Tips For Making A Better California Pizza Kitchen Bbq Chicken Pizza

  • Make your own pizza dough. Dont overpay for frozen pizza dough at the store when making your own is easy. Yes, even you can make a great dough with this CopyKat recipe!
  • Dont over-sauce your pizza. BBQ sauce is tasty, but using too much turns your pizza into a mushy mess that is impossible to eat. Avoid over-saucing by making an asterisk with the sauce on the dough and then spreading it out with the back of a serving spoon.
  • Use a pizza stone. Remember to pre-heat your oven with the pizza stone inside to get the pizzeria-quality crust you want.
  • Fresh cilantro

How To Chop Lettuce

This recipe is a chopped salad – which I much prefer to eating a regular salad. In a chopped salad all of the ingredients are cut to the same size for easier eating and better dressing distribution.

For this bbq chicken salad I like to use iceberg lettuce. Let me show you how to chop it.

1. First – remove the outter leafs of lettuce – usually about 2 or 3.

2. Second – remove the core by pressing the head of lettuce firmly against your cutting board. It should break right off.

3. Third – Discard the core.

4. Fourth – Half head of lettuce, and slice half into ½ inch slices.

5. Fifth – Rotate head, and slice across into half inch slices.

6. Sixth – Repeat of second half of lettuce head. This produces half inch piece of lettuce.

If you have ever eaten at CPK they are known for their BBQ Chicken Salad. Its filled with all sorts of goodies, tossed in an herby ranch dressing and topped off with BBQ chicken. With those flavors in mind, I created this at-home rendition that is freaking delicious and I know you all are going to love it!

And lets talk about this Whole30 Herby Ranch for a second because it deserves some time in the spotlight. After you make this once, youre going to want to put this on everything trust me. In a pinch, you could definitely opt for store-bought ranch and this dinner would be on the table even faster, but taking a few minutes to make this ranch is TOTALLY worth it. Cant wait for you all to try this!

Lets Talk About The Toppings

The toppings start with pre-cooked chicken. When cooking the chicken beforehand, make sure to slightly under-cook it to avoid the chicken pieces from drying out in the oven. Next, use a mandolin to cut the red onions as thinly as possible.

If you dont have a mandolin, use a sharp knife and do the best you can. After the pizza comes out of the oven, sprinkle some rough-cut cilantro on top right before serving.

Some people think cilantro tastes like soap, and if you are one of those people, of course, you dont have to use it. But if you have never had cilantro before, this is an excellent recipe to try it out. Cilantro is the leaves of the coriander plant, so if you like coriander seeds, you will also probably like cilantro. Cilantros unique flavor goes lovely with the sweetness of the sauce, the smokiness of the Gouda, and the acidity of the red onions.

How Do You Make Bbq Chicken Salad

The base of this salad is romaine lettuce, which is tossed in ranch dressing. I like to use a refrigerated ranch dressing or make my own, I feel like it tastes much fresher than the shelf stable ranch dressings out there. The greens are topped with corn, black beans, Monterey Jack cheese, tortilla strips tomatoes, green onions, avocado, BBQ chicken and jicama. For the BBQ chicken, I simply grill or pan sear some chicken breasts, then cut them into cubes and toss them in barbecue sauce. You can really use any cooked chicken here, leftover chicken or rotisserie chicken would also work great!

After I assemble my salad, I top it with an additional drizzle of ranch, then serve. I managed to find southwest flavored tortilla strips in my grocery store , and they were extra delicious, so if you see those, grab em!

The next time I go to CPK I can actually order a pizza now that my BBQ chicken salad cravings can be fulfilled at home. This makes a great meal prep lunch too, simply cut up extra ingredients and store in the fridge in small containers. The only exception is the avocado, which will need to be cut fresh when youre ready to eat. When its time for lunch, assemble and enjoy!

Add Tomato + Avocado + Grilled Chicken

Place diced tomatoes around the edges of each bowl, top with avocado slices and diced grilled chicken. Drizzle bbq sauce over top the whole thing and serve.

