How Long To Cook Hard Boiled Eggs

The cook time for hard boiled eggs will vary depending on how large the eggs are, your altitude, and how done you want the yolk to be. After cooking lots of hard boiled eggs in our own kitchen, heres a list of cook times that weve found to be the most accurate:

  • Medium eggs = 9 to 10 minutes
  • Large eggs = 11 to 12 minutes
  • Extra large eggs = 13 to 14 minutes

If you live at a higher altitude, you may need to cook the eggs slightly longer than what weve mention above .

When I am making a large batch of eggs, I like to sacrifice one egg at around the 10 minute mark and check for doneness. If its a little underdone, Ill keep the eggs in the water a bit longer.

Putting The Salad Together

Everyone has an opinion on what makes for the best potato salad, but heres what we love adding to ours. You can, of course, add or remove an ingredient based on your tastes. Its also important to note that its okay if you dont have red potatoes on hand.

Use other waxy potatoes like yellow or Yukon potatoes, white or creamer potatoes, and fingerling potatoes. They are quick-cooking, and since they are already small, theres no need to chop them before cooking them. Russet or baking potatoes will work, but the salads texture will be less creamy.

In addition to the potatoes, we add the following ingredients to the salad. The full recipe is below this article.

  • Finely diced celery for crunch
  • Finely diced dill pickles for crunch and flavor
  • Fresh parsley, dill, and chives

Other popular ingredients are hard-boiled eggs and onion. We add them to our creamy potato salad but leave them out for this red potato version. We love letting the herbs shine, so we hold back on the other ingredients.

There are a few dishes that I immediately look forward to at any potluck.

Here in the midwest, theres a good chance Ill be able to find a pan of hash brown casserole and a bowl of ambrosia salad or sometimes watergate salad.

Theres also likely to be some macaroni salad and a platter of deviled eggs and probably a pan of baked beans.

And there is always, always going to be at least one kind of potato salad. If its a summer cookout, there will probably be a couple different types.

Now, I wont turn down a store-bought potato salad. In fact, there are some pretty good deli potato salads out there these days. But nothing compares to a homemade potato salad.

And when it comes to the classic creamy potato salad, I think this recipe is the BEST.

Its creamy, a little bit crunchy, and it has just the right amount of tang to balance out the creamy mayo and the starchy potatoes.

And the best part is that this recipe is so much easier than you might think!

How To Make Red Potato Salad

When I can find them, I love using smaller red potatoes since it means that I can cook them whole. Chopping them does help them cook a bit quicker, but potatoes that have been cooked whole taste better and are fluffier in the middle.

Use a big pot for cooking the potatoes and throw a good amount of salt into the water. The water should taste salty. Salting your water is essential since it seasons the potatoes. Without it, they will taste bland, even after tossing them in your dressing.

Then when the potatoes are cooked and cool enough to handle, scatter a couple of tablespoons of vinegar over them. Its incredible how much of a difference the vinegar makes. I use red wine vinegar for this salad, but apple cider vinegar, white wine vinegar, and even dill pickle juice work well.

To recap, when making potato salad, we like to keep these tips in mind:

  • Smaller red waxy potatoes are best
  • If time allows, cook the potatoes whole. They taste better and dont get waterlogged.
  • Add a generous amount of salt to your cooking water. Potatoes can be bland and need salt to taste their best.
  • For the best tasting salad, scatter vinegar over the cooked potatoes

Boil Your Egg Chop Your Veggies

The next step is to boil your eggs. You can use the already hot potato water to boil your eggs . Place the eggs into boiling water, set a timer for 10 minutes, and when times up, transfer to an ice bath.

While the eggs are boiling, you can chop your celery and green onions. For the celery, trim the ends off the celery, slices lengthwise in half, and then chop into 1/4 chunks. For the green onion, trim off the bottom and chop to 1/4 chunks.

Once they are cool enough to handle, peel, and roughly chopped your hard boiled eggs. Then fold in your celery, green onions, and eggs into the potatoes.

  • Gently boil whole/unpeeled Yukon Gold Potatoes until they can be easily pierced with a fork, 20-25 minutes.
  • Drain and dice into bite-sized pieces. Toss with white vinegar and let cool.

What surprised me though was how many of them had pickles or sweet pickle relish.

This is my moms classic potato salad recipe. I watched her make it a hundred times. There are no hard boiled eggs, there is no bacon, there are no pickles.

How To Store & Serve Potato Salad

This style of potato salad is meant to be served cold. So if you are making the day-of, we recommend getting an early enough start to allow it chill out in the fridge for a few hours.

If properly stored in a resealable container, potato salad will last for up to 5 days in a refrigerator or cooler . So this is a perfect side dish to make before a weekend camping trip or BBQ and toss in your cooler.

To serve, sprinkle the top with a light dusting of paprika. Want to dropkick this potato salad to all the way to next Sunday? Top with crumbled bacon.

Recipe: The Ultimate Potato Salad

This is my go-to potato salad recipe. Feel free to make adjustments to seasonings and mix-ins to suit your taste.

Servings: Six to eight

  • 2 pounds New/Baby potatoes, Red Bliss, or Fingerling potatoes, cut into two inch pieces

  • 2 tablespoons apple cider vinegar

  • cup mayonnaise, regular or light

  • cup sour cream, regular or light

  • 1 teaspoon Dijon mustard

  • ½ pound bacon, about 6 to 8 strips, cooked until chewy-crisp and chopped

  • ½ cup chopped green onions

  • 2 stalks celery, finely chopped

  • 4-ounce jar pimentos, drained and chopped

  • 2 tablespoons chopped fresh parsley

  • Paprika, for serving

Preparation:

  • Place the potatoes in a large pot and pour over enough cold water to cover by about two inches. Set the pan over high heat and bring to a boil. Add 1 teaspoon of salt and reduce the heat to medium-high. Gently boil until the potatoes are just fork-tender, checking for doneness after five minutes of cooking.

  • Drain and transfer the potatoes to a large bowl. Add apple cider vinegar and toss to coat. Transfer the potatoes to a large baking sheet and spread out in a single layer. Let cool for 30 minutes.

  • Meanwhile, in a large bowl, whisk together the mayonnaise, sour cream, Dijon mustard, ¼ teaspoon salt and ¼ teaspoon black pepper.

  • When the potatoes have cooled completely, add them to the mayonnaise mixture and stir gently to coat. Fold in the bacon, green onions, celery, pimentos and parsley. Season to taste with additional salt and black pepper.

    I always choose Yukon Gold potatoes when making my moms classic potato salad recipe. These are nice and creamy but they dont fall apart when you cook the potatoes. The peels also come off easily after cooking which makes everything so much easier!

  • And then, reader Vicki sent in an email with her suggestion to avoid watery potato salad:I asked a renowned chef what I was doing wrong, and he told me NEVER to salt the potatoes either during cooking or preparing the salad. The salt makes the potatoes seep water. Ever since I took his suggestion, I have never had a problem with watery salad. You can season the salad with salt, pepper, and other seasonings just before serving and it wont affect the potatoes once they have been mixed with the mayo. Just an FYI.
