A Brief History Of Sizzler Restaurant

There are plenty of steak and shrimp lovers out there, but its not an indulgence they can always afford at most restaurants. For those on a budget, Sizzler steakhouses have long offered a cost-effective alternative, making them a favorite for families across America for over fifty years.

In 1958, Del and Helen Johnson opened their first Dels Sizzler Family Steakhouse in Culver City, California. They employed a number of innovative ideas, such as having customers line up to order their food before being seated, which helped to keep the costs down. By doing so, they provided an affordable night out on the town at a respectable restaurant.

Gluttons came out of the woodwork to consume as many of the Creustacians as possible This led the company to significantly expand its salad bar and turn it into an all-you-can-eat buffet.

Sadly, once the company went the buffet route, less emphasis was placed on the entrees, since the majority of their patrons came for the salad bar and shrimp. As the quality declined, the company image suffered as a result. Sizzler filed bankruptcy in 1996, closing approximately 75% of their locations. They were down, but not out.

Returning to their roots, the restaurant chain has moved away from the buffet model and refocused its efforts on providing a reasonably-priced steak dinner that a family on a budget can afford. New locations continue to sprout up, with the company boasting 270 locations in the US alone.

Why Did So Many Sizzler Locations Close In 1997

On the last day of Sizzler in Ferntree Gully, Victoria

A former Jardine Matheson employee, Trevor Willoughby left the company in 1993 with a plan to help establish a similar restaurant chain called Bells. In early 1995, he attempted to float Bells but was unsuccessful and needed to find more backers.

UFH Holdings, a private company owned by Willoughby, his wife and Sandra and Les Williams, a former hotel and bottle-shop owner finally made a $60 million deal with Jardine to buy all of their Sizzler locations to turn into Bells. These Sizzler restaurants were turning over $50 million a year and the new Bells concept was estimated to make $90 million a year. This would be more than just a name change, but also included ripping out the plastic plants and salad bars, changing the menu, reducing the number of seats, expanding the bar area, and introducing new cutlery and crockery. They kept the Sizzler staff to work at Bells.

From what I can gather, another AFR article from announced these new Bells restaurants were closing after only about 6 weeks of operation after being foreclosed by banks. This led to the more than 2,000 former Sizzler/Bells staff being unemployed and unlikely to have received redundancy packages.

Sizzler Australia Rat Poison Scare

Sizzler ribs and All You Can Eat Salad Bar

In January 2006, Jacqueline Elizabeth Forbes, a 57-year old Brisbane woman put green rat poison in the salad bar at the Toowong and Myer Centre Sizzler locations. She was caught and charged with two counts of contamination of goods and three counts of an act intending to cause grievous bodily harm. She ended up in a mental institution as a result, you can read the court documents here. This resulted in all locations closing their salad bar for at least a week until security measures were installed. This shutdown cost the company millions of dollars, losing hundreds of thousands of dollars per day. The salad bar accounted for 60% of the revenue and the lack of this drawcard would have reduced numbers for that period. Its likely that this incident tarnished the image of the brand for many people, who might be worried about copycats, despite the new security.

The Future Of Buffets And Salad Bars After The Coronavirus Pandemic

For decades, self-serve salad bars and buffets have been ingrained in the American dining experience. But now, with the coronavirus threatening tocontaminate buffet surfaces, the pandemic has upended salad bar chains, all-you-can-eat Indian and Chinese buffets, cruise ship and casino buffets, hotel breakfast bars and self-serve prepared food bars at grocery stores.

On May 7, the buffet industry had its first casualty when Souplantation or Sweet Tomatoes as the chain is known outside of Southern California permanently closed its 97 locations. Was this a harbinger of things to come?

Not exactly. As restaurants across the U.S. reopen for dine-in service, these food bars continue to exist but have morphed into different concepts.

For instance, Golden Corral has adapted to cafeteria-style and family-style dining at most of its locations. Instead of customers serving themselves at the buffet line, an attendant dishes out the food for them. Some items, like desserts, are pre-portioned for customers to grab themselves.

