Innovative fall salads keep menus fresh and relevant for customers. Starring as main courses, starters and side dishes, they are springboards for local ingredients, global flavors and healthful eating.

While for some the term salad may still conjure up the traditional medley of leafy greens, tomato and cucumber, seasonal ingredients paint a more colorful picture on menus today.

The top flavors/ingredients on fall salads across all U. S. restaurant menus are apple, cranberry, onions, tomatoes and goat cheese, according to the market research firm Technomic. Ingredients which have been increasingly featured in fall salads over the past year include:

  • Carrots .
  • Feta cheese .
  • Pumpkin .
  • Maple .

The seasonal connection

I like the seasonal aspect of salads because it takes us back to what we should all be eating, which is seasonal produce, says Chris Dahlander, founder and chief executive of Snappy Salads, based in Dallas with 17 units. We have eliminated seasons from the grocery store, where people find things like apples, potatoes and onions available all year.

At press time, Snappy Salads was nearing the end of its popular summer salad feature Grilled Peach with Spicy Tenderloin and Gorgonzola and looking ahead to its fall offering, Granny Smith Apple Salad. The latter combines the apples with red leaf lettuce, Gorgonzola, currants, red onions, candied walnuts, house maple vinaigrette and diced Black Forest ham.

As you might expect at a chain specializing in salads, the vegan options at Salad and Go are really good. Salad and Go is a southwestern chain that focuses on quality ingredients and value. Salads start at less than $6 and burritos are $2.99.

Summer Menu Round

An estimated cost of $300,000 is attached to the forthcoming 823-square-foot space and as with other Salad and Go locations, it will be a drive-thru-only restaurant. Work is set to begin on the ground-up construction in May and be completed by August.

Founded in 2013 by husband and wife team, Tony and Roushan Christofellis, Salad and Go is not your average drive-thru fast food restaurant. The Arizona-based brand offers fresh, made-to-order, health-conscious items including salads, wraps, soups and drinks for fairly low prices. Customers are given the option to customize their salads with protein such as chicken, tofu, and shrimp. Its menu also features breakfast items including $2.99 burritos and $1 organic cold brew.

Apart from its fast, healthy, and low-cost dining concept, the brand is also known for its charity donations. Their local restaurants donate fresh salads weekly to various organizations fighting homelessness and hunger throughout North Texas.

Salad and Go has been rapidly expanding across the Dallas-Fort Worth area since it opened its first Lone Star State locations in 2021. At the moment, eight locations are open in Carrollton, Dallas, Fort Worth, Plano, Richardson, and Watauga. Eleven more locations are in the works for cities across North Texas from Cross Roads to Rowlett.
