    I was disappointed by this chicken salad, particularly because the poaching technique wasnt as foolproof as promised. My chicken breasts were on the larger side, and after two hours of poaching, I pierced the thickest part of the flesh and saw it was still pink. The recipe instructed me to bring the water to a simmer and cook 10 minutes more, but I was confused: Was I supposed to bring just the liquid to a simmer and then add the chicken, or bring them to a simmer together? I opted for the latter and after 10 minutes, my chicken was cooked through and although it was tender, I wouldnt describe it as plush. Was that because I had to reheat it?     IT must be my inner masochist that compels me to order Caesar salads over and over. No matter how many times Ive been disappointed by soggy croutons, bland mayonnaise dressing and a dearth of garlic and anchovies, I persist, hoping that one day Ill meet a salad that lives up to my expectations.

    My ideal Caesar has copious amounts of anchovy, flavoring both the croutons and dressing, along with plenty of raw garlic and a heap of freshly grated Parmesan. I used to make it all the time, but now that Im married to a man who doesnt eat cheese, I got out of the habit.

    Then recently I found myself at the farmers market, standing in front of a mound of crisp romaine lettuce. In my bag was a head of green garlic I had bought from the stand next door. And thats when I remembered my Caesar salad recipe. While I knew I couldnt make it for a family dinner, there was nothing stopping me from whipping it up for myself for lunch.

    With one whiff I could tell this salad was miles better than any of my recent restaurant encounters. And one bite confirmed that is was a fitting successor to the Caesars of my happily pungent salad days.

    My family loves this rich and creamy Caesar salad dressing. Its not overly garlicky or fishy its just right.

    Though most people buy Caesar salad dressing in a bottle, homemade is incredibly easy to make and tastes so much better than store-bought. There are many variations, but this rich and creamy version is the one my whole family loves. Its not too garlicky and not too fishy its just right. Unlike authentic Caesar dressings which are made with olive oil and thickened with raw eggs, this one has a mayonnaise base, which means you dont have to worry if youre squeamish about raw eggs. My kids love this dressing so much that theyve learned to make it themselves. They dont even wait for me to make a salad while I cook dinner, they sit at the kitchen table with a big heart of romaine and dip the leaves in.

    This recipe is part of my classic salad dressing collection, which includes go-to recipes for oil and vinegar based dressings, like vinaigrette and balsamic vinaigrette, as well as creamy dressings, such as buttermilk ranch dressing and blue cheese dressing, which are typically made with mayonnaise and dairy products.
