It still amazes me how much confusion there is surrounding dietary fats. Quite a lot of people still arent sure about the differences between monounsaturated, polyunsaturated, saturated, and trans fats.
The short version is that there are definitely both good fats and bad fats. Once upon a time, monounsaturated and polyunsaturated fatty acids were considered the good fats, while saturated and trans fats were widely regarded as the bad fats. Not much has changed except for the fact that saturated fats arent as demonized as they once were .

Like I mentioned before, there are two key components required to make the perfect salad: your choice of salad ingredients and the type of dressing that you use. While this particular recipe uses a terrific blend of veggies and herbs, I get quite a few questions from people who are curious about mixing and matching different types of vegetables to make their own custom salad recipes.
With that in mind, I always offer the same recommendations every time I get this question:
- Dark Leafy Greens Youre definitely going to want to make sure youre using plenty of dark leafy greens . Not only do they provide you with a ton of essential vitamins and minerals, but theyre jam packed full of antioxidants as well.
- Cruciferous Vegetables Aside from leafy greens, its also a good idea to include a cruciferous veggie or two when making your salad. Good examples to use are broccoli, Brussels sprouts, or cauliflower.
- Carrots Not only can carrots add a ton of flavor to your salads, but theyre another excellent source of essential nutrients, offering plenty of vitamin A, vitamin C, and essential minerals like potassium, sodium, iron, and magnesium.
- Beets Whenever Im looking to add a bit of color to my salads, carrots and beets are my two go-to choices. In addition to their excellent nutrient profile, beets are also fantastic for improving blood flow, lowering blood pressure, and increasing stamina and endurance during exercise.

Cucumber Tomato Salad Flavor Variations
This salad is great as-is, but you can absolutely add other ingredients to customize it to your tastes.
- Greek: Add 1/2 cup crumbled feta cheese and 1/4 cup sliced kalamata olives.
- Mexican: Stir in a diced avocado, 3/4 cup corn kernels and 1 cup black beans. Swap out the parsley for cilantro.
- Italian: Add 1/2 cup small mozzarella balls along with 1/4 cup diced marinated artichoke hearts. You can also add diced salami and white beans.
- Pasta: Turn this into a pasta salad by adding 3 cups of cooked pasta such as penne or farfalle. Be sure to double the dressing amount if youre going this route.
I make this salad all summer long. It uses simple ingredients that I always have on hand, and pairs perfectly with salmon, roasted chicken and steak for a healthy and hearty meal.
Ingredients For Cucumber Tomato Salad
- Cucumbers you can use Persian, seedless, or regular.
- Tomatoes we had beefsteak on hand, but you can use any tomatoes, from heirloom to grape tomatoes.
- Red Onion not only does it give a pop of color, but also a peppery bite.
- Italian Salad Dressing this brings it all together and adds tons of flavor.
For this recipe we use our homemade dressing, you could use your favorite store-bought if preferred. We definitely think this is a great dressing and its even better once the salad has a chance to sit in the dressing in the refrigerator for a few hours.
When you let it soak in the fridge in the dressing it gets into the veggies, the vinegar breaks it down a bit and really melds all the flavors together.

Cucumber And Tomato Salad With Buttermilk Dressing

How To Make Cucumber And Tomato Salad
To make this simple salad side dish start by dicing the grape tomatoes in half and place in a salad bowl. Peel the cucumber and slice in half and then slice those halves in half again. Then slice each of those quarters into bite sized pieces.
When slicing the onions, I like to slice them pretty thin, so they dont overpower the salad. The fresh basil is really the best part of this salad in my opinion. You can really add as much or as little as you like.
The best way to slice basil leaves is to pile the leaves on top of each other, roll them up and then slice with a sharp knife into thin strips.
In a separate bowl combine the olive oil and balsamic vinegar. Combine all the the sliced vegetables in a salad or large bowl. Pour over the balsamic and olive oil and season with salt and pepper.
Sprinkle with the feta cheese crumbles and serve chilled.

What I love most about this salad was that you only need a few ingredients: tomatoes, cucumbers, Ranch dressing, salt and pepper. It takes minutes to prepare and its so light and refreshing.
This Ranch Tomato Cucumber Salad makes a great last minute salad too especially with the summer barbecue months coming up. I dont know about you, but Im always throwing last minute get togethers and if I can make a salad in about 10 minuteseven better!
I prefer to use English cucumbers so I can leave the skin on them. Not only do they add a nice bright green color to the salad, but they also give it a little crunch next to the soft plum tomatoes. ~Enjoy!

Romaine Cucumber And Grape Tomato Salad With Ranch Dressing
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh parsley, chopped

This salad is so easy to make ahead. I would not make it any more than 24 hours in advance of when you need it.
To make this salad ahead combine the sliced vegetables, vinegar and oil and place in an airtight container in the refrigerator until you are ready to serve. Just before serving add the feta cheese.
