Yes/No. This is an important decision to make before you prepare a green gram sprouts salad. If you are not using homemade moong sprouts, you should always cook them, either blanch or steam prior to using. Health experts always suggest cooking sprouts prior to consumption as they are prone to various kinds of bacteria & can lead to foodborne illness.
Cooking or blanching any kind of sprouts will reduce the risk of illness as it kills the harmful bacteria and also makes them easier to digest.
I have eaten raw green gram sprouts all my life without any problems because thats how my Mom made sprouts salad. Even now this is our favourite way to eat green gram sprouts. I lately realized we do not have any problem eating the raw sprouts because we use fresh homemade green gram sprouts that are soaked & sprouted carefully to avoid the growth of bacteria. But if you are using store bought or refrigerated sprouts you should cook them thoroughly, steam or blanch them well before making this salad. If you have a sensitive stomach and cannot really digest the raw sprouts, then it is always recommended to either blanch or steam the green gram sprouts, whether homemade or not.

How To Store This Fresh Vegetable Salad
This raw vegetable salad can be stored in the fridge in a glass container with a tight lid for up to 24 hours.
There are two ways to store it:
- Store the vegetables and dressing separately and add the dressing to the salad just before serving
- Mix the vegetable with the dressing and store it this way. In this case, the vegetables will marinate a bit.
To make sure the salad doesnt become watery during storage, add salt to the salad just before serving it.

How To Make Sprouts Salad
1. I sprouted the green gram at home following this Mung bean sprouts recipe. Since these are homemade I use them raw. If using store bought, Rinse the sprouts well under running water. Bring 2 cups water to a rolling boil and add the sprouts. Give a good stir and turn off the heat. Immediately drain them to a colander and pour 2 cups clean drinking water, not tap water. Leave them in the colander until you are done with the other preparation.
2. Rinse onion, tomatoes, carrot, green chili, cucumber, lemon, ginger and coriander leaves under running water. If you want you may also add 2 to 4 young mint leaves . Peel and fine chop onion, tomatoes, cucumber and chili . Grate carrots and ginger . Cut the lemon. Fine chop coriander leaves too.
3. Make the salad only when you are ready to serve as the veggies will let out moisture. Add the sprouts to a mixing bowl. Add all the prepared veggies, ginger, chilli (or crushed black pepper, herbs and salt. Squeeze in the lemon juice and mix well. Taste test and adjust salt. Transfer to serving bowl and top with corn flakes or roasted poha chivda.
Serve sprouts salad immediately. If you want you may add little chaat masala or fresh coconut.
Storage Info: Lasts Up To 3 Days
The great thing about this vegetable salad, in our opinion, is that it tastes even better after a few hours in the refrigerator. You can serve it immediately after serving, or store it up to 3 days refrigerated. This makes it great for lunches that last throughout the week.

How To Make Onion Salad
1.Rinse onions under running water and peel them. Rinse well and remove any outer layers that are bruised or dried out. Rinse lemon, green chili and coriander leaves.
2. Slice the onions to thin rings. You can also simply slice them. Deseed and fine chop green chilies and coriander leaves.
3. Separate the layers, discard if any thin membrane comes out. Add them to a bowl of very cold water. Leave for 10 mins. Drain the water from bowl.
4. Shake off the onion rings and add them to another serving bowl.
5. To spice up the onion salad, you will use red chilli powder, black pepper, chaat masala and salt. If you dont have chaat masala, you may use a small amount of cumin powder and amchur powder . But the flavors wont be the same. You can start with smaller quantities and adjust towards the end.
6. Squeeze lemon juice and toss the onions.
7. Mix the ground spices and salt in a small plate. Sprinkle all over evenly. Also add chopped chilies and coriander leaves.
8. Toss and taste test. Add salt or spices or lemon juice if you want more.
Serve the onion salad immediately. It is best eaten under 1 hour.

This rainbow salad is really easy to make, but here are a few tips for making the best salad:
- Use a lettuce that can stand up to all the added fruits and veggies. I used spring mix and honestly, it probably wasnt the best idea but I did enjoy it.
- Use a mild tasting dressing that wont over power all the flavors of the veggies.
- Try to use ingredients that all go well together. Most fruits and veggies do mix well, but you just want to make sure everything would taste good together in one bite.
- If you have kids, let them help! It might even convince them to eat the salad if theyve helped pick all the ingredients.

Fresh Summer Vegetable Salad
- 1 large shallot, finely chopped
- 1/4 cup extra virgin olive oil
- 360g thin green beans, trimmed
- 2 ears fresh corn, kernels removed
- 1 red capsicum, seeded, diced
- 2 Lebanese cucumbers, quartered lengthways, thinly sliced crossways into wedges
- 350g cherry tomatoes, halved
- 3 spring onions, thinly sliced
- 1 fresh long red chilli, very thinly sliced into rounds
- 1/3 cup fresh coriander leaves, coarsely chopped
- 1 , peeled, pitted, diced
- Select all ingredients
- Step 1 To make vinaigrette, grate 1 tablespoon of the lime peel into a medium bowl, then squeeze 1/4 cup of juice from the limes into the bowl. Whisk in shallot ), then whisk in oil . Season to taste with salt.
- Step 2 To prepare salad, bring a large saucepan of salted water to a boil over high heat. Add beans and cook for 1-2 mins, or until bright green and crisp-tender. Drain and transfer the vegetables to a baking tray and refrigerate until cold. Cut beans into 1.5cm pieces.
- Step 3 To serve, in a large, wide shallow bowl, toss the beans, corn ), capsicum , cucumbers , tomatoes , spring onions , chilli , and half the coriander with enough vinaigrette to coat. Season salad to taste with salt. Sprinkle avocado and remaining coriander over and serve immediately.

What To Serve With A Winter Salad
I think this vegetable salad recipe is pretty perfect the way it is, but if you are serving it as a side salad then it would go well with Chicken Skewers, Air Fryer Steak or salmon. If you are having it as a light lunch, then we like some warm crusty bread on the side of it.
