Chicken breasts are classic diet food. Thats because theyre high in protein yet low in calories.

So if youre trying to lose weight, youre probably eating lots of chicken breasts. But after a while, chicken breasts, broccoli, and brown rice get kind of blah.

Theres definitely nothing blah about this Power Salad. First of all, lets talk about chicken breasts.

Chicken breasts are notorious for being bland. Not these ones theyre bursting with garlic and herby flavors.

But thats not all this Salad is packed with sweet veggies like carrots and beets. This helps offset the bitterness of the baby spinach.

And youre topping your Salad with toasted pumpkin seeds for crunch. And the crowning glory is the apple cider vinegar dressing.

All Ill say is make extra youll thank me later. To make the dressing, youll need shallots, olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper.

Mix your shallots and olive oil in a blending jar. Then add the rest of your ingredients.

Puree until smooth using an immersion blender. I recommend this immersion blender here.

  • You can make this a day before you plan to serve it and keep it covered in the fridge. If preparing ahead, save the banana until the last to prevent discoloring. The salad is best served fresh so make as much as you need only. Leftovers can be eaten the next day.

    If you are looking for some healthy lunch meal preprecipes that dont consist of leafy salads, then you are in the right place!

    If youve been following my blog and weekly meal plans, then you already know that Im a huge fan of mason jar salads! In fact, mason jar salads have been a staple in my weekly meal plan for close to 8 years now.

    Even though salads play a big role in my meal plan, I realize not everyone wants to eat salads for lunch or maybe just want to add a bit of variety. If this is the case, I got some delicious options for youno lettuce required!

    Before I jump into all the non-salad recipes, I want to share with all of you some make-ahead basics Ive come to learn and depend on.

    Healthy Cobb Salad Protein

    LUNCH MEAL PREP – quick and easy mason jar taco salad

    This chicken cobb salad is naturally a great source of protein. We know that eggs and chicken breast are full of protein. But did you know leafy greens also have a lot of protein per calorie? Thats true, for example, one cup of raw spinach has 7 calories and about one gram of protein. It might not seem like a lot, but it does add up. Dont underestimate the leafy greens.

    This low carb salad provides 54 grams of protein per serving.

    How Long Do Meal Prep Salads Last

    Feel free to store your salad ingredients separately from the dressing in an airtight container for up to 3-5 days. If you add dressing to your salad and have leftovers, the salad wont stay as fresh, which is why I recommend storing your salad ingredients separately from the dressing until youre ready to eat it.

    Quinoa Sweet Potato Salad

    Fall is the perfect time for sitting by the fire. And sipping a nice warm cup of tea or coffee.

    But just because its cold outside doesnt mean you cant have salad. Like this one here.

    Its packed with harvest flavors. Like roasted sweet potatoes, beautifully caramelized onions, crispy chickpeas, toasted maple walnuts, and fresh rosemary.

    What I love about it is that its a sheet pan meal. So, you dont have to wash a ton of pots and pans after making it.

    Just add some baby kale, cooked quinoa, and your favorite salad dressing. And youre good to go.

    What Do You Put In Meal Prep Salads

    I make a basic meal prep salad of lettuce, shredded carrots, red cabbage, chopped green onions, and sliced bell peppers. Ive found these to be ideal basic ingredients that can go with almost any flavor profile.

    I go with this basic base salad so that I can add whatever toppings I like on the day in question. I dont have to commit to certain flavor profiles too far in advance and I can add leftover proteins from dinners as the week progresses.

    How To Make Homemade Salad Dressing

    Its easy and healthy to make your own salad dressing. When you take just a minute to make your own salad dressing, you know that it does not contain any preservatives, additives or extra sugars. You can always be sure that it fits with your eating plan.

    The basic recipe for homemade salad dressing is one part acid to three parts oil. For the acid, you can use any kind of vinegar or, as I do in this recipe, citrus fruit juice.

    Extra virgin olive oil is a common choice for salad dressing but you could also use other oils to subtly alter the taste.

    Other ingredients can be as simple or complex as you choose. A little red pepper, salt and black pepper will give it plenty of flavor. Or you can experiment with fresh herbs, garlic, flavored salts or any other seasoning.

    Homemade salad dressing will last for two weeks. So you can make a large batch of this salad dressing and keep it in the refrigerator to use on any salad you make.
