  • Keep a firm eye on the rutabaga as it is boiling. You want to remove them from the heat when they are just tender, not soft. If they become too soft, you risk them falling apart once we add the dressing.

Traditionally, we like our potato salad with a hint of sweet that you get from the addition of sweet pickles or old school salad dressing, so these sugar free pickles are perfect to add that hint of sweetness with no additional sugar. If you prefer, your low carb potato salad with mayo and dill relish, feel free to substitute chopped dill pickles or relish for the sweet.

Everything gets gently tossed together and there you have it! I think this keto potato salad recipe is better when its refrigerated overnight because all of the flavors get a chance to mix and mingle. If you dont have time to refrigerate overnight, at least shoot for a few hours!

Keto Loaded Jicama Potato Salad

yield: 12 SERVINGS

total time: 1 HOUR 45 MINUTES

Ingredients

  • 2 large jicama , peeled, cubed into 1/2-inch pieces
  • 6 eggs, hard boiled
  • 10 slices bacon , divided
  • 1 small red onion
  • 2 cups cheddar cheese, shredded, divided
  • 1 1/2 cups mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1 bunch green onions, divided

Directions

Peel and chop jicama into 1/2-inch pieces. Place the jicama in a large stockpot and cover with water. Salt the water. Bring to a boil over high heat and then reduce heat to medium and simmer for about 45 minutes. Start checking for doneness around 30 minutes. Jicama is done when you can easily pierce it with a knife or fork.

While the jicama is boiling, you can hard boil the eggs, cook the bacon, mince the red onion, chop the celery, shred the cheddar cheese, and chop the green onions.

When the jicama is soft, pour it into a colander to drain off the water. Rinse with cold water and let cool for about 10 minutes.

While the jicama is cooling, chop bacon and hard-boiled eggs.

Once the jicama has cooled, transfer it to a large mixing bowl. Mix in the mayonnaise, mustard, apple cider vinegar, salt, and pepper. Then stir in the bacon and hard-boiled egg. Reserve about a 1/4 cup of the bacon as a topping.

Next add in the onions and celery. Mix until everything is well combined. Finally, stir in the cheddar cheese and green onions. Reserve about a 1/2 cup of cheddar cheese and 1/4 cup of green onions for toppings.

Low Carb POTATO SALAD Battle – The BEST Keto “Potato” Salad Recipe!

Guysthis deliciously herbaceous, creamy keto potato salad will give you that feeling youve been missing at your cookouts and BBQs this summer. Turnips are a complete and utter blessing. I swear, they have become as much a staple in our keto diets as cauliflower . Theyre great roasted, stewed, so many ways to prepare them. This creamy keto potato salad is my favorite, though. You can always use your favorite low-carb substitute if youre not a fan of turnips!

I want to give you some truth here, as always being on a keto diet can go fabulously well for you as long as you keep your expectations realistic. Nothing really tastes exactly like a potato except for a potato. However, turnips prepared this way are pretty darn close. They keep and hold their shape, dont turn to mush, and theres none of that carb-heavy starch to make them gummy and pasty. They remind me a lot of a firmer and waxier red potato than your typical russet.

If you arent on a keto diet, just use regular potatoes for this recipe. A tip on buying turnips: if youre able to squeeze them at all, dont buy them. They should be completely rock hard and smell kinda peppery. They vary in size, too. Some are as small as lemons, and some are as big as grapefruits! Turnips are super easy to peel, but theyre just like sweet potatoes in that theyre extremely tough to cut. Youll need your sharpest knife possible, and some muscle. Please be careful when cutting these.

  • Add the radishes to a microwave steamer bowl or steamer insert. Steam the radishes until they become fork tender. Remove the radishes from the steamer and allow them to cool.
