Normally I always think of fruit salads as a summer side dish but theres still a lot of fruit in season during winter so why not take advantage of that and make a winter fruit salad?

Plus Ive had Thanksgiving in mind and the fact that its usually a lot of not so healthy foods so I thought it would be a good idea to throw some fruit in there this year to help balance it out a little.

How Do I Cut A Pineapple

Arent sure how to cut a pineapple? I dont blame you. Those pokey fruits can be a beast. Pineapple cutters seem like a great idea, but pineapples come in all sorts of sizes and their cores are of varying thickness so it doesnt always work in practice.

Lay the pineapple on its side on a large cutting board. Cut about 1/2 inch off the top and bottom .

Stand the pineapple upright. Use a sharp knife to slice that unruly, pokey skin off the sides in slices. Try to leave as much of the flesh intact as possible, but remove all that nasty skin.

The core of the pineapple is usually hard and inedible. Feel around one end of the pineapple to see where that hardness begins. I usually use a dull butter knife to make a little indentation to outline the core. If you are cubing your pineapple simply cut large chunks off, leaving the hard core behind, then slice and dice into cubes. If you are creating rings, youll cut slices and remove the core out of each individually.

  • The most time consuming part of a fruit salad is chopping the fruit BUT this can be done whenever you have time. With the exception of the bananas, you can chop all of your fruit a couple days in advance and store them in airtight containers in the refrigerator. You can also peel and segment your oranges and store them in an airtight container in the refrigerator.
  • You can whisk your Honey Citrus Poppy Seed Dressing ingredients together in a separate bowl and refrigerate separately. When ready to serve, let your dressing sit at room temperature for 15 minutes or so its pourable. Drain any excess liquid from the fruit, add Dressing and evenly toss with fruit.
  • The fruit salad is best if allowed to chill at least 30 minutes after you add the dressing and served within 2 hours but it is still delicious if allowed to chill longer.

  • If storing leftovers of this fruit salad, remove the bananas and store the rest of the salad in an airtight container. I like to add freshly sliced bananas to my new servings of fruit salad.

  • I love adding granola to my fruit salad and eating it for breakfast! I actually had a chocolate granola on hand I added to it the fruit salad the next day and it was incredible.
  • Leftover fruit salad is also is delicious with vanilla yogurt and/or granola mmm!
  • Whenever I cant use fruit in time, I freeze it later for smoothies. For this fruit salad, divide any leftovers into individual sandwich bags, seal and freeze for later. Combine with vanilla yogurt, ice/or frozen banana, orange juice and sugar to taste.
  • You can also create an immediate slushy by adding your leftover fruit salad to your blender along with ice and some honey or sugar.
  • You can even make popsicles! Puree the fruit salad, add honey/sugar if desired to taste and pour into popsicle molds

Other additions to this may include things like plums, nectarines, apricots, mangoes and blackberries. If adding other fruits use the same amounts as directed in the recipe, so you have enough dressing.

Cut your fruit up however you desire. You can slice the peaches or cut them into chunks like I did here. I halved the grapes and the cherries, too. The strawberries I cut into quarters.

Place all of the fruit in a big bowl and top with the dressing.

I added a little extra lime zest to the top of my salad, and stirred it right in before I served it. I refrigerated the salad for about an hour before we ate it. Not a necessary step. Just personal preference.
