Why I love this salad: Because tacos never ever get old. I love this dish because I can eat tacos all day everyday and I always look forward to a little taco salad for lunch. This salad lasts a super long time in the fridge, at least a week, thanks to the lack of meat in the jar. We love roasted chickpeas and they are a great medium for a whole lot of flavor. Simply open a 15-ounce can of chickpeas and give them a drain and rinse. Then toss them with your favorite spices and salt and roast for 15-20 minutes at 400 degrees. They are delicious right out of the oven! I used the same chickpeas in this salad as I did in the Mediterranean salad, so I roasted the chickpeas in salt, pepper, cumin, and smoked paprika . These flavors went well with both salads. You can trade the rice for quinoa if youd like and you can skip the corn altogether if you are watching your carbs, though I love the little pops of sweet. Pack It For Your Picnic
Place the jars in a cooler to keep them cold on the way to your picnic. When its almost time to eat, take the jars out of the cooler and let them sit for 10 to 15 minutes. This lets the olive oil, which is a solid when its cold, turn back into a liquid. Then, tip the jars upside down and shake gently to distribute the dressing over the vegetables and chickpeas. Serve.

Ive been on a hunt to find lunches that I can prep ahead of time on our Sunday Prep Day. Frozen peanut butter and jelly sandwiches are perfect , but were getting a bit sick of them. Plus, I make the worlds best PB& J, but my secret is extra peanut butter and extra jelly. Not exactly a low calorie lunch!
Im currently in a 3 month weight loss competition to help me lose the baby weight from our 4 month old little girl . The winner wins 10k dollars and were currently in 6th place, so light yet filling lunches are a must. It cant be that easy.
I decided to go all in and give it a try for a week. I learned a lot this week, most importantly that Salad in a Jar is amazing! There were some drawbacks and things to consider, but this will be a staple in our house for a while. Heres what my experience was

Ok, obviously, you cannot eat salad out of a jar. I mean, you could try but it wont be easy. For sure. So, how do you eat a mason jar salad?

Tips And Tricks To Salad In A Jar:
- Buy triple washed salad to avoid having to wash lettuce. If you do wash, it must be completely dry when adding it to the jars.
- Oils dress better than creamy dressings. 2 tablespoons of oil dressing felt doable, 2 tablespoons of creamy dressing felt pretty dry. I was tempted to add an extra 2 tablespoons of dressing which would bump that salad up to 700 calories.
- Try your dressing ahead of time! The dressing is a huge factor in how the salad tastes so this isnt the time to try a new dressing on a weeks worth of salad.
- Over stuff your jars. Stuff as much lettuce in as possible so that nothing in the jar shifts.
- Layer correctly! All the wet ingredients are toward the bottom, the lettuce to the top, and dry ingredients in the middle.
- Pack a separate container to make eating this easy. We used a Sistema Bakery Box for ours. The Bakery Box fits in our lunchbox, has a clip on top so secure it and has lots of room to shake the salad up in it
- If youre using the salad as your entire lunch, get wide mouth quart size Mason jars. If youre looking for a side salad, get wide mouth pint sized Mason jars.
Tips For Layering A Mason Jar Salad
Use a wide-mouthed mason jar, for easy serving of the salad. The regular mouthed jars are tricky to get the salad ingredients in and out of.
Quart sized mason jars make for a hearty single serving size portion. Pint jars dont fit quite as much once you get the lettuce in, and would serve more as a light lunch or side salad portion.
The fresher your ingredients are to start, the better the salad will keep.
Use common sense when it comes to what to put in the salad, especially if you are planning to keep the salads in the fridge for a few days. An ingredient like tuna fish, or cut avocado or apples obviously will not keep as long in the fridge as cut peppers, onions or carrots do.
You can also use the method for packing a chicken salad or tuna salad and making it heartier by serving it alongside fresh lettuce.

Once prepared, jar salads last about 3-4 days in the fridge. After that time, the leaves and other ingredients begin to wilt.
Remember to always wash fresh fruits and vegetables well before using them in fresh salads. I really like veggie washes like this one that remove pesticides, dirt and other debris, and are made with non-toxic ingredients.
Whats The Best Jar To Use
Any canning jar can be used, but wide-mouthed jars are the easiest for both packing the salad into the jars and shaking them out again. Pint-sized jars are great for individual side salads of mostly greens with just a few extra salad toppings. Use quart-sized jars for larger lunch and dinner salads that have a lot of extra veggies and salad goodies. Two-quart jars are great if youre taking the salad to a potluck or cookout.

Im the self-proclaimed worlds foremost expert in mason jar salads , and heres what Ive learned over my literal thousands of jar-packing experiences:
- Liquid ingredients on the bottom, greens on the top. Keep this in mind, and youll be able to go rogue and experiment with crafting your own mason jar salad creations!
- Really jam-pack the jars full. Not only does this give you the most veggies for your space, but it also helps keep things from shifting and moving around . I shove so many greens in that I have to hold them down with one hand while I place the lid on with the other. It should be like a lettuce jack-in-the-box when you open that jar!
- Use the fridge time to your advantage by marinating foods in the dressing. Cooked grains, tofu, chicken, beansthey all will soak up some of the flavor of the dressing.
- Keep your jar upright. This is not the time to let your lunch roll around on the floor of your car . Keep that jar upright so the dressing stays at the bottom.
- Label, label, label your jars! If you get into making salads in a jar, youll want to really keep track of whats in your salads and when they were made. My best trick for labeling mason jar salads is to write on the glass with a Sharpie. When its time to clean the jar, a quick swipe of a cotton ball soaked in rubbing alcohol takes the writing off the jar.
