Cook the pasta in one gallon of boiling water seasoned with 2 tablespoons of salt until just tender. Drain but do not rinse the pasta. Instead, toss it with olive oil and dump it onto a rimmed baking sheet to cool. Don’t use butter because it clumps up when it cools.

Tip: Cook pasta until tender but slightly underdone. Why? Overcooked pasta falls apart when you toss it with dressing. And if you let your salad marinate for several hours, the pasta absorbs extra moisture and could turn mushy if it was overcooked.

  • Cut and quarter enough cherry tomatoes to fill 2 cups .
  • Cut a medium cucumber in half, lengthwise. Cut each half into slices.
  • Cut 4 green onions into slices.
  • Cut enough pitted kalamata olives to fill 1/3 cup .
  • 3Prepare the salad dressing in a jar. Fill a jar with ½ cup of olive oil and ½ cup of lemon juice. Add 2 tablespoons of fresh basil, 2 tablespoons of fresh oregano, ¼ teaspoon of salt, and ¼ teaspoon of ground black pepper. Mince 4 cloves of garlic and add them to the jar too. Close the jar and shake it until the olive oil and lemon juice are no longer separated.
  • If you can’t find fresh basil, use 2 teaspoons of dried basil instead.

    • Dill Pickles Claussen Kosher Mini Dill Pickles are the best.
    • Vinegar This isnt something that you have to add, but I feel like the added zing is a great addition. I used Braggs Apple Cider Vinegar, but if you have white vinegar thats fine too.
    • Spices & Herbs Salt, pepper and fresh parsley

    Make dressing: combine olive oil, red wine vinegar, parsley, onion, lemon juice, basil, oregano, salt, sugar, pepper.
