Salad Recipes : Chicken Salad Recipe With Grapes & Almonds

This savory-sweet chicken salad is delicious in a sandwich, scooped over greens, or eaten straight from the bowl.

Back in May, The Kitchn published a fun chicken salad showdown by Amelia Rampe, pitting recipes from The New York Times, Southern Living, Ina Garten, and The Pioneer Woman against one another in the name of finding the best chicken salad on the internet. Each recipe uses a different method for cooking the chicken, different mix-ins, and different dressings.

The Pioneer Womans savory-sweet chicken salad with grapes, almonds, and dill was crowned the winner, with Ina Gartens recipe coming in a very close second. I loved both recipes, so I took what I liked from each, added a few touches of my own, and combined them into a version thats delicious on a sandwich, scooped over greens, or eaten straight from the bowl. This is the fun of cooking!

How To Serve It

Sometimes I find myself eating this chicken salad by the spoonful straight out of the bowl because its that good. But to turn it into a meal, heres a few ideas.

  • Sandwich: Stuff it between sandwich bread with layers of lettuce, spinach, or tomato slices.
  • Wrap: Turn it into a wrap with homemade cassava flour tortillas.
  • Lettuce Wrap: For a lighter, low-carb option, use large romaine or butter leaf lettuce to wrap it.
  • Extra Green Salad: Pour a spoonful on top of a bed of greens such as spinach.
  • Dip: Serve it with flax seed crackers or chips.

No Food Processor No Problem

The food processor makes quick and easy work of whipping up chicken salad. But if you dont have one, you can certainly still make this recipe.

You would simply need to mince the vegetables by hand, and rather than letting the food processor break down the chicken, shred it. The texture wont be identical, but the flavor will most definitely still be on point.

How To Make Chicken Salad

Gorgeous Chicken Salad with Grapes, Almonds and Broccoli ...

Now that you have beautifully tender chicken breasts, its time to assemble the salad. And theres really only three steps:

  • Toast: Lightly toast 1/2 cup of almonds in a pan on the stove. Let them cool completely to room temperature.
  • Slice and Dice: First, dice up your chicken breasts into small 1/2-inch pieces. Then quarter the grapes, dice the celery, parsley and tarragon, and slice the green onion.
  • Mix: Add all the ingredients to a large bowl and mix everything together until its well combined. Season with a bit of salt and pepper and youre done!

Chicken salad is best served when its cold. So let the mixture chill in the fridge before serving. This also helps all the flavors meld together for the tastiest salad.

How Long Does Chicken Salad Last

In the Refrigerator? This recipe keeps well in the refrigerator for up to 3 days. Simply store in an airtight container. Refrigerate right after serving.

Left Out at Room Temperature? For food safety, I like to stick to what the FDA advisesthe two-hour rule.which applies since this recipe has chicken and mayonnaise, you should not leave this out at room temperature for any longer than two hours.

Left Out at Picnic or Potluck? If you are serving this at a summer event and the temperature is warmer, you should be extra careful to refrigerate as soon as possible. Again, I look to the FDA for their safety rule. If the outside temperature is above 90 degrees, the two-hour rule becomes ONE hour.

About Best Ever Smoked Chicken Salad

Chicken Salad With Poppy Seed Dressing, Grapes, Almonds & Mozzarella : Salads, Soups & More

Theres a fabulous market and bakery in Dallas called Eatzis.

This is truly a Foodie Paradise.

As you walk in, you view an open kitchen where the chefs are hard at work preparing specialties such as Chicken Salad with Grapes, offered in the Chefs Case for your grab and go lunch or dinner.

Its fascinating to watch these masters at work.

They generously give you samples and this is where I came up with the idea of my Best Ever Smoked Chicken Salad.

Recently I stopped by the window when I saw this chef wrapping a huge pork loin.

He looked up and happily explained what he was doing.

In this case he was preparing a Porchetta, which is basically a pork loin with garlic and herbs that in encased in a pork belly and then roasted.

I had never made Porchetta before and the presentation was impressive.

You walk a little further in the store and you pass a wonderful bakery with samples everywhere.

They make over 45 different kinds of breads and everything is made fresh daily.

Further on is the pastry shop where imaginative chefs made wonderful pastries and cakes. And then you have the sandwich shop.

Name a sandwich. Its in there and all fresh.

This place has everything including huge array of cheeses, quiches, chef made hummus in all flavors, as well as an impressive wine selection.

But my favorite area is the Chefs Case.

We started with Chicken Salad with grapes.

Oh yes, we said and bought a pound.

