There are endless ways to grill zucchini, but for this specific recipe we recommend trimmed the ends, then cutting each squash into quartered wedges. Heat a grill, then coat with nonstick grill spray. Drizzle the zucchini wedges with a neutral oil , then season with Kosher salt and black pepper.

Place the zucchini directly on the grill grates, then cook for about 3-4 minutes per side, or ~12 minutes.

The zucchini should be charred on the outside, but have a creamy, tender center. Allow to cool slightly before chopping into bite size pieces, about ½-inch big. Place in a large mixing bowl.

For The Grilled Corn Salad:

  • Corn: Removed from its husk and placed on the grill, the fresh corn provides a sweet and slightly smoky flavour to form the base of this avocado corn salad.
  • Cherry Tomatoes: I like to use cherry tomatoes for this salad because theyre small and sweeter in taste. All that you have to do is slice them in half and add them to the bowl. However, you can also use grape or Roma tomatoes if thats what you have on hand.
  • Cilantro: I love to lighten up this dish with a dose of fresh cilantro, but you can swap it out with any fresh herbs you prefer such as parsley, basil or dill.
  • Feta: Everything tastes better with feta. This popular Greek cheese helps add a creamy texture to this dish. For a vegan option, omit the feta completely, or replace it with a plant-based cheese.
  • Avocado: Similar to feta, avocado has a creamy texture and buttery taste that pairs perfectly with the other ingredients. Use a ripe avocado for best results.

How To Make Avocado Salad

Step 1. Make the dressing: mix together lime juice, dried chilli flakes, olive oil, minced garlic, salt, pepper and chopped coriander . Go easy on the salt as the feta will add more saltiness and you dont want to go overboard.

Step 2. If you are using grilled corn whether straight from the BBQ or cooker under the grill let it cool down and then use a knife to cut the corn off the cob. Break it up a bit and put in a bowl. If you are using canned corn, drain well first and add to the bowl.

Step 3. Slice the avocados in half and remove the stone. Slice, skin on, and then peel the skin off. Best to use avocados still on the firm side. Add to the bowl with the corn.

Step 4. Slice your tomatoes and add to the bowl together with the feta. Drizzle the dressing over the salad and then mix together. Taste and adjust the seasoning, if needed. Either serve immediately or keep in the fridge, covered, until needed.

Once the grill is heated, you can coat the corn in olive oil or grill them naked. For this recipe, we do the latter theyll get tossed with that beautiful basil vinaigrette later!

Grill the corn on the cob for about 3-4 minutes per side, or until charred all over, about 12-14 minutes. Remove and allow to cool for 5 minutes or so, then use a sharp knife to cue the corn kernels off each cob. Easy grilled corn! Place into the large bowl along with the grilled zucchini.

For The Lime Dressing:

  • Lime Juice: This adds zesty flavour to the salad. For best results, use fresh lime juice if you can. You can also sub in fresh lemon juice.
  • Olive Oil: I recommend using extra virgin olive oil to create the foundation of your lime dressing. It has a much bolder, rounder flavour, but regular olive oil will work, too.
  • Honey: A small squeeze of honey goes a long way to create an irresistible combination of perfectly sweet and savoury flavours in this Mexican-inspired salad.
  • Garlic: Use freshly minced garlic for the best flavour.
  • Salt and Pepper: Add as little or as much as youd like!

    Taste is totally subjective, so thats up to you. I like the consistency and mild flavor of Bibb lettuce because it looks and tastes like the eponymous BLT sandwich staple. Youre also welcome to add extra crunch with romaine or iceberg lettuce, or pepperiness with arugula. If you like a slightly bitter flavor, try chicories like endive or radicchio.

    Choosing And Preparing Shrimp

    • You can use medium or large shrimp. Look for a 26-30 per pound size, and choose peeled and deveined shrimp to save yourself the hassle.

  • To make the dressing start by mincing 2 cloves of garlic.
  • Add ¼ cup of olive oil, 1 Tbsp. Dijon mustard, 2 Tbsp. lemon juice, and â tsp. each of kosher salt and pepper to a small bowl. Stir until combined with a fork or small whisk.
  • Add the minced garlic and ½ cup of crumbled feta cheese. Stir until combined.
  • Mince 1 Tbsp. of fresh herbs such as chives and add it to the vinaigrette .

    Tips For The Best Fresh Corn Salad

    • If grilling the corn without the husk: The corn will cook a bit quicker, so watch it closely and turn it frequently to prevent the corn from getting too charred.
    • Make ahead: If making this salad ahead of time, I recommend adding the avocado just before serving to keep it fresh.
    • To eliminate the mess when cutting the corn off the cob: Place a ramekin upside down in a large bowl. Prop the ear of corn on top of the ramekin and cut the corn off with a sharp knife. The corn should land in the bowl rather than flying all over the place. Alternatively, you can place the tip of the ear of corn in the centre of a bundt pan and cut the corn off using downward strokes. The corn kernels should land in the pan.
    • Add dressing to taste: I only used about 2/3rds of the dressing, but you can adapt it to taste. The dressing can be used on other salads as well!

    YES in moderation. Avocado are packed full of vitamins, minerals, fiber and healthy fats! One of the few natural produce that contains a substantial amount of monounsaturated fatty acids which are good fats known to lower cholesterol and promote heart health.

    • Oven Method. Cut the corn kernels off the cob, and spread them on a rimmed baking sheet. Drizzle the kernels with 1 tablespoon of olive oil, tossing to coat. Roast them in the oven at 350 degrees F for about 15 to 20 minutes. To help them brown, broil the kernels for about 3 minutes at the end of the cooking time. Watch carefully so they dont burn.
    • Stovetop Method. Cut the corn kernels off the cob. Heat a skillet on the stovetop over medium heat. Sauté the corn kernels with 1 tablespoon of olive oil. Stir and let cook for 10 to 12 minutes, until browned.

    How To Make A Cherry Tomato Avocado Feta Salad With Grilled Corn

    Let’s start with grilling the corn. It’s very simple, don’t overthink it.

    Preheat your grill or grill pan to medium heat, and brush your corn with either butter or a little vegetable oil. Grill the corn, turning it halfway, for 12-15 minutes.

    Let it cool enough to touch before carefully shaving the kernels off the cob.

    Slice the cherry tomatoes in half, slice or dice the avocado, toss it in a large mixing bowl with the corn, and crumble in the feta. Whisk together the oil, lime juice, and chopped herbs in a separate bowl then drizzle it over the salad generously.

    Give a toss and you have a delicious summer side dish.
