And when it comes to classic Southern potato salad, she’s the queen. None of that wishy-washy “some prefer to add celery while others do not” nonsense. There’s no celery in Mama’s classic recipe for potato salad. Period. And brace yourself: There’s no Duke’s mayo either because Daddy likes Kraft.

Bring to a boil over high heat. Cover and reduce the heat to medium-low and continue cooking until the potatoes are fork-tenderabout 20 to 25 minutes. Drain and cool completely in the pan with the cover ajar. Slice the cooled potatoes into 1/4 inch slices and put them in a large bowl.

Peel eggs coarsely chop. 2. Meanwhile, in 3-quart saucepan, heat 4 cups water to boiling. Reduce heat to medium. Add potatoes cook 5 to 8 minutes or until tender. Drain rinse with cold water to cool. Drain well. 3. In large bowl, mix cooled cooked potatoes, the celery, bell pepper and chopped hard-cooked eggs.

Peel and dice 6 of the eggs and place in the bowl with the potatoes. Add salt and pepper and lightly toss. In a small bowl, mix together mayonnaise, sour cream, sugar, mustard, relish, dill and any other mix-ins. Fold mixture into the eggs and potatoes until well combined. Slice remaining 2 eggs and layer on top of salad.

Seriously though, my mother has magical abilities in the art of potato salad making. My mom makes traditional mustard, pickle, and hard-boiled egg potato salad. Its simple, but I have never made or tasted another potato salad better than her version And Im not the only person to think so.

Over the years Ive watched countless relatives and friends swoon over her classic potato salad.

The problem is, when you ask her for the recipe she has a hard time sharing it, because she doesnt actually have a recipe written down. She makes it by feel.

Its taken years of watching, assisting her, and asking questions to come up with what I consider to be her recipe.

How To Make Potato Salad Without Mayo Or Eggs

So how does one make potato salad without mayo or eggs? Well, quite obviously, it starts with potatoes. I recommend using new potatoes for this, but any waxy potato will do. I would recommend against using a more starch-heavy potato like a russet just because they dont hold their shape quite as well. However, it will still taste just as good regardless of the potato type so in the end, its up to you.

First, you need to prep and cook your potatoes. Cut them into bite-sized pieces that are all roughly the same size, put them in a pot and cover them with plenty of cool, salted water. Cover the pot and bring it up to a gentle boil over medium heat. Cook the potatoes until they are just tender and then drain them and transfer them to a large bowl.

In the meantime, its time to make your dressing. This is a basic vinaigrette and it is super easy to make. First, whisk together some sherry vinegar , honey, dijon mustard, grated garlic and a finely chopped shallot.

Then, whisking constantly, slowly drizzle in your extra virgin olive oil. Try to use nice-tasting olive oil in this because it really does make a difference.

To ensure a good emulsion that wont break, its best to start off drizzling very very slowly . To do this, drizzle drop by drop to begin the emulsion initially, then you can increase the speed that you add the oil in once you already have a bit incorporated.

  • 10g fresh parsley, chopped
  • 5g fresh dill or tarragon, chopped

As with any recipe involving potatoes, it all starts with cooking the potatoes. Before anything, you will have to boil the potatoes.

To check for doneness, use a fork or a toothpick. Do not under or overboil the potatoes. Cool the potatoes in an ice bath after boiling them. This will cool them down fast, but also ease the skin removal.

While the potatoes are sitting in an ice bath, you can combine sour cream, mayo, and mustard. If you do not have sour cream, you can use crème Fraiche or Greek yogurt. They will both work fine.

Add potatoes and cider vinegar onion, and pickles. Top the salad with desired herbs and stir to combine. Refrigerate for 1 hour before serving.

Serve the potato salad cold, alone or as a side dish.

My Favorite Potato Salad Dressing

Our potato salad recipe airs on the classic, more traditional side, but we do have a couple of tweaks.

For the salad dressing, we use mayonnaise and sour cream. Both make the dressing extra creamy, but mayonnaise can be heavy by itself.

Adding the sour cream lightens up the dressing a bit. If youre used to only using mayonnaise, try adding a bit of sour cream next time. Its a game-changer. When I really want to up my potato salad game, I use homemade mayonnaise. Its easier than you might think. Here is our mayonnaise recipe with a video that walks you through how to make it.

We also add regular yellow mustard, which adds an extra kick of flavor as well as a bit of color. I usually use Dijon mustard in our recipes, but when it comes to this salad, regular yellow mustard wins.

We add vinegar as well, but not to the dressing. Instead, we sprinkle vinegar over the cooked potatoes. We learned this tip from Alton Brown.

After dicing the cooked potatoes, scatter a tablespoon or so of vinegar over them. Its incredible how much of a difference the vinegar makes. Use apple cider vinegar, white, or red wine vinegar or even dill pickle juice!

    My mom cooks her potatoes whole with the skin on. I follow her lead, or will quarter them before cooking. But, my mom says that method allows the potatoes to absorb more water, and so I do what mama says.

    To cook the potatoes, add them to cold water and bring to a boil and reduce to medium heat, rather than adding the potatoes to hot, boiling water. Boil the potatoes until fork tender and the skin just begins to crack, about 20-25 minutes.

    Another cooking method a reader suggests is steaming the potatoes in 1 inch of water for 30 minutes, which works too. Just be sure to watch you dont boil your water away and burn the pan.
