I am not sure if it is a common dish outside of Italy, but my mother would often make it in summer especially when I wanted to lose a bit of weight as a teenager.

  • Start by cleaning the green beans and snapping off the stem edge. They snap off pretty easily, but you can also use a knife.
  • Slice 1 medium red onion into thin slices as shown. Finely chop a ¼ cup of fresh parsley and a ¼ cup of fresh basil. Slice the cherry tomatoes in half.
  • Clean and chop the potatoes into fairly large pieces. About 1 ½” cubes or slightly larger is fine. The measurement is not critical.
  • Bring a salted pot of water to a boil and add the potatoes. Boil the potatoes until almost fork tender. This should take about 7-10 minutes.
  • While the potatoes are boiling make the vinaigrette. In a large bowl whisk together a ½ cup olive oil, ½ cup red wine vinegar, the herbs, 1 tsp Dijon mustard, 1 tsp kosher salt, and a ¼ tsp black pepper.
  • Add the onions into the vinaigrette and set it aside.
  • After the potatoes have been boiling for about 7-9 minutes add the green beans into the water so that they both finish cooking at the same time.
  • Remove the green beans with a slotted spoon, then drain the potatoes. Note:You can run the green beans under cold water to stop the cooking and keep them crunchy. If you don’t they will get softer. Totally a personal preference. Whisk the vinaigrette one last time, then add the warm potatoes to the bowl and toss to coat. They will absorb all the flavors this way.

    Should The Potatoes Be Peeled

    I, as per the family recipe, make this salad with peeled potatoes, but if you prefer with the peel, thats perfectly fine too.

    When cooking I always leave the peel on.

    You have to consider that the peel is like a protection for the potatoes, which in this case prevents the potatoes from absorbing too much water and thus prevents them from flaking after cooking.

    This swap got his stamp of approval, so Ive used those smaller, colorful potatoes when making these recipes ever since. It gives these dishes a little extra pop of color but isnt necessary.

    Feel free to go with single-colored baby potatoes if thats what you find at the store.

    Fingerling potatoes are similar to baby potatoes and can be used here, too. You may need to cut them into a few more pieces to accommodate their longer shape.

    The key is really that the cut potatoes should all be consistently sized. This helps them cook more evenly.

    Potato Green Bean And Cherry Tomato Salad The Recipe

    Ingredients

    3 medium potatoes , raw 15 cherry tomatoes 200 g green beans, raw 2 small scallions, chopped

    1 tsp extra virgin olive oil 2 tsps wholegrain mustard 1 tbsp fresh chives, snipped 1 tbsp fresh basil, chopped 1 tsp balsamic vinegar salt & pepper to taste

    Preparation

    Wash all the vegetables. Trim the edges of the green beans and peel the potatoes. The potatoes can also be peeled after being boiled and cooled down, to retain more of their goodness. Boil green beans and potatoes separately in slightly salty water, until tender. Dont overcook them as they will lose more vitamins! Drain and cool to room temperature.

    In the meantime chop the tomatoes in half or quarters and the scallions in thin slices. Combine in a jar snipped chives, oil, wholegrain mustard, salt and vinegar. Add a little water, or an ice cube in hot summer days, put the lid on and shake well.

    When the vegetables have cooled down, slice the potatoes and put them in a large serving bowl together with the green beans, the cherry tomatoes and the scallions. Pour the dressing on top, add the basil roughly chopped and some pepper if you wish. Toss well and serve.

    It is a good idea to prepare this salad a little in advance so the dressing will be absorbed better releasing more taste. In summer is also a good idea to keep the salad in the fridge for half hour in order to serve it cold.

    • 2 small Yukon Gold potatoes, grated
    • 1tablespoon canola oil
    • ¾cup green beans, trimmed and cut into 1-inch pieces
    • 4 baby radishes, quartered
    Directions
  • Gather grated potatoes in a cheesecloth or kitchen towel and wring out as much moisture as possible.

  • In a large, cast-iron skillet over medium-high heat, heat olive oil.

  • Add potatoes, paprika, and salt and pepper. Spread potatoes in a thin layer and cook, without stirring, 3 minutes, until underside starts to crisp. Stir potatoes, then press again into a thin, even layer.

  • Add green beans, radishes, and garlic. Cook, without stirring, until underside of potatoes is crisp, about 3 minutes more.

  • Make a well in center of potatoes and crack eggs into skillet. Cook 3 minutes, until egg whites are bubbly and yolks are starting to set but still slightly runny.
