Cucumber Tomato Salad is the perfect side salad for any time of year!
It is packed with juicy ripe tomatoes, crisp cucumbers and fresh herbs and all topped off with a delicious creamy dressing for a healthy addition to your menu plan! I add in fresh herbs and once in a while a sprinkle of feta cheese!

Creamy Cucumber Tomato Salad is the perfect dish for spring and summer . It is versatile, packed with deliciously healthy flavors and it lasts for several days in the fridge! I love options that I can prep in advance and enjoy all week for lunch or a quick side at dinner.
Sometimes the simplest ingredients make the best dishes, in this case ripe juicy tomatoes, crisp cucumbers, sweet white onion and fresh herbs tossed in a delicious creamy dressing. The combination of tomatoes, cucumbers and onions is classic and for good reason!
The cucumber in this salad makes it very refreshing, I like to leave the skin on the cucumber for added flavor and texture. You can use any kind of tomato in this recipe, including cherry or grape. Whatever you prefer, or have on hand will work well. Because the flavors of this dish are very simple, youll want to choose the best tomatoes you can and if its summer and you happen to have garden fresh, thats definitely a bonus!

This Ranch flavor cucumber salad is always a big hit at a gathering , if I want to have some left overs ,I better save some at home cause I never seem to come home with any extra’s.I’ve even doubled it and still none left over …LOL

| 1 pkg ranch dressing mix |
| 2 Tbsp lemon juice |
| 1 medium sweet white onion sliced and seperated |
| 4 large cucumbers peeled and sliced |
Steps:
- 1. Mix together sour cream , milk ,ranch mix , lemon juice , salt & pepper and dill weed in a medium bowl.
- 2. Mix prepared cucumbers and onion ring slices in ranch mixture.
- 3. Chill for at least 30 minutes just too get cold and to let the flavor set.

An Easy Veggie Side That Everyone Devours
When youre feeding two kids with their own likes and dislikes, it can be hard to find sides and salads they both love. My oldest kiddo will eat any vegetable with ranch dressing, but also loves crisp lettuces with maple-mustard dressing. My young son wont touch lettuce to save his life, but will devour an entire cucumber as long as theres crunchy salt on top . In the thin sliver of their Venn diagram of tastes is where cucumbers and ranch lives.
Tired of chopping carrots for my ranch-lover and slicing cucumbers for my salt-lover, I combined the two to make a quick salad and crossed my fingers that theyd at least try it. I also took a tip from Kitchns Editor-in-Chief, Faith Durand, and topped the whole bowl with a generous crank of freshly ground black pepper. It looked something like this: 1 large sliced English cucumber, 2 tablespoons ranch dressing, and a few grinds of black pepper.
Not only was the salad devoured in minutes, but both kids asked for it another night. And then another. Weve eaten it as a side dish for grilled chicken, but also as a sort of topping-slaw for burgers and pulled pork sandwiches. As for the ranch, were loyal to classic Hidden Valley Ranch dressing. It really is the best.
Maybe next summer well branch out to smashed cucumbers, or swap the ranch for a fancier vinaigrette, but for now, Im happy to have found a cucumber dish that will see us through this one.

| 1/2 cup of roasted salted sunflower seeds |
| 1 tablespoon white vinegar |
| 1/2 cup chopped green onion |
| 2 tablespoons dry hidden valley ranch dressing mix |
Steps:
- Peel and slice cucumbers, they can be as thick or thin as you like.
- Place cucumbers in bowl and pour vinger over them. Set aside.
- Mix the ranch dressing mix and sour cream together until well blended.
- Add sour cream mixture to cucumbers and mix until all cucumbers are covered. If you would like the sauce a little more thin, you can add a little more vinegar, but remember the longer it sits, the water from the cucmbers will thin the sauce out naturally.
- Mix in sunflower kernels.
- Use green onion to garnish.