Then tried the Basil Coucous.

Another winner. So we bought another pound.

Im a sucker for good chicken salad. I love it on croissants, sandwiched between Italian bread, in wraps, lettuce wraps or even right out of the bowl with a fork.

Usually I make a classic chicken salad with mayo, chopped celery, onion and some garlic. Its one of Mr. Mother Thymes favorite and he requests it often. He gets a little twinkle in his eyes when he sees it on the menu. I make it a lot on the weekends and well have it for lunch when we are at our camp.

Lately I have been on a dill kick. Which yes, that means be prepared for some dill recipes coming up such as my Baked Lemon Salmon with Creamy Dill Sauce that I recently posted on . It is so good and takes less than 30 minutes to make.

With my summer herb garden planted and steps away from my kitchen I love using them as much as I can. Im crazy for fresh herbs. Not only do they smell amazing but they add so much flavor to any recipe.

How To Make The Best Chicken Salad

Ingredients youll need to make this delicious salad:

Chicken. Youll need four cups of cooked chicken that you shred or chop, depending on the texture that you prefer. You can easily shred the chicken in your stand mixer or with an electric hand mixer if you want. Shredding with two forks also works great.

For the chicken, you can use baked chicken that you cook ahead or make Instant Pot chicken. You can even use rotisserie chicken if you wish.

Celery. Chopped celery adds the perfect amount of crunch and freshness.

Grapes. Halved seedless grapes add a touch of sweetness. I love to use red seedless grapes as they add another bit of color to the salad.

Dried Cranberries. Sweet and yet a little tart, the dried cranberries are a delicious addition as well.

Roasted Pecans. Chopped roasted pecans are a great addition. Omit them if allergic to nuts or if you are serving at an event and do not know if there are nut allergies.

Mayonnaise or Greek Yogurt. You can use all mayo or all Greek Yogurt in your salad or even a little bit of each. Greek Yogurt will help to lighten up the recipe, but it is definitely a matter of preference.

Seasonings. Salt and pepper are the perfect seasonings for it.

Celery leaves. Chopped celery leaves add so much flavor, but if you dont have them just omit.

Of course, you could also opt for a pre-cooked rotisserie chicken and simply pull the meat off the bone, if you prefer. Personally, I just think its easier to make chicken salad with canned chicken, and it turns out just as flavorful!

Between the bursts of sweetness from the grapes and the satisfying crunch from the celery and slivered almonds, you get tons of texture and flavor in this simple canned chicken salad recipe. And, if you stick with canned chicken, itll only take you about 10 minutes to make!

What Are The Main Ingredients In Chicken Salad

I love that you can get creative with a chicken salad. The main ingredients, chicken and mayonnaise are really just a base. Adding elements of sweet and crunchy is a great addition to a salad that could otherwise be kind of flat.

Summer is such a great time of year! I love the abundance in the produce department. Switching out the pineapple for grapes seemed like a great change up.

Not only is the color beautiful but the sweet flavor and texture is perfect in this salad.

Assembling this Quick Summer Chicken Salad with Grapes and Almonds couldnt be simpler. Add all of the prepared salad ingredients to a medium sized bowl.

Whisk the dressing ingredients together. Then add your dressing to the other ingredients and mix until everything is coated nicely.

I prefer a chicken salad that has plenty of dressing but if you desire it a little dryer, then just add less.

How To Poach Chicken

Chicken Salad with Walnuts and Grapes

I love to use poached chicken in this recipe as its easy, healthy, and flavorful. It also means you dont have to turn your oven on if its a hot sunny day outside. A definite bonus.

If done correctly, poaching can yield one of the most tender pieces of chicken youve ever had. To nail this every time, follow the simple steps below.

  • Place your chicken breasts into a wide pot or pan, so that theyre not overlapped or crowded.
  • Cover the chicken with cold water. Season the water with a bit of salt to give it some flavor.
  • Slowly bring the water to a gentle simmer. Then, reduce the heat back to low and cover the pan.
  • Let the chicken simmer for about 10 minutes. Remember, patience is key for this low and slow process!
  • Check to see the doneness of your chicken. If its internal temperature reads 160-165 degrees Fahrenheit, turn the heat off.
  • Let the chicken rest for a minute or two after youve removed it from the pot. This will allow the chicken juices to redistribute.
  • Chill the chicken in the fridge. This is key as you need cold chicken in this recipe.
  • Can you use baked chicken or store-bought rotisserie chicken? Of course. While I prefer poached chicken, almost any chicken works in this recipe. Just make sure you have about four cups of diced or shredded chicken.
