Loaded Ranch Potato Salad
  • 1 package Uncle Dans® Classic Ranch Seasoning and Salad Dressing
  • 5 pounds of potatoes
  • 2 cups of sour cream
  • Cut potatoes into bite-size pieces. Boil until tender and cool in the fridge .
  • While potatoes are boiling cook bacon until crispy and crumble.
  • Place potatoes in a large mixing bowl and fold in the mix, chopped onions, bacon, cheese mayonnaise, and sour cream with hands or spatula.
  • As a finishing touch you can hold off some of the green onion, bacon and cheese and add as a topping garnish.
  • Optionally, add a little paprika for color.

    This salad is super easy to make. Boil some potatoes. Cook up some crispy bacon. Throw everything in a bowl and mix, and thats it!

  • To start, fill a large pot with water and bring it to a boil. Carefully add the cubed potatoes and cook until they are fork-tender. Drain the potatoes in a colander and let them hang out while you make the dressing.
  • While the potatoes are cooking, fry up the bacon in a large skillet over medium heat or bake it in the oven. Transfer the cooked bacon to a paper towel-lined plate until its cool enough to touch. Chop the bacon up and set it aside for now.
  • Next, youll make the dressing. Add the sour cream, mayonnaise, mustard, ranch mix, salt, pepper, onion powder, and paprika to a large bowl and whisk it all together.
  • Then, add the potatoes to the dressing and gently stir with a spoon until the potatoes are completely coated in the dressing.
  • After that, add in almost all of the bacon bits, cheese, and green onion and stir to combine everything together. I like to set a little of each aside to sprinkle on top of the potato salad after its all mixed up. After mixing transfer the potato salad to a serving bowl.
  • Cover the bowl and chill it in the fridge until youre ready to serve the salad at least 2 hours to cool completely. The flavors need time to marry.
  • When youre ready to eat, uncover the bowl and top the potato salad with more cheese, bacon, and green onion.

    • Dont over-boil the potatoes. Otherwise, they end up waterlogged and fall apart.
    • Cook the potatoes in salted water for a little bit of flavor.
    • Drain potatoes well otherwise excess water will dilute the dressing and make it less tasty.
    • Add heat If you love spicy food, add a bit of crushed red pepper or diced jalapenos to the salad.
    • Add other meats feel free to add in some shredded cooked chicken or ham.

    We cover the potatoes in cold water and then bring the water to the boiling point. At this point, we salt the water and then actually reduce the heat to low so that the water is just barely simmering. We dont cover the pot.

    Potatoes will cook in the same amount of time whether simmering or boiling, but simmering prevents the spuds from bouncing around which helps them keep from becoming mushy. Nothing ruins potato salad like mushy or water-logged potatoes!

Since we are celebrating Dad today, I thought I would share Rickys favorite: potato salad. Its simple to pick up at the store, but making your own is so much tastier! Being able to season your own food is always a plus, too! I tend to find store-bought items super salty!

    I have a few variations of potato salad that I make: a healthified one with Greek yogurt, warm German potato salad and this loaded ranch version. The ranch adds tons of flavor and you cant go wrong with bacon and cheese, right? Some people leave out the hard boiled eggs, but I love the texture they add. Do what you want with those! I like to chop up half and leave one in slices.

    • 3slicesbacon, cooked and crumbled
    • 1/2cupcheddar cheese cubes
  • In a large bowl, add ranch packet, mayo, dill, onion and green pepper. Mix together to form a dressing.
