How To Make Bavarian Potato Salad

Authentic German Potato Salad

I have two methods for making this old fashioned potato salad.

You can boil the potatoes on the stovetop or you can cook them in your Instant Pot.

To cook the potatoes on the stovetop:

Wash and scrub potatoes. Cut potatoes into bite size chunks. Why chunks? Theyll shrink as they cook so dont worry about making them perfect.

Fill a large pot with cold water to cover the potatoes.

Bring to a boil, and then reduce temperature to cook over medium heat. Simmer until potatoes are fork tender, about 5 to 8 minutes depending on their size. Drain and allow to cool slightly.

To cook the potatoes in the Instant Pot:

Prep the potatoes as outlined above. Dont worry, instructions are in the recipe card below, too!

Add a steamer basket into the Instant Pot. Add 1 cup of water and the potatoes. Lock lid in place, and pressure cook for 15 minutes.

Do a natural pressure release for 5 minutes, then a quick release and drain the potatoes.

To make the dressing:

In a large skillet or in your Instant Pot, fry the bacon until crisp, remove and set aside to drain on a paper towel.

Farm Girl Tip: You can also make bacon ahead of time and freeze it!

Drain all but 2 tablespoons of the bacon fat. Add onion to the pan with the drippings and cook until tender.

Add vinegar and water, cook until bubbly and slightly reduced. Add sugar, salt and pepper and stir to dissolve. Remove from heat.

Place cut potatoes in a large bowl. Pour warm dressing over the potatoes and bacon and parsley and stir to combine.

What Type Of Potato Makes The Best Potato Salad

The potatoes you use will make all the difference in the texture of your salad. The Best German Potato Salad Recipe

With strong German ancestry on both sides of my family, it should come as no surprise that potatoes and sauerkraut and any variety of sausage were common dishes at our table when I was growing up.

But it wasnt until my family was on vacation in the Black Hills many years ago, that I had my first experience with authentic German potato salad. And I was instantly hooked!

This German Potato Salad recipe is awesomely flavored with vinegar and mustard, and is served warm or at room temperature. And theres BACON! I hope you love it, too!

Filming For ‘the Talk’ In California

On May 25, Kegel flew to Los Angeles for filming. When he arrived, he said he got to explore the Hollywood Hills and the city.

The next day, Kegel went to the studio to do a test run to make sure all of the necessary ingredients were there and that the food was presented correctly. Both teams also needed to create a vegan version of their dish for host Akbar Gbaja-Biamila, Kegel said.

They did dress rehearsals to help get Kegel and his opponent, Walt Kunimitsu of W& M Bar-B-Q Burger, comfortable on set. Then it was off to hair and makeup.

Ahead of filming the segment, Kegel met the show’s hosts, including Jerry O’Connell.

“He was the first one to say, ‘Welcome to LA,’ ” Kegel said. “And before the show, he had looked up the website and told us great things, like if he ever comes to Milwaukee, he’s coming to our restaurant.”

Then it was officially time to film.

“City pride is on the line,” Morales said in the segment’s intro.

Kegel showed host Sheryl Underwood how to make the recipe while the other hosts taste-tested it.

“This needs to be served hot,” Kegel told Underwood. “That’s really when the flavors start to meld together.”

With patience as a pillar of the three-day process, Kegel filled Underwood in on the most Wisconsin way to wait. With a beer in hand.

“When you’re looking for that perfect side, I think German potato salad has anything beat,” Kegel said.

He was right, coming out victorious.

The prize? A trophy that now sits above the bar at his establishment.

Technical Serving Size Vs Reality

The technical serving size of potato salad is very different from the actual amount that people will eat.

The average serving size of potato salad is one-half of a cup, or one-fourth of a pound, or five ounces. However, potato salad is a crowd favorite and your group is likely to eat more than just one-half of a cup, one-fourth of a pound, or five ounces. Typically, when at an event, people will eat double what the serving size is.

If your guests eat double the serving size, that means the recommended amount of potato salad is one cup, one-half of a pound, or ten ounces per person.

