What Makes This Chicken Salad Special
The “secret sauce,” so to speak, of this chicken salad, is the tablespoon of plum preserves my mom adds to the mayo-based dressing. You could use any berry jelly or jam, but as we always have a lot of plum jam on hand , that’s what mom reaches for first.
Mom balances out the sweetness from the dab of jam with a bit of lemon juice.
The result? Wonderful!
Does All Coronation Chicken Salad Have Curry
While traditionally coronation chicken has a curry powder or curry paste added to the creamy dressing, some options do not. In some instances, the herb blend will be more fresh herbs or Italian herbs with less of a curry presence. While I wouldn’t call that coronation chicken, some do name it that.
If you aren’t a big fan of curry flavor, you can use just a few of the spices traditional to curry rather than a pre-made curry powder for flavor. Garlic, onion, turmeric, and oregano are all great additions that come together for a delicious flavor.

How To Make Homemade Mayonnaise
Making homemade mayonnaise is really very simple. It is one of those recipes thats hard to mess up. I highly recommend you try it out.
When you make homemade mayonnaise, you will get a white cream sauce with a creamy consistency and delicious flavor.
One of the things that differentiate haute cuisine from traditional cuisine is that professional chefs avoid the standardization of flavors.
In other words, if you have your own mayonnaise formula, your chicken salad will not be the same as everyone elses.
Heres how to make delicious homemade mayonnaise:
- Take a large egg at room temperature and place it in the blender glass
- Beat at full speed for 3 to 5 minutes until it turns into a frothy yellow cream
- Add a cup of oil, little by little, in a fine thread while continuing to beat.
- Pro Tip: Beat for approximately 10 minutes at maximum speed. You will notice how the color and texture of the mayonnaise changes.
You can store mayonnaise in a clean, dry glass jar in the fridge for up to a week.
Can I Use Something Besides Pickle Relish
The pickle relish in this recipe provides a lot of flavor, thanks to the sweetness and tartness of the pickle brine.
I do recommend you use sweet relish, not dill pickle relish. You can also dice up some sweet pickles if you dont have any relish on hand.
And I bet some sweet and spicy pepper jelly used in place of the relish would be pretty tasty.

The Best Chicken For Chicken Salad
Some people say you can use plain, boiled chicken for chicken salad. While its an option, I personally dont recommend it.
Here are two reasons not to use boiled chicken for chicken salad:
Regarding mayonnaise, you can definitely use commercial mayonnaise, but if you have a little time available and want to do something really special, I recommend that you make your own homemade mayonnaise with a touch of garlic and Dijon mustard.
How To Cook Chicken For Chicken Salad
If you are going to cook chicken specifically for chicken salad, the easiest thing to do is to poach it.
What I like to do is put a pot of 2 quarts of water and 1 tablespoon salt on to boil. As the water is heating, I cut skinless boneless chicken breasts into large chunks. When the water boils, I add the chicken, and return the pot to a simmer. Then I turn off the heat, and cover the pot and let the meat sit for 15 minutes in the hot water while I prepare everything else. Poaching chicken this way allows the chicken to cook gently, so the chicken retains more moisture.
After the chicken is finished cooking you can save the poaching liquid as light chicken broth.
Poaching aside, you can easily use any cooked chicken for this chicken saladrotisserie chicken, grilled chicken, or roasted chicken. My parents will often use leftovers from their favorite baked chicken, and even include some of the crispy skin in the salad.

Better Than The Classic Chicken Salad Sandwich
Calling this a Better Chicken Salad Sandwich may be a bold statement on my part, but theres a reason behind this name! Ive made some classic chicken salad sandwiches for lunches and to be quite honest havent enjoyed them very much! Why is this better than a classic chicken salad sandwich? Well, in my opinion, for a few reasons!
I dont like raw celery. Its so strong! When I follow recipes for classic chicken salad sandwiches, I just cant stand that flavour. The crunch is good, but jeeze, the taste is so strong! No thank you!
I dont like raw onions. Again, theyre very strong! I see why we need them, but I just dont like raw onions! Back in India, my family would have raw onion on the side with many dishes, such as with Masaledar Chana Dal, or yellow split pea soup. I was the only one who didnt have the raw onion on the side! What can I say, its just not for me.
Those are the two main reasons why I dont like traditional chicken salad sandwiches, though I know they are probably one of the most important ingredients! Thats okay, although were not going to use raw onions or celery in this recipe, this will still be extremely flavourful and crunchy! Were just going to modify the classic my way!
How Long Will This Chicken Salad Keep
You can make this salad a day or two ahead of time if you wait to add the lettuce until right before serving. The salad will keep for several days in the fridge, but the lettuce will lose its crunch and get all wilty, so you may want to leave the lettuce out if you expect to have leftovers.

Lets go over what we need to make this Better than Classic Chicken Salad Sandwich! Remember, all measurements can be found in the detailedPRINTABLE RECIPE CARD at the bottom of this post!
Sliced bread of choice. Here Im using country round bread, which has been my recent favourite! Other options I recommend are sourdough, rye or ciabatta.
Chicken breast to make Simple Poached Chicken, or pre-cooked chicken. You can use leftover chicken from last nights dinner, use some leftover rotisserie chicken you picked up from the store, or make the poached chicken fresh and then shred it for the sandwich.
Condiments. Here were using sour cream, mustard, and mayonnaise. The mustard Im using is BBQ smoked Applewood mustard. Im LOVING this mustard lately! Otherwise, any Dijon mustard will work!
Herbs. Im using green onions. This will add a nice tanginess and a bit of crunch that is usually found from using diced red onion!
Jalapeño. For the crunch factor and to add a little bit of heat!
Carrots. Shredded. Our main source crunchiness here, replacing the chopped celery and chopped onion that are traditionally used!
Greens. Im using a spring mix here, but you can use spinach if youd like!
Spices. A pinch of celery salt. This will replace the raw celery thats not going in this recipe, but will still have that classic chicken salad flair!
Seasoning. Im using salt and pepper to taste.
