Chili Cheese Frito Corn Salad with Lime

Canned Corn – Be sure and drain this really well! I like to use the canned golden n’ white corn but that’s just personal preference. All yellow corn is just fine as well.

Shredded Cheddar Cheese – Cheddar is best to use in this salad or Colby Jack cheese. You can shred your own or make it easy and buy a bag of pre-shredded cheese.

Roma Tomatoes – I prefer to seed tomatoes before chopping so there is n extra liquid in the salad.

Orange & Yellow Bell Pepper – I picked these two for the colors but feel free to substitute with a red bell pepper if wanted.

Green Onions

Chopped Cilantro

Fritos Corn Chips – I normally use regular Fritos chips because I want my kids to eat it. You can use Chili Cheese Fritos Chips but it will have more spice to the salad. No need to run the chips in a food processor to get them chopped. Just take your hands and squish the bag to break up the Fritos chips. You don’t want fine crumbs, you want the larger chunks in the salad for the crunch.

Spiced Creamy Dressing – Mayonnaise, lime juice, chili powder, and cumin.

Im not a huge fan of canned veggies, so I usually use frozen, but after making this with both frozen and canned corn, I actually prefer it with canned.

You can also use green pepper and red onion for a slightly different but equally delicious flavor. Or try adding some diced jalapeno if you want to spice things up a bit.

You can also use regular Fritos in a pinch, but the chili cheese version adds so much great flavor. I highly recommend it!

The most important tip for making this salad: dont add your Fritos until just before serving or theyll get soggy. And soggy Fritos are just sad.

Everything else can be mixed up ahead of time and kept in the refrigerator. If your salad seems a little dry after adding the corn chips, just stir in a bit of extra sour cream or mayo.

Catalina Frito Salad: Behind The Recipe

When our girls were little, we were members of a vibrant young couples church group and at least once a month we were gathering together for a picnic, pool party, or game night.

Everyone would bring a pot-luck dish to share there were a lot of good cooks in our group! As a result I acquired a lot of tried and true crowd-pleasing recipes, Frito Salad being one of the best!

Armed with a big salad bowl, a large bag of FRITOS®, and a bottle of Kraft Catalina salad dressing, she would laugh and entertain everyone around with her jokes and antics as she tossed the fiesta salad table-side just before the meal was served.

And Ive got the perfect recipe for a get together like that. This Fritos chili cheese corn salad is one of my favorite lazy summer sides. This is one of those combinations that maybe seems odd the first time you try it, but then its instantly addictive. Canned corn, diced red bell peppers, green onions, and cheese go together with a simple dressing of sour cream and mayo. One of the perks of using chili cheese fritos for corn salad is that all the chili cheese flavoring mixes in and gives what might seem like a plain dressing incredible flavor. I also like to add some adobo sauce to my Fritos corn salad, just to kick it up a notch, but you could substitute your favorite hot sauce if youd like.

This salad is easy to make ahead of time, just save adding the chips until youre ready to serve it or theyll turn into a soggy mess!

My Tips For This Corn Salad Recipe With Fritos Chips

Fritos Corn Salad Recipe

– Once you add the chips the salad needs to be served right away. The best part of this salad is the crucnhy chips and creamy dressing, so only add the chips right before serving.

– I prefer this salad cold so I will make the salad and refrigerate it for 2 hours. Add the chips right before serving and stir it all together. The salad is just as good served right away. So either way will be fine.

– Try serving this Fritos corn salad on top of hot dogs! Sounds weird but trust me, it’s one of our favorite ways to eat this salad at a BBQ.

– Try to chop the bell peppers and everything else at the same size. I aim to cut everything the same size as the corn kernels.

– Don’t crush the Fritos chips into fine crumbs. You want larger chunks of chips for the crisp and texture. I just hold the bag with my hands and crush up the chips and then dump into the bowl.

Crunchy Frito Corn Salad

Are you ready for the next ridiculously addictive salad thats going to sweep you off your feet? We know we are! We made this two weeks ago and have already made it again twice. Its that good. Overflowing with corn, cheese, fritos and lots of extra flavor, we seriously cant get enough of it, and everyone weve served it to has raved about it.

You can use fresh or canned corn fresh is AMAZING, but we used what we had on hand the other day and then youll add in cheddar cheese for tang, green pepper for pops of freshness, red onion for bite and mayonnaise for creaminess. Lime juice and taco seasoning pump up the flavor even more, and then we fold in fritos right before serving so that we get maximum crunchiness to balance out the creamy, cheese corn. YUM.

This dish is sweet and creamy and tangy and zesty, all at the same time, and wed like to have as much of it in our bellies as possible at any given time. Throw it together 15 minutes or a whole day before your party, just make sure to hold off on those corn chips you want to have the crispiest, crunchiest chips possible when you dig into this. Thankfully, that usually just means we have a couple extra bags of fritos on handand we definitely dont have a problem with that! Make this for your next poolside bash and watch everyone come running for the recipe youll see!

