What is Green Goddess Dressing?

Green Goddess Dressing, named for its green color, became popular in California in the early 1920s in San Fransisco. Green Goddess dressing is traditionally made with anchovies, but anchovies arent listed as an ingredient on the Trader Joes label. This dressing is sure to steal the show at your family meal and is delicious as both a topping or a dip!

If you love variation, you can use a different assortment of seasonings every time you make dressings. Here are some of the best:

If youve got a few extra minutes, dressings you make yourself can be even more delicious than the store-bought kind, and you have total control over the ingredients. Here are recipes for two light salad dressings you probably wont see on the supermarket shelf.

Japanese Restaurant Salad Dressing

Journal as: 1 teaspoon oil

1/4 cup chopped onion 2 tablespoons canola oil or peanut oil 2 1/2 tablespoons rice wine vinegar 2 tablespoons water 1 tablespoon minced fresh ginger root 2 tablespoons minced celery 2 teaspoon light soy sauce 2 teaspoons light corn syrup or honey 2 teaspoons lemon juice 1/8 teaspoon salt 1/8 teaspoon ground black pepper

  • Add all the ingredients to a small food processor or blender. Pulse on high speed for about 30 seconds, or until well-pureed.
  • Pour into serving container, cover, and refrigerate until needed.

Yield: 14 tablespoons

Per 2-tablespoon serving: 48 calories, 0.3 g protein, 3.1 g carbohydrate, 4 g fat, 0.3 g saturated fat, 0 mg cholesterol, 0.2 g fiber, 79 mg sodium. Calories from fat: 73%.

Roasted Red Pepper Vinaigrette

Journal as: 1 teaspoon oil

3/4 cup bottled roasted red pepper pieces, drained 2 tablespoons olive oil 2 tablespoons fat-free sour cream 2 tablespoons red wine vinegar 1 tablespoons light mayonnaise 1 tablespoon shredded Parmesan cheese 1 1/2 teaspoons minced garlic 1/2 teaspoon dried basil Salt and pepper to taste

Yield: 1 1/4 cup

What If I Forget To Soak My Cashews Overnight

No worries. If you forget to soak the cashews the night before, its totally okay. Place the cup of raw cashews into a large bowl. Boil one and half cups of water. Pour the water over the cashews. Let the cashews soak for 30 minutes. No need to cover. Drain and allow them to sit for around 10 minutes to get rid of the excess liquid.

Why calling it vegan, isn’t Italian dressing always vegan?

If you look at the ingredient list on store-bought ones, most Italian dressings will include some sort of cheese, usually parmesan. Also, creamy kinds might be made using eggs or mayonnaise.

I just looked it up and no joke Hidden Valley sells 12 variations of their ranch dressing.

Thats the beauty of a creamy ranch! Throw in a few spices and it completely transforms the experience.

Chipotle and Buffalo ranch are two of my favorite variations, both of which make it into the regular with my family.

How to Use It:

These variations are great for throwing on a Mexican-style salad or used as dipping sauces.

Best Cheesy Italian Dressing: Olive Garden Light Italian Dressing

Well start with the caveat that the only thing light about this Italian dressing is the calorie count, which doesnt help if youre trying to compare actual nutrients. Despite being light, Olive Gardens dressing still has 440 milligrams of sodium per serving, which is nearly double the amount contained in some of the other dressings we sampled. The good news, though, is that its exactly as delicious as youd expect Olive Gardens dressing to be. And it also has the strongest Romano flavor of any of the cheese varieties we sampled. Creamy Vegan Caesar Dressing

Caesar dressing instantly takes me back to my childhood. It was the salad I ordered most often, mostly because of the creamy dressing and crunchy croutons.

But while most vegan Caesar dressings are loaded with oil and vegan mayo, theres a simple way to make it oil-free, and its actually really tasty.

How to Use It:

I tend to stick with the classic Caesar salad: Romain lettuce, vegan parm, and croutons. While not the most nutritious salad, you really cant go wrong with a Caesar.

The Recipe:

  • 1/2 Tbsp soy or vegan Worcestershire sauce
  • 1/2 tsp of lemon zest
  • 2 tsp capers, mashed with a bit of juice
  • 1 tsp maple syrup
  • salt and pepper to taste

In a blender combine all the ingredients except for the lemon zest, capers, and salt and pepper. Blend until youve reached the desired thickness.

In a bowl, empty the dressing from the blender and mix in the remaining ingredients.

The dressing will stay good in the fridge for 4-5 days but will thicken over time, so you may need to add in more water.
