Hidden Valley Ranch Pasta Salad

STEP 1: Boil a large saucepan of water. Add pasta and cook until done, about 9-11 minutes, but refer to back of pasta box for detailed instructions. Drain and rinse pasta with cold water.

STEPS 2-6: In a bowl, stir together cooked pasta, tomatoes, drained olives, cut up and cooked bacon, shredded cheese, Kraft ranch seasoning packet and mix again very well, make sure all the flavors go from top to bottom of the bowl.

This bacon and cheese ranch pasta salad is easy, peasy lemon squeezy to make, but there are a few tips Im gonna share with you to help you make it EXTRA awesome.

  • Cook your pasta just a tad past al dente: You dont want to crunch your pasta salad, but you dont want it to be mushy eitherEWWW.. If you cook it just a tad past al dente, and let it dry a little while you cook the bacon it will be perfect.
  • Cook your bacon and pat dry: Cooking your bacon extra crispy , and then putting it on a paper towel, let it set for a little while and pat the top with another paper towel. This will make sure your bacon is nice and crunchy and doesnt sog down the salad.
  • Save the dressing for later:Ideally, you want to add the Ranch dressing less than an hour from when you are serving it. If youre going to a party, bring the dressing with you in a separate container . At the beginning of the party add your dressing and top with the crispy fried onions. Then its PARTY TIME!

    How To Make Fiesta Ranch Chicken Pasta Salad

    The first step is to cook pasta, drain and cool.

    Combine the cooked pasta with all of the other ranch chicken pasta salad ingredients in a large mixing bowl.

    In a separate bowl, whisk together the mayonnaise, buttermilk and Hidden Valley Fiesta dip mix. Pour the dressing over the salad and stir to combine. Keep refrigerated until ready to serve.

    Right before serving, add in Frito corn chips to taste. I usually just leave them in a separate bowl and let everyone add as many as theyd like to the top of their pasta salad.

  • Boil the tri color rotini noodles. Depending on your preference, cook to al dente or to soft. I prefer the noodles softer in pasta salads so I always cook for the longest cooking time given on the box.
  • While the noodles are cooking prepare the vegetables. Dice the cucumber, tomatoes, and broccoli into small bite-sized pieces. I try to make them all the same size.
  • Add noodles, vegetables, parmesan into a large mixing bowl. Stir together to combine.
  • Pour the ranch dressing over top and mix well. Serve right away or let it refrigerate for 1-2 hours before serving if you want the salad colder.

    I usually use a rotisserie chicken in chicken pasta salad because rotisserie chickens are easy and I love the taste and texture of the chicken. If I dont have a rotisserie chicken to use, I prefer to bake chicken breasts in the oven.

    This BLT Ranch Pasta Salad is a perfect combination of some of my favorite flavors bacon, lettuce, tomato sandwiches, creamy ranch dressing, and pasta.

    Im always looking for great side dishes in the summer, to go along with whatever were barbecuing, or to bring to a potluck or picnic. I especially love different pasta salad recipes. This pasta salad is awesome because you can make it ahead of time, it tastes great, and its simple.

    Pasta is super cheap , bacon often goes on sale and I like to freeze half packages of it, and summer is prime time for cheap lettuce and cherry tomatoes. The creamy sauce is made from pantry staples and dried herbs. Easy peasy.

    I love that you can also customize this pasta salad to suit what you have on hand or what you like/dont like. Have an extra avocado or some yummy cheese? Throw it in! Not a fan of onion? Leave it out!

    Dont forget the final step! Just before serving youll want to top the salad with Fritos. They add a lot of crunch and pair very well with the flavors in the salad. When I serve this salad at home, I usually just serve the Fritos separately and let everyone add their own to the top of their portion. That way, any leftovers that we have can be stored without the chips so that they dont get soggy!

    Can You Make This Chicken Pasta Salad In Advance

    This is also a perfect dish for taking to potluck dinners. You can make the salad immediately before serving, or you can make it 2-3 days in advance if thats more convenient! This pasta salad recipe makes a large batch, so I like to serve it for dinner one night and then eat the leftovers the rest of the week! It stores beautifully in the refrigerator and this pasta salad is one meal that I actually like the leftovers for! Just wait to add the Fritos until right before serving or they will get soggy.

    Ingredients for BLT Ranch Pasta Salad

    Start by cooking a pound of short pasta in a large pot of salted water, until its just past al dente .

    Tip: Your pasta water should taste salty like the ocean.

    While pasta is cooking, mix up your evaporated milk, mayo and dried herbs and spices to make the dressing. Set aside to let the flavors meld.

    When pasta is cooked, rinse it until its almost cold under cool water.

    Tip: I like to leave the pasta just a little warm because I find it absorbs the sauce better.

    Put it in a big bowl and toss it with half the ranch dressing/sauce. Refrigerate.

    Prep your add-ins: mince half a red onion, wash and halve cherry tomatoes, cook and crumble bacon, and wash and dry romaine lettuce and chop it into bite-sized pieces.

    Tip: Try cooking your bacon in the microwave for a hands-off and mess-free experience. We use a dish similar to this one.

    Tip: If you find the flavor of raw onion too strong, put your minced onion in a dish and cover it with cool water. Let it soak for a few minutes, then drain it, dry it with paper towel and add it to your recipe it will have much less bite!

    Add the red onion, bacon and cherry tomatoes to your pasta with creamy ranch sauce and gently stir together.

    Add half the remaining dressing and refrigerate until youre ready to serve. Refrigerate the leftover dressing separately .

    What Type Of Ranch Dressing Is Used In This Chicken Pasta Salad

    The key to the dressing for this salad is the Hidden Valley Fiesta Dip mix. You use this in place of regular ranch dip mix and the flavor is incredible! I will admit that I have had some difficulty finding it at certain grocery stores, but I have almost always been able to find it Walmart. Since I make this salad many times each year, I just make sure to stay stocked up! When Im at a grocery store where I can find this, I get several so that I can make sure I have it when I need it. Youll find it right next to the other dressing mixes.

    There have been a few times where I have been in the middle of making this salad and then realized that I didnt have any of my stockpile left, and I have used regular ranch dip mix in place of the Fiesta flavored one. If you do this, just add a couple tablespoons of taco seasoning or a Southwest seasoning to the dry mix before you add the wet ingredients. It wont taste exactly the same as the real thing, but itll still be yummy! You can even just use regular ranch dip mix its delicious too but doesnt have the southwestern flavor of the Fiesta Dip mix.

    How To Make Homemade Ranch Dressing

    Its very easy to make your own ranch dressing from a few simple ingredients.

    You can choose a healthy base and tailor the ingredients and texture to your taste. Another major benefit of homemade dressing is that youll avoid additives, preservatives, and other artificial ingredients.

    To make a traditional ranch dressing, start by mixing 1/2 cup each of buttermilk, plain Greek yogurt, and good-quality mayonnaise made with olive, canola, or avocado oil.
