How to make easy potato salad – gluten free recipe

Its just about the official start to summer although weve already officially started summer at our house. It may look a bit different this year, but honestly for us its not all that different.

We are having a pool installed this year, weve been debating a hard-sided above ground pool for a while now and decided this would be the year to do it. So I expect we will have many evenings eating outdoors and enjoying the pool, which means this Classic Easy Potato Salad will be in our fridge at all times as a side dish for dinner!

We love serving it up with sandwiches for lunch too, something about the summer and sandwiches just goes together.

Recipe Step By Step Directions:

Step 1: On a cutting board, chop your potatoes with a sharp knife. Place them in a large pot with water. Boil them on medium-high heat for about 15 minutes until they are soft. I leave the peels on, but this is optional.

Step 2: If your bacon is not pre-cooked, fry the bacon in a skillet over medium heat. Remove the cooked bacon to a paper towel-lined plate to cool. Feel free to use 2 tablespoons of bacon grease in the dressing!

Step 3: Allow the potatoes to cool for about 20 minutes. When the potatoes have cooled, cut them into smaller pieces.

Step 4: Chop the bacon into bite-sized pieces. Slice the green onions thinly and set them aside.

Step 5: Place the potatoes, bacon, and the rest of the ingredients in a large mixing bowl.

Step 6: Mix up the potato salad. Serve in a large plastic bowl if you take it to an outside event. This potato salad is even better the next day!

Store Bought Vs Homemade Potato Salad

My mom also made potato salad but I dont remember that as well. In my family store-bought potato salad was introduced to us by the fast food chain, Kentucky Fried Chicken. It came along side a bucket of chicken with coleslaw and was an easy dinner for a big family. That was many, many years ago.

Fast forward and potato salad is still popular at barbecues and Pot Lucks, usually store bought. It is easy enough to make at home but it does take more than a few minutes. If you want to eat real food cooking is a way of life. Having a kitchen set up for cooking, with the right tools makes all the difference.

Should You Serve It Warm Or Cold

Some people like their German potato salad warm, hence the bacon, but many also like it served cold or chilled from the fridge. I think it depends on the season. If you’re making this during Oktoberfest in the winter, then serving it warm and fresh without cooling the potatoes down, seems like a good idea. However, if you’re making the potato salad for a typical summer BBQ or cookout, then I’d go for the classic cold serving of the summer side dish. I love having it all marinate overnight, letting the flavors develop, so cold is my choice. So if you’re making it ahead of time for a big potluck, go cold! If you’re making it for dinner and don’t have time to wait, go warm!

Youll start by steaming the Yukon gold baby potatoes! I prefer to steam potatoes for potato salad rather than boiling them as it helps to keep the potatoes firm and not water logged. Soggy, mushy potatoes, no thanks! Yukon golds are my favourite because theyre flavourful, beautiful, and stay together when cut for the salad.

If you dont have a steamer/pot combo, Im sure putting a couple inches of water in the pot so that the potatoes arent submerged, and steaming them that way would work too! Let me know if you try!

These potato beauties are steamed for about 20-30 minutes until tender, depending on the size. Test by poking with a sharp knife – if theyre tender theyre done! Once they’re done, drain pot, pour potatoes on a plate to cool and set aside.

So the first step in making this potato salad is to NOT peel the potatoes, thats right, no peeling!

I prefer to use baby potatoes, or fingerling potatoes so that I can keep the skins on.

If you have a steamer basket insert for your pans, I think thats the best way to cook the potatoes.

If not you can just boil them but do make sure you dont overcook them.

Once the potatoes are fully cooked you want to cool them down before you add the mayonnaise and seasonings, you can put them in the fridge to cool them more quickly if you need to.

If the potatoes are still warm when you add the mayo it may melt.

Making my gluten free potato salad recipe is simple – you just need a few ingredients:

    • 700g baby potatoes
    • 2 tsp apple cider vinegar
    • Salt and pepper

For my gluten free potato salad, I always use baby potatoes or Jersey Royals.

I like to cook them whole and I never salt the water as this can make them seep moisture when you cut them up.

Instead, I add my salt and pepper to the dressing so it all gets flavoured just before serving.

I do however like to make my dressing while the potatoes cook – this gives the flavours a chance to develop a little before mixing.

    Honey Mustard Potato Salad

    September 1, 2019 by

This honey mustard potato salad is a quick and easy side dish for your summertime barbecues. I created a super versatile honey mustard dressing that can be used to make a chicken salad for sandwiches, a simple dressing, and its PERFECT in this potato salad.

Start with a base of baby red potatoes. Of course, any type of potato will do. Youll just need to make sure they are cut into approximately ¾ inch pieces. Then add in crispy bacon, green onion and this tangy, smokey, slightly sweet honey mustard a great combination.

How To Make Vegan German Potato Salad

Healing Potato Salad Recipe || vegan, gluten-free, Medical Medium lifestyle

Authentic German potato salad isn’t too hard to tweak and make vegan, gluten-free, allergy-free, and paleo! The number one ingredient we need to swap out is the bacon. What’s a vegetarian to do? Coconut bacon! If you’ve been a longtime reader, you know how much of a fan I am of eggplant bacon, but that won’t work well in this potato dish. The dehydrated eggplant bacon will become soggy due to the vinegar, potatoes, and overall consistency of potato salad. That’s why we use crunchy coconut bacon instead!

  • Red Potato Salad Tips

    • You can double or triple the recipe as needed. This recipe is perfect for a family of 4 but if you need to feed a crowd, double the recipe as you see fit.
    • Cut your potato pieces evenly. During the boiling process, youll want the same size pieces to have your potatoes cook evenly.
    • You can peel the potatoes if you prefer or leave the skin on. I leave the skin on. It adds really great texture to the potato salad.
    • Red potatoes are the best for this recipe but you can use what you have on hand. Waxy potatoes are great for texture and starchy potatoes like Russet will add a fluffy texture and soak up the delicious dressing.
    • If you dont have apple cider vinegar you can swap out for what you have stored in your pantry.
    • Chill or serve warm. I looooooove Red Potato Salad both warm and chilled. Chilled is perfect for those hot summer days and you need a refreshing salad. A warm red potato salad is perfect during the holiday season for gatherings with family and friends.

    My Potato Salad Dressing

I’ve experimented a lot with different variations of a potato salad dressing, but I always come back to good ol’ mayo.

Mayonnaise is the perfect dressing and when combined with a little apple cider vinegar, it just tastes incredible!

I keep my seasoning simple with lots of salt and pepper – and add in a good helping of chopped spring onions to give it a kick.

If you prefer you can add chives instead, but I do love a strong onion flavour and spring onions lift this potato salad perfectly.

    Cooking Potatoes For Potato Salad

When cooking potatoes for potato salad the number one mistake to avoid is waterlogged, overcooked chunks of potatoes. You want to cook the potatoes in a way that leaves them tender, but still holds their shape.

The trick to this is first using the right type of waxy potatoes. Red potatoes are ideal. Yukon golds will also work, but they have a softer, creamy texture. Just be sure to drain them as soon as they become tender.

Next, boil the potatoes whole, without peeling first. This is a trick my mom swears by, and her old fashioned potato salad is always perfection! Start with cold water in a large pot, enough water to cover the potatoes. Bring to a boil, and cook until fork tender, about 20-25 minutes.

Drain and then leave the potatoes to sit for several hours. In fact, she leaves them sit overnight at room temperature. Dont place them in the refrigerator or they will steam and condense, making a watery potato salad.

Once they have cooled, use your fingernails to peel off the skins or a vegetable peeler, then chop into bite-sized pieces.
