Pandemic Fizzle: Sizzler Steakhouse Chain Files For Bankruptcy Protection
The venerable Sizzler USA family steakhouse chain has filed for Chapter 11 bankruptcy protection, citing a business environment roiled by COVID-19 restrictions â and saying that not enough has been done to help restaurants survive.
“Our current financial state is a direct consequence of the pandemic’s economic impact,” Sizzler President Chris Perkins said, “due to long-term indoor dining closures and landlords’ refusal to provide necessary rent abatements.”
The company, which first opened 62 years ago, says it wants to keep all of its locations open. Sizzler says it hopes to renegotiate its leases over the next four months it will also undergo a restructuring process aimed at reducing long-term debt.
Sizzler USA received between $2 million and $5 million in federal loans from the Paycheck Protection Program, which was designed to ease job losses from the coronavirus and help keep small businesses afloat. That’s according to data released by the U.S. Treasury Department.
“It is our ultimate goal to keep all Sizzler locations open for business throughout this process,” the company said in a statement sent to NPR. It added that it intends to fulfill financial commitments to employees, franchised locations and vendors.

On May 7, the buffet industry had its first casualty when Souplantation or Sweet Tomatoes as the chain is known outside of Southern California permanently closed its 97 locations. Was this a harbinger of things to come?
Not exactly. As restaurants across the U.S. reopen for dine-in service, these food bars continue to exist but have morphed into different concepts.
For instance, Golden Corral has adapted to cafeteria-style and family-style dining at most of its locations. Instead of customers serving themselves at the buffet line, an attendant dishes out the food for them. Some items, like desserts, are pre-portioned for customers to grab themselves.
A representative for Golden Corral told HuffPost that in most locations, soft-serve ice cream machines have been suspended. In parts of the country where self-service is permitted, we provide protective paper napkins next to the machine so that our guests do not have to touch the metal lever to dispense their soft-serve ice cream, said the representative. We are also sanitizing guest touch points at a minimum of every 30 minutes.

For Sizzler The Pandemic Proved Too Much To Handle
Sizzler USA filed for bankruptcy on Monday, arguing that the pandemic forced its hand, as it needs an infusion of cash and some renegotiated leases to survive.
But much like many industry bankruptcy filings this year, Sizzlers story is a bit more complex than that. Filings and data from Restaurant Business sister company Technomic suggest that the chain had been in decline before it sought debt protection. The pandemic, it seemed, pushed the company over the edge.
Sizzler was founded in 1958, when it was known as Dels Sizzler Family Steak House. The company grew rapidly in the 1980s and has occupied a unique space in popular culture, often as a send-up, as in the 1992 movie White Men Cant Jump.
But the chain is also on its second go-round with bankruptcy. It first sought debt protection in 1996. The companys U.S. management team, led by former CEO Kerry Kramp, bought out the domestic operations in 2011, splitting the chain from its international operations. Kramp left Sizzler last year, and the company never named a replacement.
Sizzler has been in a steady decline for years. U.S. unit count has declined by 19% over the past five years as of the end of 2019, according to Technomic, while system sales declined 12.5% over that same period. Its struggles are hardly unique: Competitors like Ponderosa and Lubys have also struggled. Souplantation and Sweet Tomatoes, concepts also built on food bars, went out of business.

Since Sizzlers peak, Australian consumers have shown greater interest in food provenance, or understanding where their food comes from.

We have embraced movements such as flexitarianism and Meat-Free Mondays. Sizzler is known for its salad bar, but the prominent grill offerings of steak, seafood and chicken dont necessarily align with these culinary values.
Pressure has been placed on Sizzler, too, as fast-casual dining chains gain popularity, with companies such as Guzman y Gomez and Grilld focusing on ethical and healthy choices.

According to an article from AFR in April 1997, Collins Foods, the United States owner of the Sizzler concept was the master franchiser of Sizzler in Australia. At the time Collins was operating 36 restaurants across Queensland, Western Australia, southern NSW and the Northern Territory. A further 39 restaurants were owned by Hong Kong-based Jardine Matheson which were the ones in Victoria, South Australia, Tasmania and northern New South Wales . The Jardine group bought these restaurants in 1991.
Over time, the novelty of Sizzlers concept started to fade as McDonalds and other quick-service chains started to cut their prices and improve their image of value, making them appear to be more desirable to dine in. This made the concept of having to line up to get in and spend a long time there seem less convenient.
The marketing of Sizzler was controlled by Collins Foods, which led to some bad decisions that further weakened the brand as sales began to slide. They offered a series of discounts and promotions that did lead to short-term sales spikes but didnt help in the long term. That, and fairly dull marketing campaigns made the Jardine group very unhappy and their complaints were ignored.
