    When we go out to eat at a local restaurant I often get their BBQ Chicken Salad with Cilantro Lime Ranch. Since it has started to warm up outside and I can finally use my grill again, Ive decided Im just going to start making this salad at home.

    This tastes just like the restaurant version but Im sure it cost half the price. Not to mention my corn tortilla strips are way better than theirs because theyre fresh :).

    I love salads like this because they are healthy and filling and they even make great left overs for lunch the next day .

    This one has all the flavors of a Southwestern meal in one loaded salad (and no Im not skimp with the toppings.

    Its always crazy when you pay $10 for a salad and they put 3 tiny pieces of chicken on top. If its going to be a meal for me it needs to have a lot in it).

    The other great thing about this salad is its a mans salad too, my husband doesnt go for any of those dainty salads that have a few pieces of fruit and a light vinaigrette for a main meal. We can both agree on this one.

You can prep the rest of the ingredients while your chicken is cooking!

    How To Make Our Bbq Macaroni Salad Recipe:

    Start by cutting up the red bell pepper, celery stalk, cucumbers, green onion, purple onion, and colby jack cheese.

    Once that is done, set them aside until later.

    Then, cook the macaroni noodles according to the directions on the packaging.

    After the noodles are done cooking, drain the water with a colander and then rinse the noodles with cold water and let them drain again.

    NOTE: By washing the noodles in cold water, this will stop the cooking process and keep the noodles the consistency you want for macaroni salad.

    When you are done cooking the noodles, use a large mixing bowl and combine the mayo, BBQ sauce, garlic powder, chili powder, hot sauce, and apple cider vinegar in the bowl.

    How Do I Make This Sauce

    Start making this small batch of BBQ ranch dressing by pouring the following ingredients into a mason jar with a tight lid: ¼ cup plain Greek yogurt, 3 Tablespoons mayonnaise, ¼ cup buttermilk , 2 Tablespoons BBQsauce, and 1 ½-2 teaspoons Ranchdressingmix.

    Place lid on jar, and secure. Shake jar until sauce ingredients are incorporated and smooth. Whisk if any small chunks remain.

    Pour over salad or onto a plate to use as a dip. You can refrigerate this ranchBBQ for 3-5 days, or just sniff it. If it smells good still, it should be safe to eat. I like using the sniff test because many foods last longer than 3-5 days and don’t need to be tossed then.