Tips For Frito Corn Salad

Below I will share my tips for making the perfect Frito Corn Salad. You will have all the crunch, without any of the soggy!

  • Add Fritos Right Before Serving Go ahead and crush up the Fritos ahead of time if youd like. But, dont add them in until right before you are going to serve the salad.
  • Add Dressing Right Before Serving the Salad Keep the salad fresh by not tossing in the mayo until right before serving! You want all your veggies to keep a nice, crunchy bite, so hold off on adding the dressing until the time is right.
  • Dice Bell Peppers and Onion Dice your bell peppers and red onion into uniform, small pieces. This will make for a prettier salad! It will also allow the veggies to absorb the dressing better.
  • Corn for the Salad You can use fresh corn that has been boiled or grilled. You can also use canned corn that has been rinsed from any excess salt or frozen corn that has been soaked in boiling water for at least 10 minutes.
  • Add Protein to the Salad Toss the salad with some ground beef, chicken or turkey that has been spruced up with taco seasoning right before serving. This will make for a filling meal in and of itself. If you want a more filling vegetarian version, add chunks of avocado and black beans instead.

How Long Is It Good For

Fritos Corn Salad is tastiest right after it is made, when the Fritos are still crunchy, but it is perfectly fine to eat for up to 3 4 days after making it. Just keep in mind that the Fritos will get soggier the longer it sits.

Make sure to store it in the fridge in an airtight container to keep it as fresh as possible I love these glass airtight containers for storing pretty much all our leftovers.

Best Chips To Use For Frito Salad

Snack Food Review – Fritos: Chili Cheese Flavored Corn Chips

Chili Cheese Fritos are by far the best type of Fritos to use in this salad. Unlike plain Fritos, Chili Cheese Fritos are seasoned with a mild chili and cheese flavoring that is a little savory, a little sweet. When you toss the mayo into your salad, the seasoning will blend with it and make a nice dressing that tastes similar to a chipotle ranch.

A Delicious Festive Corn Salad Recipe Made With Chili Cheese Fritos For A Fantastic Crunch And Super Tasty Flavor

Remember the time I took my shirt off and ran around my back yard in my bra taking pictures? No? Oh, right because I havent told you about that yet because it just happened.

It literally just happened.

So, I take my food pics on the back porch because thats where I have the best natural light in the afternoons .

This time of year, taking food pics can be a challenge because the sun goes down so early and my window of opportunity is pretty narrow.

I whipped up this salad and set about staging things to take some pictures. When I stepped outside I realized the sun was setting QUICK so I knew I had to hurry with my little photo session. As I was taking pics I noticed the dish had this bizarre orange tint?

No matter what angle I tried, there was a neon glow. What the what??

Then I realized it was my shirt! I was wearing a neon orangey-pink sweatshirt and the shirt was casting a glow on the food. With not a minute of sunlight to spare, I looked over at the neighbors house to see if their blinds were open and then whipped off my shirt to finish taking pictures.

Husband walked outside and said, WHY is your shirt off?! I quickly explained and he said, The neighbors can SEE you. To which I replied that I didnt have anything that they hadnt ever seen before and since theyre still in their twenties its prolly time they got a good look at what things are going to look like some day.

This salad is flavorful with the perfect amount of spice and with that Frito crunch that makes it even more delicious. Its also the perfect side along with some Steak or maybe a Ranch Burger.

It would also make a yummy appetizer! Just pour into mini cups, top with Fritos and add spoon! Or, leave out the Fritos and serve it as a dip . We love it all way!

However you decide to serve this, if you are a Frito fan, you will LOVE it!

  • canned or fresh whole kernel corn
  • grated cheddar cheese

The first time I encountered this salad, it seemed so weird- a salad of corn and corn chips I just couldnt figure it out. I had determined to politely pass, but everyone was raving. So, I gave it a second once over, scooped up a healthy spoon and dove right in.

Oh my! So weird and wonderful, this little corn party has it going on. The sweet corn against the sharp bite of the peppers and onion. The salty chips. And the cool and creamy dressing and shredded cheese. Is it a dip? Is it a salad? Its wildly both in one glorious bite!

This corn salad is classic get-together food- game days, tailgates, potlucks, cookouts, you name it. If there is a group of people doing something together, this salad has a tendency to be right in the middle! Other than its addictive taste and bevy of color , the ease in which this salad comes together is why its tops!

I start with raw fresh corn or canned corn for that crisp corn bite. Then a little chopping here and there to get those peppers and onion into shape. Lastly, I like to grate my own cheese, but the bagged version works just fine too.
