Combine The Chicken Salad

Easy Chinese Chicken Salad (gluten free, dairy free, and paleo)

On a cutting board, cut the grapes, celery, and pecans into the desired sized pieces. If you are combining your chicken salad in a stand mixer, you will want to chop them up into bite sized pieces. If you are using a food processor, the pieces can be rougher because the processor will chop them up for you.

Next, add the chicken, pecans, grapes, celery, mayonnaise, salt and pepper to the mixer or food processor. Mix or pulse it a few times to achieve the desired texture. If the chicken salad is too dry, add 1-2 tablespoons of chicken broth as well as another tablespoon of mayonnaise if desired. Note: if using a stand mixer, shred the chicken with the mixer first before adding the remaining ingredients.

Once the chicken salad has been combined to your liking, scoop it out of the mixer or food processor and into a bowl. If the chicken you used was made ahead of time and is already cold, you can serve immediately, otherwise, put the lid on the bowl and place it into the refrigerator to chill for at least one hour before consuming.

Healthy Cashew Chicken Salad

This healthy cashew chicken salad with apples is a dairy-free & healthy twist on the classic.Made with wholesome ingredients like chicken breasts, sweet apples, crunchy celery, raw cashews, and a creamy dairy-free dressing.

  • 2lbs. cooked and shredded chicken
  • 1 apple chopped
  • 1cupchopped celery
  • ½cup raw cashews

Dressing Ingredients

  • ½cup mayonnaise
  • ½cup non-dairy Greek yogurt
  • 1tbspfresh lemon juice
  • 1tbspapple cider vinegar
  • ½ tspfine sea salt

How To Make Waldorf Chicken Salad:

In a small bowl or measuring glass, mix together 1/4 cup mayonnaise, 1 Tbsp lemon juice, 1 Tbsp honey, and 1 tsp dijon mustard.

Set this aside.

In a large bowl, place 2 cups cooked and shredded chicken, 1 large or 2 small apples , 2 stalks chopped celery, 1/4 cup chopped pecans, 1 cup halved grapes, and 1 cup blueberries.

Gently toss together.

Pour in the dressing/mayonnaise mixture and gently stir to coat.

Refrigerate for at least 1 hour to chill.

Serve over lettuce, in a gluten-free wrap, or however you prefer to enjoy your Waldorf Chicken Salad!

Loaded with fresh fruit, chicken, and a simple dressing, this tasty salad is light and easy to make.

Chicken Salad With Grapes And Almonds

Chicken salad is a favorite of mine. Ive played around with so many different renditions of it classic chicken salad, Sriracha chicken salad, curry chicken salad. I even shared a mayo-free version a while back. And, I love each and everyone equally, in different ways.

Just like this one. While its very similar to the my deli-style cranberry chicken salad, it has a flavor profile of its own, and I love that swapping out different ingredients makes a completely new salad. This version came about last year when I had a get together with some of my friends and all of our kids. I think it was back in August, but last week, I made it again for a picnic at the zoo.

I use canola oil mayonnaise, its about half the calories of regular mayonnaise, and it doesnt seem to have as much added sugar as the light mayonnaise thats out there. Then I add a bit of water to the mix stretch the mayo a little further.

  • 5 cups chopped, cooked chicken
  • 1 1/2 cups halved grapes
  • 1 cup chopped celery
  • 1/4 cup diced red onion
  • 1/4 cup finely chopped chives
  • 1/2 cup sliced almonds
  • 1 teaspoon dried mustard powder
  • Salt & pepper, to taste
  • Combine all ingredients in a large bowl.
  • Mix until mayonnaise is incorporated.
  • Refrigerate until ready to eat.

    There are so many brands of gluten free bread out there these days! You will need to research brands and find the one that you like that suits your dietary needs.     Chinese Chicken Salad On Budget For Dairy

    I originally shared this recipe back in 2009, but since Ive started making it again, Ive decided to update it. Here are a few ingredient notes and tips to help customize your perfect Chinese Chicken Salad.