A representative for Golden Corral told HuffPost that in most locations, soft-serve ice cream machines have been suspended. In parts of the country where self-service is permitted, we provide protective paper napkins next to the machine so that our guests do not have to touch the metal lever to dispense their soft-serve ice cream, said the representative. We are also sanitizing guest touch points at a minimum of every 30 minutes.

What Is Malibu Rotisserie Chicken

Malibu Chicken is a dish made famous by the Sizzler Steak House and consists of breaded chicken, ham, and cheese baked in the oven. The announcer described a breaded chicken patty topped with ham and cheese served with a mustard dipping sauce and a steak. Honestly, the dish looks ghastly in the commercial.

What Sizzler Restaurants Are Known For

Sizzler ()

Overall, Sizzler is known as a chain of casual restaurants that serve seafood, steaks, burgers, and salad bar items. It is a typical steakhouse, a type of diner that many of us frequent on a daily basis. Among other things, the customers favorite meals include the iconic cheese toast, delicious ice cream, and spag bol.

Quite a while ago, Sizzler was well-known as one of the cheapest diners in California. But since the prices at the restaurant have noticeably grown since then, this feature stopped being something that is attributed to Sizzler.

Changing Trends In Australian Dining & The Death Of Sizzler

Trends in dining have changed over the decades, there is no denying this. The rise of social media has likely harmed these business models greatly. People are always posting about gross things they see other people do at buffets, bad reviews about bland food etc. A buffet business is definitely tricky in modern times. Its very hard to have the right staff and chefs who can cook all types of food well, resulting in a mediocre mix of a bit of everything.

Whilst COVID-19 lockdowns were the final nail in the coffin for Sizzler restaurants in Australia, they did attempt to stay open offering takeaway meals, but when your star attraction is your Endless Salad Bar buffet, your main meals become even less appealing.

Older generations will often comment on how younger generations are always taking photos of their food. Im one of those people who will take photos of food, mostly for review purposes but can you really picture someone serving up their own weird mix of slop and proudly sharing it online? Below are some photos of my Sizzler meals here.

This wouldnt get many likes on Instagram except my Melbourne friends being surprised that Sizzler still exists in other states.

Heres the main dish I ordered, I dont recall what it was but I recall thinking it wasnt worth it and certainly didnt post it online at the time.

How Much Is The Salad Bar At Sizzler

We all decided on the all you can eat salad bar, which still in my opinion holds the most value for your buck. Sizzler Cheesy Pan Bread At Woolworths

Sizzler, Terminal 21 all you can eat salad bar

If you are missing the cheese toast at Sizzler, La Famiglia Kitchen traditional cheesy pan bread is virtually the same thing and it seems to be only available at Woolworths, not Coles. It is kept near the garlic bread in the fridge. I used to buy this a lot and cook it on the sandwich press at work. You just cook it face down on some baking paper and put a small plate on the back of it to steam it, resulting in a crispy cheesy side and a soft pillowy side. Note, this recipe uses parmesan cheese and not pecorino, but its a good substitute if youre lazy.

The Changing Face Of Value

While Sizzler has attributed the shuttering of the final nine stores to the impact of COVID-19, the brand has experienced a slow death, with 19 outlets closing across Australia since 2015.

Its demise can be attributed to many factors.

Since Sizzlers peak, Australian consumers have shown greater interest in food provenance, or understanding where their food comes from.

There are growing concerns about environmental impacts of the way we eat, particularly around food waste. These concerns become stark in buffet settings.

Other contemporary culinary interests include the ideals of clean eating and Instagrammable #foodporn Sizzler isnt entirely suited to either category.

Once considered alternative approaches to eating, vegetarianism and veganism are also on the rise. By 2019, more than 2.5 million Australians were vegan or vegetarian.

We have embraced movements like flexitarianism and Meat Free Mondays. Sizzler is known for its salad bar, but the prominent grill offerings of steak, seafood and chicken dont necessarily align with these culinary values.

Pressure has been placed on Sizzler, too, as fast-casual dining chains gain popularity, with companies like Guzman y Gomez and Grilld focusing on ethical and healthy choices.

Our notion of what constitutes good value has also evolved.

Until Sunday, a standard Sizzler all-you-can-eat salad bar will cost you $27.95. You can add $4 and get a rump steak, or $2 for a Malibu Chicken Supreme .
