Not only does it hold up well to the creamy mayo dressing but the shape complements round peas, diced pieces of ham and cheese. Like most pasta salad recipes, you can add or remove ingredients based on what you have on hand this recipe is very versatile.

Chicken Buy it cooked or poach your own. Then shred or finely chop into sort of baton shapes see below for photo. It melds better with the pasta and eats more easily than having chunky cubes
Macaroni The original pasta salad shape. But really, you can use any short pasta you want: penne, ziti, bow ties, spirals etc
Green onion For freshness and nice bits of green colour
Carrot and celery Standard creamy pasta salad vegetable add-ins
Capsicum/bell pepper For lovely, crunchy little specks of red throughout
Avocado Optional. I chose yes, but they were sadly far too firm to use. So they arent in the finished dish photos, or recipe video for that matter
Shredded cheese Because I always have and always will and
Bacon For great little pops of salty goodness. Ham also works really well .

Meanwhile, shake up the dressing. Again, traditionally we use a jar of Kraft Zesty Italian for the dressing, but since its not gluten free I use my Best Ever Italian Vinaigrette instead.

Las step is to add 6oz chopped pepperoni, 1 chopped cucumber thats been peeled then seeded, 3 Roma tomatoes that have been seeded and chopped, and a 2.25oz can sliced black olives that has been drained to a large bowl.
Add the cooled pasta, plus seasoning blend to taste plus 3/4 of the dressing then toss to combine. Refrigerate until cool then toss with the remaining dressing right before serving. As I mentioned, cooked gluten free pasta doesnt hold up well overnight, but a few hours in the refrigerator to meld the flavors is just fine.

Mayonnaise Use whole egg mayonnaise, for the best flavour. Its smoother and richer-tasting than non whole-egg mayonnaise. My favourite brands are Hellmans and S& W. If you dont have whole-egg mayonnaise, cut down on the cider vinegar slightly, otherwise the dressing is a bit vinegary
Sour cream As noted above, its used to cut down on the mayonnaise but still leave you with a lovely creamy dressing
Dijon mustard and garlic powder Flavourings. Everybody knows Im a Dijon mustard tragic!
