A traditional Greek salad dressing is really a Greek vinaigrette as it contains olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic cloves, dried oregano and salt and pepper.

You can use virgin or extra virgin olive oil, but I think more important is the red wine vinegar, Dijon mustard and spices you use. Opt for quality ingredients like this organic red wine vinegar and Dijon mustard. And you know Im a big fan of Simply Organic spices .

  • The tomatoes. Unless you’re lucky enough to score tomatoes from the farmers’ market or a friend’s garden, always use cherry tomatoes. These little guys are much sweeter and more reliable year-round.
  • Fresh herbs. The flavor of using fresh herbs in Greek salad totally kicks it up a notch.
  • The dressing. We like to use two different kinds of vinegar , brine from the feta, some of our fav herbs, and really great olive oil. The combo is amazing.

  • Be sure to use a high-quality extra-virgin olive oil in any salad dressing, as the flavor will shine through.
  • When using fresh garlic in a salad dressing, I like to make sure it’s very finely minced. If I’m going to whisk or shake my dressing, I push a garlic clove through a garlic press, or finely mince and then mash with the side of my knife. If I’m using my mini food processor to assemble my dressing, I pulse the garlic clove first to chop it up before adding the rest of the ingredients and processing.
  • That being said, if fresh raw garlic is too strong for your taste, you may substitute ¼ to ½ teaspoon garlic powder instead.
  • I typically make my dressing with dried oregano, but if you’d like to substitute fresh chopped oregano, use three times the amount…1 tablespoon fresh instead of 1 teaspoon dried.
  • Fresh-squeezed lemon juice is best, but you can also use bottled lemon juice as long as “lemon juice” is the only ingredient.
  • If you find this vinaigrette to be too tangy or acidic, you can add a small pinch of sugar or a tiny squeeze of honey. It won’t be enough to make the dressing sweet, but just enough the mellow out the acidity.
  • For a Creamy Greek Salad Dressing, you may incorporate 2 to 3 tablespoons of Greek yogurt. However, if doing so, you may need to slightly increase the salt.

  • For seasoning your Greek salad use some salt and dried Greek oregano and finish off with a bit extra right before serving. Regular salt will be ok, but using a pinch or two of Cretan sea salt blossom will be a great addition. Be careful not to add too much salt as feta cheese can be already salty.

Like I said earlier, you can use this dressing or lemon vinaigrette in a variety of ways:

  • As a salad dressing. This is the obvious use here, and you can’t go wrong with that. I just used it on my favorite grilled chicken salad.You can use it on almost any green salads or maybe even Mediterranean orzo salad or Italian pasta salad in place of the typical dressing used. I mentioned earlier that the dressing for a traditional Greek salad is typically a splash of good olive oil and red wine vinegar. And often times, bottles of both condiments are set on the table so you can use as much oil and vinegar and you like. That said, if you want to use a couple of tablespoons of this lemon and olive oil dressing instead over your Greek salad you absolutely can!
  • As a sauce. You can drizzle ladolemono over grilled fish, chicken, or even grilled vegetables. I don’t mind a little over my quick pan-seared salmon or trout, for example.
  • As a marinade. Earlier, I shared a yogurt based chicken marinade, and this lemon dressing can work very similarly. When using a lemon-based marinade for chicken though, I typically allow no more than 2 hours of marinating in the fridge.
