This classic Cobb salad recipe is loaded with all of the usual fantastic ingredients but with slices of juicy New York steak instead of chicken! Perfect for a summers day barbecue!
The Cobb salad has been around for a long time and now wonder with the ingredients that are used to make it. Every one of them are huge favorites of mine from the hard boiled eggs to the creamy diced avocado and of course, the crispy bacon! The original Cobb salad recipe includes chicken but I switched it up for some strips of grilled New York steak instead. The change doesnt affect the end flavor of the salad, its more about whether you prefer chicken or steak, I know some people can be one or the other so this is perfect to have options. This Cobb salad would also work well with roasted cauliflower or grilled tofu as the main protein.

How To Prepare Cobb Salad
I added a bit more color and bite to my salad by adding sliced, colorful mini peppers. You will still find hard boiled eggs, grilled chicken breast, fresh cherry tomatoes, bacon, avocados and two kinds of cheese . While the original recipe is dressed with a red wine vinaigrette, I chose a honey mustard instead. This brings a tangy sweetness that pairs well the grilled chicken and salty bacon.

There are e few things that I do to make this salad more healthy. I am all for what makes you feel good. Come days I like it original and other days, I want a leaner version and both are great options. Below are some suggestions of how I change it up sometimes.
- spring mix instead of romain lettuce, to include more darker leafy greens
- 2 egg whites, and 1 egg yolk, to cut down on saturated fat
- remove bacon
- green onions instaed of red onions, no reason. I love green onions and always have them on hand!
- feta cheese or blue cheese stays! I’m not ready to give up cheese in my life

A pandemic has many downsides. And the lobster industry is among the many sectors its taken a toll on.
If youre in the business of selling lobster, you currently have a lot of lobster available and a dearth of wholesale customers, not the ideal situation.
But there can be some bright spots, depending on how you look at it.
If youre a home cook, youll be glad to know that lobsters are cheaper than ever less than $6 a pound at many supermarkets. So, in theory, at these prices, you could be having lobster once or twice a week, not just for special occasions. Look at it this way: The more lobster we eat, the more we support the beleaguered lobster industry.

This recipe makes enough toppings for eight classic Cobb salads, perfect for feeding a crowd or for meal prepping a week of lunches. Ensuring the salads stay fresh is really a matter of keeping the salad dry pack the dressing separately, and leave the avocado off until just before serving. Layering the ingredients as directed below will keep the salad fresh for several days if stored covered in the fridge until ready to eat.

Keto Cobb Salad Recipe
- 2 1/2 heads romaine lettuce
- 8 slices bacon
- 4 medium skinless chicken breasts
- 1 1/4 tsp. salt
- 1/4 cup red onions, thinly sliced
- 1 large avocado, thinly sliced
- 16 cherry tomatoes
- Wash and dry lettuce. Chop and set aside.
- Warm a large cast iron skillet over medium-high heat. Add bacon slices and cook, turning 3-4 times, until cooked to desired crispness.
- Remove bacon from skillet and drain on clean kitchen towels. Remove half of the rendered bacon grease. When cooled, cut bacon into bite-sized slices, or crumble.
- Season chicken breasts with 1 teaspoon salt and 1/2 teaspoon black pepper. Place chicken breasts in the hot skillet. Cook for 57 minutes on each side.
- Remove the chicken breasts and place on a cutting board to rest for 5 minutes. When cooled, slice chicken breasts.
- Meanwhile, bring a pot of water to a boil on high heat. When the water is boiling, add eggs, place the lid on the pot, and turn off the heat. Let the eggs sit on the warm burner for 10 minutes.
- After 10 minutes, drain the eggs and let cool. When cooled, peel the shells, rinse the peeled eggs to remove any tiny bits of shell, then slice into quarters.
- Slice onion, avocado, and cherry tomatoes.
- On a large baking sheet, place the chopped romaine lettuce in a layer. Layer the cobb salad ingredients in rows: cherry tomatoes, hard boiled eggs, onions, chicken, avocado, bacon. Sprinkle with remaining salt and pepper. Drizzle with Ranch Dressing.

- 1 avocado, peeled, pitted, and diced
