Pinoy Style Chicken Macaroni Salad

These are the saladâs major add-ins, including cooked and raw vegetables, poultry, seafood, and canned beans. Some need little or no preparation before going into the salad. Others can be lightly cooked. Still others are best sauteed or grilled.

Tip: Choose at least 3 major flavorings. Let one ingredient dominate. For example, combine 1 pound of asparagus with 8 ounces each of sliced mushrooms and cherry tomatoes for a total of 2 pounds.

Ideas for adding cooked vegetables:

These can be boiled or blanched in the pasta water. Just add them to the pot during the last minute of boiling. Drain and cool them with the pasta, or shock them in ice-cold water for a just-right, tender-crisp texture.

  • Broccoli or cauliflower, florets cut into bite-size pieces, stems peeled and cut into 1/4-inch thick coins
  • Asparagus, trimmed and cut into bite-size lengths
  • Carrots, peeled and cut into 1/4-inch coins
  • Green beans, trimmed and cut into bite-size lengths
  • Snow peas or sugar snap peas, strings removed
  • Zucchini, quartered lengthwise and sliced 1/4-inch thick

Ideas for adding raw or canned vegetables:

Raw vegetables add snappy color and texture, while canned vegetables are convenient time-savers.

Flavor tips: For Asian-style pasta salads, consider cilantro, basil, and/or the citrus zests. Dill and mint are usually compatible with creamy-style salads. Rosemary and tarragon are strong flavors, so use just 1 tablespoon of either herb combined with 2 tablespoons of minced parsley.

Its really good. When I run out of Salad Supreme, I make a reasonably excellent substitute by mixing in the individual spices specified on the SS bottle of dressing. After refrigerating overnight, on the day of serving, I may add a little amount of more salad dressing to taste. In addition, you may swap out a variety of items, such as vegetables, cheese cubes, pepperoni slices, or ham cubes, among others. This is a simple template that may be customized. How To Make This Macaroni Salad Dressing

Pickle juice is the secret! The dressing for this salad is a mayonnaise base thats been thinned out with pickle juice reserved from the sweet pickles added to the salad. I always use sweet pickles, so if you use another style, taste test it to your liking. If youre not a fan of pickles, you could substitute vinegar or lemon juice. Taste as you go to get the right balance. But for me, its sweet pickle juice all the way.

Refrigerate for the flavors to meld. This salad tastes best when its had some time in the refrigerator for the flavors to meld and the mayo sauce to permeate the noodles. Allow for at least an hour of chill time before serving, or make it the night before for the best, flavorful taste. And always remember to taste again before serving to decide if more salt and pepper seasoning needs to be added.

And really its as simple as that, and way better than mac salad served from a box.

    • Pasta: though you can use any small shape of pasta you like, it is usually made with elbow macaroni. Some other pasta shapes that would work: ditalini, cavatappi, cavatelli, shells, and farfalle.
    • Pimientos: are cherry peppers that are sweet and almost like a more flavorful red bell pepper. Theyre usually found in the condiment or pickled pepper aisle sold either diced finely or in strips. If you cannot find them, you can replace them with a fresh red bell pepper thats been finely chopped. Or even better, replace with fire-roasted peppers that come in a jar!
    • Shredded carrots: I use a box grater and finely shred the carrots myself for this recipe but you could also use store-bought matchstick carrots.
    • Chopped celery: Use fresh finely chopped celery so the flavors carry all the way through.
    • Chopped onions: I like to use sweet onions for this recipe. They are usually sold where all the other onions are kept at the store but marked as sweet. You could use red onions if you prefer a stronger, more pungent flavor.

The dressing for this macaroni salad is my favorite! It has a bit of tang thanks to the vinegar. Plus a bit of sweetness thanks to the small amount of sugar being added. And the dijon mustard adds a wonderful flavoring.

Mix together the dressing in a small bowl and add to the cooked macaroni and add ins. You can substitute some of the mayonnaise for sour cream or greek yogurt if desired.

If you are storing the macaroni salad overnight or for a couple of days, you may need to mix together some more of the dressing to stir into the salad before serving. The salad will soak in a lot of the dressing as it sits over a few days.

How To Make Macaroni Salad From Scratch

Sometimes you just dont mess around with the classics. While some might look at this macaroni salad recipe and think its too simple thats exactly why its a time-proven favorite.

While Ive always been a fan of potato salad its taken me years to come around to macaroni salad. The reason being is that every time I tried one, it was never a good one. They were either too dry, too plain, or too heavily loaded with a goopy, flavorless mayo dressing that coated the macaroni like oil on a dipstick and likely came from a pre-packaged box from the deli counteryes! That stuff usually comes from a box!

Theres nothing worse than that acrid taste of fake mayo macaroni salad. You know. Youve been there.

But, this old-fashioned macaroni salad from scratch is everything those others were not. First off, its homemadetoss the box! Its simple but well-seasoned. Its dressed just right with a tangy but light mayo dressing. And the pasta is neither clumpy nor starchy, but smooth and satisfying with every bite.

I really do love this salad but Im going to defer to my husband on this one, who as a self-proclaimed macaroni salad connoisseur did attest, Honey, this is still the best macaroni salad Ive had. Ever.
