Outback Steakhouse Bleu Cheese Chopped Salad

This cheesy little number is one of the most popular side salad choices at Americas favorite steakhouse chain. Cinnamon Pecans and fried angel hair pasta are tossed with salad greens and a delicious sweet and sour bleu cheese vinaigrette. The crunchy angel hair pasta pieces are made by first boiling 24 sticks of uncooked pasta for half of the usual cooking time. When the pasta is cool, fry it in a bit of oil until light brown and crispy. The cinnamon pecans are easily candied in a small saucepan with a few basic ingredients. The recipe here makes two large salad servings, which will require only half of the dressing. This way, if you want to serve more salads you can easily double up on the other ingredients, and youll have just the right amount of dressing for a couple more servings.

    Blue Cheese Chopped Salad with Craisins and Candied Pecans is packed full of so much flavor in every bite. Chopped romaine, red cabbage, red onion, dried cranberries, blue cheese crumbles, and candied pecans are combined with a creamy blue cheese balsamic vinaigrette.

    It is one of my favorite salads. It reminds me a little of Outbacks Blue Cheese Pecan Chopped Salad which is my alltime favorite restaurant salad.

    The sweetness of the pecans and craisins pairs wonderfully with the tanginess of the blue cheese and vinaigrette.

    The key to a good chopped salad is getting everything cut into little pieces so you get lots of flavors in every bite. For this salad, I like to really give the lettuce a fine chop.

    The pecans and vinaigrette can be made well in advance. Once they are made this salad is quick and easy to prepare.

    Outback Bleu Cheese Chopped Salad Recipe

    1/4 cup crumbled bleu cheese

    Steps:

    • Bleu Cheese Vinaigrette: Combine all ingredients except vinegar and lemon juice in a small pan over medium heat. Heat until mixture begins to bubble, remove from heat. Cool mixture. Combine cooled mixture with rice vinegar and lemon juice in a blender. Blend on high speed for 1 minute, cover and chill. Cinnamon Pecans: Combine sugar, water, butter, cinnamon and salt in a small pan over medium heat. When mixture first reaches a boil, add pecans. Stir constantly until liquid evaporates and sugar begins to crystallize on the nuts. Dont allow the nuts to smoke or burn. Pour sugar crystallized pecans out onto a plate to cool. Assemble The Salad: Combine lettuce, green onion, red cabbage, shredded carrot, pecans and pasta in a large bowl. Toss with 3/4 cup of the dressing. Top with 2 tablespoons crumbled bleu cheese on each serving.

    How To Make Blue Cheese Vinaigrette

    It is easiest to make this Outback Blue Cheese vinaigrette recipe with a blender or an immersion blender, but you can use a whisk as well.

  • Combine one pack of Italian dressing mix, balsamic vinegar, red wine vinegar, and water in a bowl.
  • Pulse a few times or whisk for about 10 seconds to fully hydrate the Italian dressing mix.
  • Set the blender on low, and slowly pour in the vegetable oil.
  • After adding all the oil, increase the speed to medium and blend for about 30 seconds. This is the most challenging step if you are using a whisk. It helps to have someone hold the bowl or pour the oil for you. Try rolling a dish towel into a tube and forming a ring on your work surface if youre cooking alone.
