This Southwest Chicken Salad is loaded with juicy tomatoes, savory onions, sauteed sweet corn and black beans. Add in the seasoned chicken with an amazing kick of southwest flavor, splash some lime juice on top and kick up the heat with spicy ranch dressing.

Grilled Southwest Chicken Caesar Salad

Prep: 35 minutes

  • 4 Open Acres® Boneless, Skinless Chicken Breasts
  • Our Family® Nonstick Cooking Spray
  • Our Family® Kosher Salt and Our Family® Ground Black Pepper, to taste
  • 1 ear fresh corn, husk and silk removed

Dressing

  • 1 bag chopped hearts of romaine>
  • 1 cup rinsed and drained Our Family® Black Beans
  • 14 cup diced red bell pepper
  • 14 cup shredded Parmesan, Romano and/or Asiago cheese
  • 14 tsp. ground black pepper crispy tortilla strips *

1. Prepare Grilled Chicken & Corn: Prepare outdoor grill for direct grilling over medium heat. Spray both sides of chicken with nonstick cooking spray sprinkle with salt and pepper. Place chicken and corn on hot grill rack. Cook chicken 10 to 12 minutes or until chicken loses its pink color throughout and internal temperature reaches 165°, turning once. Cook corn 10 to 15 minutes or until golden brown, turning frequently. Remove chicken and corn from grill. Refrigerate chicken and corn until ready to serve.

2. Prepare Dressing: In small bowl, whisk together all ingredients. Refrigerate until ready to serve.

  • Place the chicken breasts in a bowl or zip-loc bag with all of the marinade ingredients. Leave it to marinate in the fridge for a minimum of 30 minutes.

    This is my favorite grilled chicken southwest chili lime salad recipe with its smokey chili lime dressing recipe. They are absolutely delicious together. This Southwest Cobb Salad looks complicated because of all the ingredients – but it is actually quite simple – especially if you make the dressing ahead of time and marinate the chicken the night before.

    If you don’t have time you can skip marinating the chicken, but marinating will add a lot of flavor to the chicken. Even marinating the chicken for half an hour while you prep the veggies is a whole lot better than nothing. This dressing is so good and even though it has a lot of ingredients, don’t be intimidated. It just takes a few minutes to pull together.

    When they say that you should be eating the rainbow, I don’t think you can get any more literal than this salad. I mean look at it! And it is the healthy version of tasting the rainbow )

    I also love how this cobb salad is gluten-free and homemade. The dressing is simple to make and so much better than dressing at the store and so much healthier than most salad dressings in restaurants. And don’t be intimidated by the homemade mayo. Loaded with grilled chicken, cherry tomatoes, black beans, and avocado, it gets drizzled in homemade Santa Few Dressing and topped with a sprinkle of tortilla chips.     We just had to try making our own version and it does not disappoint! The freshly grilled chicken is absolutely on point, however, the best part for us is the crunchy tortilla chips on top. Its so addictive! Drizzled in Homemade Santa Fe Dressing, salads dont really get any better than this. Perfect for a light lunch or dinner year-round!

    Heres how to make this easy salad without a trip to Chilis:

  • mix together ingredients for santa fe sauce.
  • Rub chicken cutlets with olive oil and taco seasoning.
  • Heat a large skillet over med-high heat and cook chicken for 3-4 minutes per side until cooked through.
  • Set aside and let cool, then slice chicken thinly.
  • When ready to serve salad, toss lettuce with ranch dressing in a large bowl.
  • Top lettuce with sliced chicken, avocado, pico de gallo, cilantro and tortilla strips. Drizzle santa fe sauce overtop then serve and enjoy!

    Whats In The Panera Southwest Dressing

    Paneras dressing recipe is always where I start when making a copycat this one contains a chile lime rojo blend which has pesto, garlic, buttermilk, a variety of peppers , vinegar, egg, sugar, lime juice and Greek yogurt.

    I decided to spin this into something easy! My favorite dressing is my Jalapeno Lime Ranch then I had some Chipotle Taco Sauce in my fridge and boom Chipotle Lime Ranch!

    If youre looking for the Chipotle Taco Sauce I found Ortegas at Kroger for less than $3. If you cant find it you can also add Chipotle Pepper Seasoning to your ranch or even canned chipotles in adobo sauce. On the last one tread lightly its spicy!

    Southwestern Chicken Salad with a Low Fat Creamy Dressing I can hear the angels singing!

    Its safe to say that with THIS salad, you wont miss a heavy amount of fat in a usual creamy dressing made up of mayo or heavy creams. The dressing is SO creamy and RICH without needing ANY mayo! Plus, all of the flavours in the salad dressing are marinaded right into the chicken with ONLY one ingredient youre going to add in to the marinade to make this dressing ??? complete!

    Since school holidays have finished over here, Im finally able to get into a healthy eating rhythm. Monday marked the first day of better eating , dropping two kilos already ! This is the salad that kicked it off!

    To make life easier, I cheated and used my magic bullet to make up this dressing / marinade first. Hooray for no chopping needed!
