    Firstly, peel your potatoes and chop them into small chunks around 1 inch or less. I would recommend smaller new potatoes for this recipe as I find they generally stay firmer than larger potatoes that are used for baking and roasting but if larger potatoes are all you have they will work too, just check them several times whilst cooking to make sure they dont get too soft. Place your potatoes in a saucepan with boiling water and boil them for about 15 minutes until cooked. You want them to be cooked but still firm enough to pick up with a fork without it crumbling.

    This easy salad is simple to make, it doesn’t call for many ingredients

    • Get starchy potatoes and boil them in their skin, this will reduce the loss of mineral, besides the potato skin has a lot of dietary fiber.
