What I love about potato salad is that it serves a lot of people without a lot of effort, and it’s so easy to make a good one.

I love using Yukon golds, though you can use any potato. My dad likes using russets in his potato salad. This recipe is for potato salad with sour cream – using it as a binder makes it extra creamy.

Why This Recipe Works

We wanted a no-mayo potato salad that strayed far from the classic versions we see at potlucks all summer long. To achieve that we relied on some of our favorite ingredients.

To start, we swapped out the mayo in favor of AE Dairy sour cream. The creaminess and tanginess of AE Dairys high-quality sour cream pairs perfectly with a trio of herbs. What makes it so high-quality? For starters, AE Dairy uses the freshest cream from Iowa farms .

What Can I Use Instead Of Sour Cream In Potato Soup

There are several good dairy options for replacing sour cream, including Greek yogurt, cottage cheese, crème fraîche and buttermilk.

  • Greek Yogurt. Greek yogurt makes an excellent stand-in for sour cream.
  • Cottage Cheese. This cheese has a rich history.
  • Crème Fraîche. Crème fraîche literally means fresh cream.

    Putting The Salad Together

    Everyone has an opinion on what makes for the best potato salad, but heres what we love adding to ours. You can, of course, add or remove an ingredient based on your tastes. Its also important to note that its okay if you dont have red potatoes on hand.

    Use other waxy potatoes like yellow or Yukon potatoes, white or creamer potatoes, and fingerling potatoes. They are quick-cooking, and since they are already small, theres no need to chop them before cooking them. Russet or baking potatoes will work, but the salads texture will be less creamy.

    • Finely diced celery for crunch
    • Finely diced dill pickles for crunch and flavor
    • Fresh parsley, dill, and chives

    Other popular ingredients are hard-boiled eggs and onion. We add them to our creamy potato salad but leave them out for this red potato version. We love letting the herbs shine, so we hold back on the other ingredients.

    For best flavor, refrigerate for at least 1 hour before serving.

    Will keep for 3 to 4 days in an airtight container in the refrigerator.

    To be sure your potato salad is well-seasoned, once the potatoes are boiling, add a few large pinches of salt to the water.

    For a little heat, add 1/4 to 1/2 teaspoon of cayenne pepper or 1/2 teaspoon of cajun seasoning.

    The Best Potato For This Creamy Potato Salad

    One of the keys to making the best sour cream potato salad is to find the right potato.

    Low starch

    This mayo and sour cream potato salad works well with ‘waxier’ potatoes, such as any type of “New” potatoes or red potatoes. These waxier potatoes contain relatively less starch, are high in moisture, and less likely break apart while being cooked. The skin is rather thin and so no need to remove it.

    Russet Burbank and King Edward, high starch potatoes, can be used but tend to be ‘floury’ and fall apart when they are cooked. So the texture can be different to the waxy potatoes.

    Mid starch

    In North America, Yukon Gold are good. They can be found throughout the season and are in between waxy and floury potatoes.

    How To Make Red Potato Salad

    When I can find them, I love using smaller red potatoes since it means that I can cook them whole. Chopping them does help them cook a bit quicker, but potatoes that have been cooked whole taste better and are fluffier in the middle.

    Use a big pot for cooking the potatoes and throw a good amount of salt into the water. The water should taste salty. Salting your water is essential since it seasons the potatoes. Without it, they will taste bland, even after tossing them in your dressing.

    Then when the potatoes are cooked and cool enough to handle, scatter a couple of tablespoons of vinegar over them. Its incredible how much of a difference the vinegar makes. I use red wine vinegar for this salad, but apple cider vinegar, white wine vinegar, and even dill pickle juice work well.

    • Smaller red waxy potatoes are best
    • If time allows, cook the potatoes whole. They taste better and dont get waterlogged.