How To Make German Potato Salad

  • Steam potatoes: Place red potatoes on a steamer basket* set in a pot with about 1 1/2-inches of water. Bring water to a simmer over medium-high heat.
  • Cover with a snug lid and let steam until potatoes are tender, about 20 25 minutes . Set aside to cool just until warm enough to cut into chunks.
  • Cook bacon: While potatoes are steaming, cook bacon in a non-stick skillet over medium-high heat until crisp. Remove bacon, set aside and leave drippings in skillet.
  • Saute onions and garlic: Add onions to skillet with drippings and cook 5 minutes. Add garlic and cook 30 seconds longer.
  • Make german potato salad dressing: Pour in chicken broth, vinegar, dijon mustard and sugar. Bring to liquid to a simmer and let reduce by about half for a minute or two.
  • Toss dressing mixture with potatoes: Toss in chopped potatoes, cooked bacon and olive oil. Season mixture with salt and pepper to taste.
  • Finish with herbs: Remove from heat, toss in parsley. Serve warm.

    How Long Does Bavarian Style Potato Salad Last In The Refrigerator

    Not long, in our household! But this potato salad will keep for several days in the fridge.

    The bold and bright tastes of this German style potato salad really shine through when this potato salad is served warm or at room temperature.

    If refrigerated, remove about 30 minutes before serving to allow the salad to lose the chill factor.

    If you prefer a cold German potato salad, you can do that, too!

    How To Reheat German Potato Salad

    Easy Authentic German Potato salad

    This German Potato Salad recipe is best enjoyed warm, immediately after preparing it.

    That being said, if you wish to make it up to one day in advance, you may reheat the entire dish before serving. However, please keep in mind that the potatoes will absorb the dressing while chilling and your German Potato Salad will likely be slightly drier than if you enjoy it immediately after making it.

    To reheat this recipe, transfer it to an oven-safe baking dish and cover tightly with foil. Place in a 325°F oven until heated through, checking after 30 minutes, although it may take longer.

    I follow a couple rules to ensure an excellent potato salad.

    • First, I make sure to use waxy potatoes, the smaller the better. The baby red potatoes I used in the photos are about six to a pound, and they steam in just 20 minutes. You can use creamer or fingerling potatoes instead if you like — those will cook even faster!
    • Second, I let the potatoes cool for at least 20 minutes before handling them. Theyre easier to deal with when theyre cool, and you can easily peel off the skins with your fingers or a paring knife.

    The potatoes are also more firm and less likely to fall apart once theyre a bit cooled, so you can easily cut them into even slices.

    Tips For Making German Potato Salad

    • Scrub those potatoes before you boil them. And then be sure to cut the big ones into equally sized chunks to ensure even cooking of all of the potatoes.
    • Always start your potatoes off in cold water before bringing them to a boil. If you put potatoes directly into boiling water, the outsides will cook immediately and the insides may take longer, resulting in potato salad that could have some hard and soft pieces
    • After the potatoes are cooked and drained, let them steam a bit in their still-hot pot. This will allow them to absorb the bacon grease-vinegar dressing more easily.
    • Be very gentle when stirring the potatoes into the dressing. Otherwise, your dish may end up looking more like mashed potatoes.

    Okay, Ive seen it made both ways, but through the personal experience , you only cut potatoes before boiling them when making mashed potatoes. For any potato salad, cook them whole!

    Cook the potatoes until theyre fork tender, but do cook them whole. When they are cooked quartered, they will take in a lot more water than needed and become quite mushy. At the end of it all, you will end up with mashed potato salad. When cooked whole, you will be able to cut them, quarter them, chop, or dice them.

    How To Serve This Salad

    When its just our family eating this potato salad, I most often serve it straight from the skillet, hot and fragrant from the stovetop.

    But when serving this to guests, around the dining room table or outside on the backyard patio, I will likely transfer the salad to a serving bowl. I aim to serve the salad anywhere between hot and warmand when it cools to room temperature its still awesome!

    And if youre wondering about serving it cold, I have to admit that its still pretty darn wonderful straight from the fridge! Just know that when the salad sits in the refrigerator, it absorbs more of the dressing. So you may want to spritz a bit more vinegar over the top, and then give it a stir to loosen it back up.

    What Goes With German Potato Salad

    Im going to get really German on you here. See that plate above? THAT is a plate of German goodness. A tasty grilled bratwurst , a helping of sauerkraut, and a pile of warm German potato salad.

    How Long To Boil The Potatoes

    This will depend on a variety of things, such as the size of your potatoes, the size of your pot, and how much water is in the pot. But, in general, were looking at about 10 to 15 minutes of boiling time.

    I stress to not pay attention to the minutes as much as the texture of the potatoes. When the water starts to boil, I set a timer for 10 minutes. Then I check the doneness by stabbing a potato with a fork. If there is ANY resistance, I set the timer again for another minute or two, and then check again.

    Youll know the potatoes are done when the fork pierces the potatoes easily, with no resistance. When this happens, immediately drain the potatoes. Do not overcook them!
