  • Greek Yogurt Egg Salad Instructions

    Peel the eggs, rinse them off, and place them in a bowl. Mash the eggs into small pieces. I like using a potato masher to get the job done quickly.

    Add the container of Greek yogurt to the bowl.

    Mash enough avocados to equal 1 cup, and add 1 tablespoon of lime juice. Mix them together.

    Add 1 Tablespoon dijon mustard and mix all of the ingredients together. I found that I preferred about 3 tablespoons in this mixture, so feel free to adjust to your taste. Add Salt and pepper to taste and mix everything together.

    One thing I love about this recipe is that you can adjust it however you like. You can eliminate any of the above ingredients, swap out mayonnaise for Greek yogurt, and add ingredients like bacon, dill, hot sauce, peppers, etc.

    I’ve made egg salad with mayonnaise, mustard, salt, and pepper for years. However, when I realized that there was a way to make Greek yogurt taste more like mayo, I decided to try it for a healthier low calorie, lower fat option.

    How To Boil Eggs For Egg Salad

    You can make your hard boiled eggs any way you like. I usually just buy already boiled eggs at the grocery store. That way I can enjoy this healthy egg salad at a moments notice.     How do I make hard boiled eggs on the stove?

    Place eggs into a large pot and add water to cover eggs. Heat over medium heat and bring water to a raging boil.

    Add 1 teaspoon of distilled white vinegar and 1/2 tsp of salt to the water helps prevent cracking as well as making the eggs easier to peel.

    Turn off the heat, keep the pan on the hot burner, cover, and let the eggs sit for 4-5 minutes.

    Remove from heat.

    Meanwhile, in a large mixing bowl combine cold water with a few ice cubes.
