Chili Cheese Frito Corn Salad with Lime

Canned Corn – Be sure and drain this really well! I like to use the canned golden n’ white corn but that’s just personal preference. All yellow corn is just fine as well.

Shredded Cheddar Cheese – Cheddar is best to use in this salad or Colby Jack cheese. You can shred your own or make it easy and buy a bag of pre-shredded cheese.

Roma Tomatoes – I prefer to seed tomatoes before chopping so there is n extra liquid in the salad.

Orange & Yellow Bell Pepper – I picked these two for the colors but feel free to substitute with a red bell pepper if wanted.

Green Onions

Chopped Cilantro

Fritos Corn Chips – I normally use regular Fritos chips because I want my kids to eat it. You can use Chili Cheese Fritos Chips but it will have more spice to the salad. No need to run the chips in a food processor to get them chopped. Just take your hands and squish the bag to break up the Fritos chips. You don’t want fine crumbs, you want the larger chunks in the salad for the crunch.

Spiced Creamy Dressing – Mayonnaise, lime juice, chili powder, and cumin.

Im not a huge fan of canned veggies, so I usually use frozen, but after making this with both frozen and canned corn, I actually prefer it with canned.

You can also use green pepper and red onion for a slightly different but equally delicious flavor. Or try adding some diced jalapeno if you want to spice things up a bit.

You can also use regular Fritos in a pinch, but the chili cheese version adds so much great flavor. I highly recommend it!

The most important tip for making this salad: dont add your Fritos until just before serving or theyll get soggy. And soggy Fritos are just sad.

Everything else can be mixed up ahead of time and kept in the refrigerator. If your salad seems a little dry after adding the corn chips, just stir in a bit of extra sour cream or mayo.

And Ive got the perfect recipe for a get together like that. This Fritos chili cheese corn salad is one of my favorite lazy summer sides.This is one of those combinations that maybe seems odd the first time you try it, but then its instantly addictive. If you love corn chips in taco salads then youll love this recipe. One of my coworkers brought this to work for food day and Ive been hooked ever since! Its a great mix of crunchy and creamy.

Canned corn, diced red bell peppers, green onions, and cheese go together with a simple dressing of sour cream and mayo. – Once you add the chips the salad needs to be served right away. The best part of this salad is the crucnhy chips and creamy dressing, so only add the chips right before serving.

– I prefer this salad cold so I will make the salad and refrigerate it for 2 hours. Add the chips right before serving and stir it all together. The salad is just as good served right away. So either way will be fine.

– Try serving this Fritos corn salad on top of hot dogs! Sounds weird but trust me, it’s one of our favorite ways to eat this salad at a BBQ.

– Try to chop the bell peppers and everything else at the same size. I aim to cut everything the same size as the corn kernels.

– Don’t crush the Fritos chips into fine crumbs. You want larger chunks of chips for the crisp and texture. I just hold the bag with my hands and crush up the chips and then dump into the bowl.

Are you ready for the next ridiculously addictive salad thats going to sweep you off your feet? We know we are! We made this two weeks ago and have already made it again twice. Its that good. Overflowing with corn, cheese, fritos and lots of extra flavor, we seriously cant get enough of it, and everyone weve served it to has raved about it.

You can use fresh or canned corn fresh is AMAZING, but we used what we had on hand the other day and then youll add in cheddar cheese for tang, green pepper for pops of freshness, red onion for bite and mayonnaise for creaminess. Lime juice and taco seasoning pump up the flavor even more, and then we fold in fritos right before serving so that we get maximum crunchiness to balance out the creamy, cheese corn. YUM.

Red Bell Pepper & Green Bell Pepper: you can get 2 of whatever types of bell peppers youd like!

cheddar cheese- regular cheddar cheese or Cheddar Jack works well.

  • Add Dressing Right Before Serving the Salad Keep the salad fresh by not tossing in the mayo until right before serving! You want all your veggies to keep a nice, crunchy bite, so hold off on adding the dressing until the time is right.
  • Dice Bell Peppers and Onion Dice your bell peppers and red onion into uniform, small pieces. This will make for a prettier salad! It will also allow the veggies to absorb the dressing better.
  • Corn for the Salad You can use fresh corn that has been boiled or grilled. You can also use canned corn that has been rinsed from any excess salt or frozen corn that has been soaked in boiling water for at least 10 minutes.
  • Add Protein to the Salad Toss the salad with some ground beef, chicken or turkey that has been spruced up with taco seasoning right before serving. This will make for a filling meal in and of itself. If you want a more filling vegetarian version, add chunks of avocado and black beans instead.

How Long Is It Good For

Fritos Corn Salad is tastiest right after it is made, when the Fritos are still crunchy, but it is perfectly fine to eat for up to 3 4 days after making it. Just keep in mind that the Fritos will get soggier the longer it sits.

Make sure to store it in the fridge in an airtight container to keep it as fresh as possible I love these glass airtight containers for storing pretty much all our leftovers.
