Its just about the official start to summer although weve already officially started summer at our house. It may look a bit different this year, but honestly for us its not all that different.

We are having a pool installed this year, weve been debating a hard-sided above ground pool for a while now and decided this would be the year to do it. So I expect we will have many evenings eating outdoors and enjoying the pool, which means this Classic Easy Potato Salad will be in our fridge at all times as a side dish for dinner!

We love serving it up with sandwiches for lunch too, something about the summer and sandwiches just goes together.

Recipe Step By Step Directions:

Step 1: On a cutting board, chop your potatoes with a sharp knife. Place them in a large pot with water. Boil them on medium-high heat for about 15 minutes until they are soft. I leave the peels on, but this is optional.

Step 2: If your bacon is not pre-cooked, fry the bacon in a skillet over medium heat. Remove the cooked bacon to a paper towel-lined plate to cool. Feel free to use 2 tablespoons of bacon grease in the dressing!

Step 3: Allow the potatoes to cool for about 20 minutes. When the potatoes have cooled, cut them into smaller pieces.

Step 4: Chop the bacon into bite-sized pieces. Slice the green onions thinly and set them aside.

Step 5: Place the potatoes, bacon, and the rest of the ingredients in a large mixing bowl.

Step 6: Mix up the potato salad. Serve in a large plastic bowl if you take it to an outside event. This potato salad is even better the next day!

  • ASSEMBLY – In a large bowl combine potatoes, eggs, radishes, celery, onion and remaining chives.
  • Pour dressing on top and gently fold in.
  • Taste and adjust seasoning if needed. Chill for several hours to meld flavours.
  • Serve in a glass bowl. Sprinkle with paprika and garnish with chopped chives and some blossoms if available.

    How To Make Potato Salad With Bacon And Egg

    So the first step in making this potato salad is to NOT peel the potatoes, thats right, no peeling!

    I prefer to use baby potatoes, or fingerling potatoes so that I can keep the skins on.

    If you have a steamer basket insert for your pans, I think thats the best way to cook the potatoes.

    If not you can just boil them but do make sure you dont overcook them.

    Once the potatoes are fully cooked you want to cool them down before you add the mayonnaise and seasonings, you can put them in the fridge to cool them more quickly if you need to.

    If the potatoes are still warm when you add the mayo it may melt.

    Making my gluten free potato salad recipe is simple – you just need a few ingredients:

    I’ve experimented a lot with different variations of a potato salad dressing, but I always come back to good ol’ mayo.