    • Sweetener: Brown sugar is my favorite in this type of recipe, but honey, agave nectar, maple syrup, or plain old sugar also taste delicious.
    • Oil: The sesame oil adds richness and flavor, so I highly recommend using it unless you are allergic. But feel free to use your favorite salad oil for the base oil. I just lean toward olive or neutral-tasting oils.
    • Greens: There are no rules. In general, I like to add crunchy green and/or red shredded cabbage, but I mix up the other greens. You can use Napa cabbage, romaine lettuce, butter lettuce, spinach, etc. Most greens go well with the bold flavors of Chinese chicken salad. And I wont tell if you decide to use bagged coleslaw mix and pre-cut greens. Confession: Ive done it many times. No judgement here.
    • Optional Add-Ons: If serving four or more people, I like to set all of the optional toppings out in bowls. But if it is just a party of two or three, I usually choose a few based on the group tastes. In this case, I might do sliced almonds or chow mein noodles, water chestnuts or cucumber, cilantro or green onion, etc. In general, I focus on covering the textural bases. A good dairy-free Chinese chicken salad should have a balance of tender, juicy, and crunchy elements, in my opinion.

    Can I Prepare This Salad Ahead Of Time

    Yes and no. You can wash, dry, and cut the salad greens ahead of time and refrigerate. And the oriental dressing is best when made a day or two ahead of time and refrigerated.

    However, its suggested to assemble the salad when ready to enjoy.

    As a suggestion well oftentimes meal prep a large batch of this salad for a weeks worth of lunches too.

    To do this meal prep the dressing and salad greens, carrots, and chicken. Store refrigerated in individual containers for freshness. Each day youll just need a few minutes to assemble a fresh salad to enjoy over the lunch time.

    How To Make Chicken Salad Sandwiches Gluten Free

    A Chicken Salad Recipe thats Luscious, Creamy, and Delicious, AND Gluten-Free, Dairy-Free

    This first barrier to making chicken salad sandwiches gluten free is finding bread or a bun that is gluten free. That should be the only ingredient that would contain gluten, though its important to check every single ingredient, just to be sure. Here are lots of gluten-free options:

    • Our favorite gluten-free bread bread is Little Northern Bakehouse White Wide Slice. If you prefer to not buy it off Amazon, I get mine locally at a grocery store called Natural Grocer. I see on their website they also have buns, but have yet to find any in stores near me.
    • If were wanting buns to serve this on, we enjoy either Schars Hamburger Buns or their Schars Ciabatta Rolls . Schar does contain soy, in case thats an issue for you.
    • And, if you want to skip the bread altogether and go for a low carb option, you can always put it inside lettuce wraps.
    • Or, you can eat it like a dip, and serve it with gluten-free crackers.
    • You could also put it inside a gluten-free wrap like Mission Gluten-free Tortillas or BFree wraps.
    • Lastlybecause I like you to have lots of optionsyou can serve it over a bed of spring mix or other greens, like baby spinach, and have it as a topping on a salad.

    When I did the Whole30, it was a lifesaver.

    How To Prepare Chicken For Chicken Salad

    To cook chicken I typically drizzle it with olive oil and season it with salt and pepper and either cook it in a skillet on the stove for 5 minutes per side or in the air fryer like in this Air Fryer Boneless Chicken Breast recipe. As always, you want to cook it until the internal temperature of the chicken reaches 165 degrees F.

    Then let it cool so the juices can redistribute into the chicken and then cut it into small cubes. You can do this in advance and have it ready to go in the refrigerator. It should store well after being completely cooled in an airtight container in the fridge for up to 3 days.

    I love making all kinds of salads in the summer months. Salads that are bursting with flavour and filled with a variety of fresh ingredients.     • shredded carrots we cheat and keep a big bag of pre-shredded carrots in our refrigerator. You can also use 3 hand washed and shredded carrots.

    • deep fried wontons strips We order a prepacked Egg Roll and Wonton Wrapper kit of dry ingredients from Moms Place Gluten Free. Prepare the wonton strips according to the package direction for wrappers. After the dough has been rolled out to 1/16 inch thick, cut into very small rows about 1/16 inch wide and 1 1/2 inch long. Then place in a large skillet with the oil heated to 375° F. Fry for 1 minute on each side and remove to a paper towel. Top salad with wonton strips. This mix will make a couple hundred wonton strips. Place leftovers in an airtight container and freeze or refrigerate. Top leftover strips on stir-fry and other Asian-influenced dishes.
