I loved both recipes, so I took what I liked from each, added a few touches of my own, and combined them into a version thats delicious on a sandwich, scooped over greens, or eaten straight from the bowl. This is the fun of cooking!

How To Serve It

Sometimes I find myself eating this chicken salad by the spoonful straight out of the bowl because its that good. But to turn it into a meal, heres a few ideas.

  • Sandwich: Stuff it between sandwich bread with layers of lettuce, spinach, or tomato slices.
  • Wrap: Turn it into a wrap with homemade cassava flour tortillas.
  • Lettuce Wrap: For a lighter, low-carb option, use large romaine or butter leaf lettuce to wrap it.
  • Extra Green Salad: Pour a spoonful on top of a bed of greens such as spinach.
  • Dip: Serve it with flax seed crackers or chips.

No Food Processor No Problem

The food processor makes quick and easy work of whipping up chicken salad. But if you dont have one, you can certainly still make this recipe.

You would simply need to mince the vegetables by hand, and rather than letting the food processor break down the chicken, shred it. The texture wont be identical, but the flavor will most definitely still be on point.

Now that you have beautifully tender chicken breasts, its time to assemble the salad. And theres really only three steps:

  • Toast: Lightly toast 1/2 cup of almonds in a pan on the stove. Let them cool completely to room temperature.
  • Slice and Dice: First, dice up your chicken breasts into small 1/2-inch pieces. Then quarter the grapes, dice the celery, parsley and tarragon, and slice the green onion.
  • Mix: Add all the ingredients to a large bowl and mix everything together until its well combined. Season with a bit of salt and pepper and youre done!

Chicken salad is best served when its cold. So let the mixture chill in the fridge before serving. This also helps all the flavors meld together for the tastiest salad.

How Long Does Chicken Salad Last

In the Refrigerator? This recipe keeps well in the refrigerator for up to 3 days. Simply store in an airtight container. Refrigerate right after serving.

Left Out at Room Temperature? For food safety, I like to stick to what the FDA advisesthe two-hour rule.which applies since this recipe has chicken and mayonnaise, you should not leave this out at room temperature for any longer than two hours.

Left Out at Picnic or Potluck? If you are serving this at a summer event and the temperature is warmer, you should be extra careful to refrigerate as soon as possible. Again, I look to the FDA for their safety rule. If the outside temperature is above 90 degrees, the two-hour rule becomes ONE hour.

This is truly a Foodie Paradise.

As you walk in, you view an open kitchen where the chefs are hard at work preparing specialties such as Chicken Salad with Grapes, offered in the Chefs Case for your grab and go lunch or dinner.

Its fascinating to watch these masters at work.

They generously give you samples and this is where I came up with the idea of my Best Ever Smoked Chicken Salad.

Recently I stopped by the window when I saw this chef wrapping a huge pork loin.

He looked up and happily explained what he was doing.

In this case he was preparing a Porchetta, which is basically a pork loin with garlic and herbs that in encased in a pork belly and then roasted.

I had never made Porchetta before and the presentation was impressive.

You walk a little further in the store and you pass a wonderful bakery with samples everywhere.

They make over 45 different kinds of breads and everything is made fresh daily.

Further on is the pastry shop where imaginative chefs made wonderful pastries and cakes. And then you have the sandwich shop.

Name a sandwich. Its in there and all fresh.

This place has everything including huge array of cheeses, quiches, chef made hummus in all flavors, as well as an impressive wine selection.

But my favorite area is the Chefs Case.

We started with Chicken Salad with grapes.

Oh yes, we said and bought a pound.

Then tried the Basil Coucous.

Another winner. So we bought another pound.

Mommm whats for dinner? Im starving! Sound familiar? On a busy weeknight when I dont feel much like cooking, thats just about the last thing I want to hear. But instead of having a cereal for dinner night , or ordering a pizza, I like to whip up this quick and absolutely delicious chicken salad!

Ive been a chicken salad fan for what seems like forever theres so many flavor combinations! Today I decided to go with my tried and true, go-to favorite harvest almond chicken salad!

In this chicken salad there are a lot of fresh, vibrant flavors going on. I start with some Hormel Premium Chicken Breast its the easy way to add great-tasting, satisfying protein to your meals! If I have a lot of time, Ill roast or poach some chicken, but on a busy weeknight I dont always have that kind of time.

The chicken is packed in water, so theres nothing extra added to your chicken just drain it and add it to a large bowl. Now things get interesting! Add some sliced grapes, diced apples, sliced almonds, diced shallots, minced fresh thyme, lemon zest, lemon juice, garlic powder, salt, pepper, a pinch of sugar, and a little mayo.

Give it a good stir.

Ingredients youll need to make this delicious salad:

Chicken. Youll need four cups of cooked chicken that you shred or chop, depending on the texture that you prefer. You can easily shred the chicken in your stand mixer or with an electric hand mixer if you want. Shredding with two forks also works great.

For the chicken, you can use baked chicken that you cook ahead or make Instant Pot chicken. You can even use rotisserie chicken if you wish.

Celery. Chopped celery adds the perfect amount of crunch and freshness.

Grapes. Halved seedless grapes add a touch of sweetness. I love to use red seedless grapes as they add another bit of color to the salad.

Dried Cranberries. Sweet and yet a little tart, the dried cranberries are a delicious addition as well.

Roasted Pecans. Chopped roasted pecans are a great addition. Omit them if allergic to nuts or if you are serving at an event and do not know if there are nut allergies.

Mayonnaise or Greek Yogurt. You can use all mayo or all Greek Yogurt in your salad or even a little bit of each. Greek Yogurt will help to lighten up the recipe, but it is definitely a matter of preference.

Seasonings. Salt and pepper are the perfect seasonings for it.
