How Do You Make Bleu Cheese Pecan Chopped Salad

There are three steps to making this salad.

Step 1. Make the Cinnamon Pecans

Start by combining whole pecans, ground cinnamon, melted butter and light brown sugar in a bowl. Toss to coat well then place on a baking pan and cook in a preheated 375 degree F oven for about 3-5 minutes.

Remove from the oven and allow to cool. These can be kept in a tightly sealed container at room temperature for a few days.

Step 2. Make the Dressing

For the dressing youll need extra virgin olive oil, white vinegar, Dijon mustard, sour cream, fresh chopped basil and crumbled Bleu cheese. Whisk all ingredients together and keep stored in the refrigerator in an air tight container for up to 1 week.

Step 3. Make the Bleu Cheese Pecan Chopped Salad

To make the salad youll need mixed greens with red cabbage and shredded carrots. I generally dont purchase what I call bag lettuce however, since I was going to be the only one eating this salad I opted for convenience and rinsed it thoroughly in my salad spinner.

Add some chopped scallions to the lettuce in a salad bowl then add the prepared pecans and dressing. Mix well, top with more crumbled Bleu Cheese and serve immediately.

I used two bags of lettuce and this recipe is enough for 5-6 servings as a side salad or 3-4 servings as a dinner salad. I also had some roasted chicken leftover so I added it to the top of my salad.

Blue Cheese Chopped Salad with Craisins and Candied Pecans is packed full of so much flavor in every bite. Chopped romaine, red cabbage, red onion, dried cranberries, blue cheese crumbles, and candied pecans are combined with a creamy blue cheese balsamic vinaigrette.

It is one of my favorite salads. It reminds me a little of Outbacks Blue Cheese Pecan Chopped Salad which is my alltime favorite restaurant salad.

The sweetness of the pecans and craisins pairs wonderfully with the tanginess of the blue cheese and vinaigrette.

The key to a good chopped salad is getting everything cut into little pieces so you get lots of flavors in every bite. For this salad, I like to really give the lettuce a fine chop.

The pecans and vinaigrette can be made well in advance. Once they are made this salad is quick and easy to prepare.

    2/3 cup extra virgin olive Oil
    1/4 cup crumbled bleu cheese
    1/4 cup honey
    2 tablespoons grated Parmesan cheese
    1 tablespoon granulated sugar
    1 teaspoon Italian herb seasoning
    1/4 teaspoon ground black pepper
    1/4 teaspoon crushed red pepper
    1/2 cup rice vinegar
    4 cups chopped iceberg lettuce
    2 cups chopped romaine lettuce
    1/3 cup chopped green onion
    1/4 cup chopped red cabbage
    1/4 cup shredded carrot
    1/4 cup crumbled bleu cheese

    Steps:

    • Bleu Cheese Vinaigrette: Combine all ingredients except vinegar and lemon juice in a small pan over medium heat. Heat until mixture begins to bubble, remove from heat. Cool mixture. Combine cooled mixture with rice vinegar and lemon juice in a blender. Blend on high speed for 1 minute, cover and chill. Cinnamon Pecans: Combine sugar, water, butter, cinnamon and salt in a small pan over medium heat. When mixture first reaches a boil, add pecans. Stir constantly until liquid evaporates and sugar begins to crystallize on the nuts. Don’t allow the nuts to smoke or burn. Pour sugar crystallized pecans out onto a plate to cool. Assemble The Salad: Combine lettuce, green onion, red cabbage, shredded carrot, pecans and pasta in a large bowl. Toss with 3/4 cup of the dressing. Top with 2 tablespoons crumbled bleu cheese on each serving.