*If you did not grill your chicken with BBQ sauce, dice your cooled chicken breast, toss in a little bbq sauce, place on salad and drizzle with more sauce.

If you insist, you can use a store-bought ranch dressing for this salad. But I strongly suggest you use my homemade Buttermilk Ranch Salad Dressing instead. A salad this delicious deserves a dressing thats just as good. My Buttermilk Ranch Dressing is so easy to make and taste a zillion times better than bottled. Give it try. No kidding, youll thank me later.

I do hope that well all be able to dine at our favorite local restaurants again soon. But, until that day comes, my BBQ Chopped Chicken Salad is a pretty wonderful way to enjoy the pleasure of restaurant cuisine, right in your own home.

8 cups chopped romaine lettuce

1 cup corn kernels

½ of a small jicama, peeled and julienned

4 roma tomatoes, washed, seeded, and diced

1 large or 2 small avocados, diced

4 green onions, white and green parts, washed and chopped

1 can black beans, rinsed and drained

¼ cup chopped fresh basil

¼ cup chopped fresh cilantro

½ cup sharp cheddar cheese, shredded

1 pound cooked chicken breasts, cut into bite-sized pieces

¾ cup barbeque sauce

    How To Make Bbq Chicken Pizza

  • In a large frying pan, cook the chicken in olive oil over medium-high heat until done.
  • Refrigerate cooked chicken until chilled through.
  • Once chilled, coat the chicken with BBQ sauce and place it back in the refrigerator.
  • Place a pizza stone in the center of the oven and preheat the oven to 500 degrees.
  • Cut the chicken into thin strips or small bite-sized pieces.
  • Sprinkle semolina on a work surface.
  • Place the pizza dough on the semolina and roll out the dough.
  • Spread BBQ sauce evenly over the surface of the dough within the edge.
  • Sprinkle Gouda cheese over the sauce.
  • Sprinkle mozzarella cheese on top.
  • Distribute chicken pieces evenly over the cheese.
  • Distribute red onion slices evenly over the pizza.
  • Sprinkle mozzarella cheese over the top.
  • Transfer the pizza to the pizza stone in the oven.
  • Bake until the crust is crisp and golden and the cheese in the center is bubbly.
  • Remove the pizza from the oven and sprinkle cilantro on top.
  • Slice and serve.

    Because my BBQ Chopped Chicken Salad uses romaine lettuce as a base, it can be prepared several hours in advance. Romaine is one of my favorite lettuces because its flavorful and sturdy. Itll stay fresh tasting and looking longer than just about any other variety of lettuce.

    If you want to prepare the salad in advance, just wash, dry, and chop the romaine, then top it with the other ingredients. Run a couple of paper towels under cold water, ring out the excess moisture, then lay the damp paper towel over the salad and put it in the refrigerator until its time to serve, adding dressing at the table.

    Want To Make Cpk Bbq Salad Ahead Of Time

    To make CPK BBQ Chicken Salad ahead of time, simply chop and combine everything except the avocados, tomatoes and dressing. Refrigerate the dressing and salad separately, then when ready to serve, toss salad in ranch dressing, then, add the tomato and ripe avocado and top with a drizzle of BBQ sauce.

    If you let the salad and dressing mingle too long together in the fridge things tend to get soggy, thats why its best to wait until youre ready to devour this salad.

    Creating A California Pizza Kitchen Copycat Of My Own

    It was hot in my neck of the woods last weekend, so salad for supper seemed like a brilliant idea. And trying to create a copycat of that fabulous BBQ Chopped Chicken Salad seemed like it would be a lot of fun. My little town doesnt actually have a California Pizza Kitchen, so I also liked the idea of coming up with a recipe that would let me enjoy my favorite restaurant salad whenever I wanted.

    When I told my husband about my plan, he seemed mildly interested. Once I put the platter down on the table, his interest definitely piqued. And why not? Forgive me for blowing my own horn here, but I may have created the most beautiful salad on the face of the planet.
