Ive been all about the big, bright salads lately! I love this chopped chickpea Greek salad because its loaded with all my favorite salad veggies in a simple homemade dressing. I started making all my own salad dressings a few years ago, and let me tell ya, what a difference it makes!

Ive always loved chopped salads my absolute favorite is the chopped salad from Portillos. This one has more of a Greek vibe to it with kalamata olives and a red wine vinaigrette. I added chickpeas instead of chicken, so this salad still has lots of plant-protein but stays vegetarian.

Whether salad dressing is gluten free is a confusing topic, because many dressings do contain gluten in additives, while others do not.

When you are at the store, gazing at a bottle of dressing and wondering if it contains gluten, first check the food allergen statement on products to see if it says contains wheat. If there is a statement that says contains wheat, the dressing is not gluten free.

When you look at the ingredient list, check for wheat, rye or barley and ingredients that might contain gluten that are often found in salad dressing. These include:

  • Artificial color
  • Food starch

Vegan Greek Salad Dressing Variations

This recipe leaves plenty of room for variation. Always customize to your taste preferences!

First, this dressing is very tangy and not everyone wants that. You can certainly add some sweetness with sugar or some type of sugar substitute/ sweetener.

Then, to keep the recipe ultra-simple, I use garlic and onion powder. You could certainly use fresh garlic and/ or onion instead. Just mince it finely before adding in place of the powdered options. Aim for two garlic cloves and/ or 2 tbsp minced onion.

Likewise, you could use fresh herbs in place of dry oregano and/ or basil. One or two tablespoons of chopped fresh herbs is a good amount to replace the dry options.

You can also use white wine vinegar in place of red wine vinegar. Another option is to replace 1-2 tbsp of the vinegar with fresh lemon juice for a burst of delicious citrus flavor.

Do I Need To Look For A Gluten

Depending on your level of sensitivity to gluten, you may want to look for a gluten-free label before buying any salad dressing youre looking at when shopping at the store.

A gluten-free label on any packaged food product will show you that the brand has tested their product and, as required by the FDA, can only contain less than 20ppm of gluten in that product. That is trace amounts or less of gluten.

It can be helpful to have that extra note of assurance that the product is gluten-free, but if youre good at reading ingredients lists, know the names of gluten, and you know your level of sensitivity isnt super high, then you may also be able to get away with eating a food that doesnt have that label.

You will need to determine what youre comfortable with when it comes to gluten-free labeling based on what you know about your body and your reactions to gluten.

What If You Dont Like Feta

I dont like feta cheese at all, so I dont add it to my Greek salad. Instead I buy small, pearl-sized fresh mozzarella known as bocconcino. They look beautiful in the salad and are already chopped into small pieces to fit the look and textures of the Greek salad.

In fact, if you dont like a specific ingredient, or dont have it on hand, omit it altogether. I didnt have any kalamata olives on hand, so I didnt include them in my salad.

The beauty of this salad is you can make it your own. Use fresh ingredients from your garden, or whatever is in-season at the grocery story or Farmers market. This salad works well at summer potluck dinners and works as a side to any special meal year-round.

Is Greek Dressing Vegan

Most Greek dressing recipes, store-bought or restaurant options are not vegan. Feta cheese and other dairy ingredients quickly make this style of salad dressing non-vegan.

Luckily, its simple to make dairy-free Greek dressing at home in less than 5 minutes. So, no worries, you can easily enjoy this classic dressing as a vegan.

How To Store Leftovers

Refrigerate leftover dressing in an airtight container or jar. I like to make salad dressing recipes in a jar for easy storage and to save dishes. The dressing should stay fresh for at least a week, possibly up to 2 weeks, but will begin to separate when its left sitting. Simply whisk or shake the dressing to mix it together again. Also, the olive oil may become solid when chilled in the fridge.

How Do I Make A Greek Chopped Salad

  • In a large serving bowl, add all the salad ingredients and toss well to combine.
  • To make the dressing, add all the red wine vinaigrette ingredients to a mason jar and seal the lid. Shake vigorously until ingredients are well mixed and dressing is combined.
  • Pour the salad dressing over the salad just before serving. Garnish with extra kalamata olives and feta cheese. Enjoy!

    • When boiling the gluten free pasta, make sure to only cook it until al dente! The pasta will still cook for a few minutes after its drained, and it needs to not be totally cooked all the way to hold up in the salad.
    • If you make the pasta ahead of time, drizzle with olive oil until fully coated to keep the pasta from sticking together.
    • I like to use penne pasta for pasta salad, because out of all of the gluten free pasta Ive tried, this shape usually holds up the best.
    • Add some salt to the pasta water to season the pasta.
    • You can add other veggies if you have them, like sun dried tomatoes, asparagus, or spinach.
    • You can add pesto instead of the salad dressing, or just use olive oil, salt, and pepper, along with the other toppings.

    Easy Mason Jar Greek Salad Recipe

    When it comes to Greek salad, there are a bunch of different versions. According to Wikipedia, authentic Greek salad is going to be made with pieces of tomatoes, sliced cucumbers, onion, feta cheese, and olives, typically seasoned with salt and oregano, and dressed with olive oil.

    From there people add their own spin on things. I use all the traditional ingredients but add a couple of extra things:

    • artichoke hearts
    • crunchy romaine lettuce
    • and a protein of some sort

    I also top it with a super tangy and refreshing vinaigrette made with olive oil, vinegar, fresh lemon juice, and spices.

    Since I am dairy-free, I skip the feta cheese . Feta adds such a rich, salty, briny flavor, but with the dressing, you wont miss it if you need to leave it off. Try adding some extra olives in place of the feta.

    Gutsy Greek Salad With Creamy Hummus Dressing

    Oh Im trying to eat lighter right now. I know I keep saying that. I have to. That is the story of life, isnt it? Everything in moderation. But lately moderation seems to just be a lot of Chick fil A with some baked goods mixed in. I love fresh salads and I specifically love Greek Salad.     Authentic Greek Salad

    A traditional Greek salad dressing is really a Greek vinaigrette as it contains olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic cloves, dried oregano and salt and pepper.

    You can use virgin or extra virgin olive oil, but I think more important is the red wine vinegar, Dijon mustard and spices you use. Opt for quality ingredients like this organic red wine vinegar and Dijon mustard. And you know Im a big fan of Simply Organic spices .

    Once youve got all your ingredients in a bowl, its as easy as whisking it all together. Then drizzle it on my Greek Salad, Greek Chicken Salad, or use it as a marinade on Greek Chicken Kabobs.

    Are Kraft Salad Dressings Gluten

    Some Kraft salad dressing flavors contain no gluten, however Kraft does not test for gluten in their dressings, and you wont find a gluten-free label on their packaging.

    Some flavors have no gluten-containing ingredients, but they may be exposed to cross contamination during processing.
