Sometimes things go wrong in the kitchen it happens!! If the Potato Salad went array, here are some fixes:

Too Salty? To combat saltiness add a little more mayo until it is to your liking. If that doesnt do it you may need to boil an extra potato or egg to add in.

Too Sweet? Some people prefer potato salad pretty sweet, but if it got a little too sweet for your taste buds just add a pinch of salt, a squirt of yellow mustard, and a dash of mayo. It should dilute the sweetness just enough.

Too Dry? Sometimes the potatoes soak up more of the dressing than they should. I swear it depends on the weather. If it just needs a little more add a couple tablespoons of mayo. However if you need a lot more, whip up a half batch of the dressing and add as needed.

Too Much Dressing? Add more filling boil a couple more potatoes and eggs.

Potatoes overcooked? Make mashed potatoes or twice baked potato casserole instead!

How To Make An Easy Classic Potato Salad:

  • Peel and cut the potatoes into quarters .
  • Drain and lightly mash with a fork or potato masher .
  • Add the diced onion and celery then with your finger over the top of an apple cider vinegar bottle, lightly coat the potatoes with the ACV. Doing this while the potatoes are hot is an important step.
  • Combine the ingredients for the dressing as the potatoes are cooling and stir to combine.

  • Potato Yukon Gold the only one to use for potato salad . Red potatoes are also an option, however, the Yukon will provide the creamiest flavor. Additionally, they hold their shape well after cooking and soak up the dressing easier.
  • Hard Boiled Egg To add or not to add? In contrast, without, the potato salad will be okay. However, imagine having a deviled egg salad with potato salad mixed. Consider it the best of both worlds colliding!
  • Mayonnaise I used a store bought version, however, Im considering re-making this and making homemade mayonnaise. Now that would be phenomenal!
  • Mustard Yellow Classic. Mustard will give a little tang and tartness to help make the flavors pop. Dijon mustard is not my favorite, nevertheless, if thats a flavor profile you like, use that instead.
  • Celery Used her for crunch and flavor, many recipes use celery seed as a spice. Keeping it real, its not one I have in my spice rack and its also quite expensive. Using the real deal here.
  • RedOnion Soak in a bit of cold water to help remove the harsh bitter flavor. Using a red onion for a little pop of color, however, you could just use a white sweet onion as well.
  • Green Onion/Chives Just used here as a garnish for a pop of color. Feel free to leave out.
  • Paprika Also used as a garnish. That little extra color on top makes it feel traditional.

Chopped hard-boiled egg and celery are my favourite add-ins but eggs seem to be a divisive ingredient. This is probably because overcooked boiled eggs take on a sulfury smell and taste. I promise you that wont happen if you use this method.

    In any case, you dont have to put eggs in your potato salad if you arent a fan . You can also mix in any of the following ingredients as you wish:

    • 1/2 cup chopped cooked bacon
    • 1 tablespoon minced fresh herbs like dill, chives, tarragon, basil, thyme or parsley
    • 1-2 tablespoons chopped dill pickles or a spoonful of sweet relish
    • A teaspoonful of dijon mustard
    • A sprinkle of black pepper or paprika
    • A couple of teaspoons of vinegar or dill pickle juice in place of the lemon juice and zest

This gives the recipe a rustic, yet thick and luxurious quality. I like to use Yukon Gold or Klondike Goldust potatoes. You can also use Russet potatoes if you like. Do not use new potatoes, because they hold their shape too well and will leave the dressing soupy.

    Start the potatoes in cold water and bring them to a boil to ensure even cooking. Make sure to salt the boiling water so the salty flavor gets deep down in the potatoes.

    Once the potatoes are soft, drain off the water and peel off the skins. You can leave some of the skins on if you like the added texture.

    Chop the potatoes when they are soft this saves time on the peeling and chopping.

    2) Next, mix all the dressing ingredients together. Use your favorite mayonnaise as the base.

    I know better than to tell you what brand to useMayonnaise is an intensely personal condiment!

    Here in the Carolinas, we use Dukes Mayonnaise, but mom usually uses Hellmanns. You can even go with Miracle Whip if that is your favorite.

    Mix a large amount of sweet pickle relish into the dressing.

    Use the good quality refrigerated relish that tastes fresh, has large chunks, and stays firm. Otherwise, the dense ultra-sweet shelved variety might overwhelm the flavor of the dressing.

    If you cant find good relish, finely dice firm refrigerated sweet pickles instead.
