a few simple steps. You can pan-sear or grill the chicken , quickly toast some croutons, and toss with a practically effortless homemade Caesar dressing. It tastes decadent and delicious, but it won’t weigh you down!

Ingredients for Chicken Caesar Salad:

Don’t be intimidated — anchovies are a classic ingredient in Caesar dressing, and they won’t make your dish taste “fishy.” Instead, they practically melt into the dressing and become undetectable, while still giving the dressing that rich, salty, savory flavor that everyone loves in a Caesar salad.

Step 2: Prepare the Chicken

Next, season the chicken with salt and pepper and sear in a hot skillet until cooked through .

Step 3: Toast the Croutons

While the chicken cooks, you can also toast your croutons. I use a shortcut and just dice up some frozen Texas Toast garlic bread. Toast the garlic bread cubes in a 425 degree F oven for about 4-5 minutes, or until they’re nice and crispy and golden brown.

Step 4: Assemble the Salad

To pull together the salad, toss the chopped lettuce in a large bowl with enough dressing to moisten everything. I usually use about half of the dressing here, and then serve the rest of the dressing on the table for folks to add to their individual salads. Add the shaved Parmesan and toss again.

Divide the lettuce among individual serving plates, top with sliced chicken and croutons. Drizzle with extra dressing, if you like.

How To Make Chicken Caesar Salad Step By Step

STEP 1: Start with marinating the chicken the longer it marinates the more tender it will be but 20-30 minutes already gives good results.

In a large bowl, whisk together olive oil, lemon juice and zest, herbs, pressed garlic, salt, and pepper.

Cut the chicken breasts in half horizontally so that you have 4 thinner fillets . Place a thick plastic bag over the chicken and pound its thickest part with a meat mallet so that the chicken fillets are more or less of even thickness.

Add the fillets to the marinade and toss to coat.

Leave to marinate while youre preparing other ingredients .

STEP 2: Make the croutons

Preheat the oven to 400°F .

Cut the bread into 3/4-inch cubes .

In a large bowl, stir together olive oil, grated cheese, garlic powder, herbs, salt, and pepper.

Add the cubed bread and toss until evenly coated.

Line a baking sheet with parchment paper and spread the bread on it. Make sure the bread cubes are spaced out a bit.

Bake for about 15 minutes or until golden on all sides.

Add all the ingredients into the food processor and pulse until smooth. Season the dressing with salt and pepper.

You can also use a hand blender. If you dont have either of these appliances, simply finely chop the garlic and anchovies, grate the Parmesan , then stir thoroughly with the remaining ingredients.
