Tuna + Pumpkin Mac & Cheese
1/16 tsp freshly grated nutmeg 15 oz. fresh ricotta or vegan cheese 1 cup kale, thinly sliced in ribbons tsp kosher salt, plus more for the breadcrumbs 3-5 cranks freshly ground pepper 2 tsp coconut oil or preferred fat to grease the baking pan 2 Tbsp melted butter ½ cup Panko breadcrumbs¼ cup freshly grated parmesan cheese
1. Preheat the oven to 400°F.
2. Cook pasta according to the directions, shortening the cook time by one to two minutes, so pasta remains al dente. Drain pasta, leaving 1-2 Tbsp pasta water in pot, and return pasta to the pot.
3. Stir in coconut milk, chicken broth, canned pumpkin, granulated garlic, hot sauce, nutmeg, and ricotta.
4. Fold in the tuna . Grease baking dish or cast iron enamel pot, then add in the mixture.
7. In a separate dish, melt the butter, add the Panko breadcrumbs, season with salt, and fold in the parmesan cheese. Pour breadcrumb mixture on top of the pasta and bake for about 20 to 25 minutes .

The Best Tuna For Tuna Salad
The most important element in creating tuna salad with great texture and flavor is starting with high quality, solid white albacore tuna in water. You do not want a lower quality variety, like chunk light tuna that is packed in oil, for a recipe like this. Solid white albacore is a bit pricier but SO worth the cost. You can pick up an 8-pack of Kirkland brand Albacore Tuna at Costco for a good price. When I cant get to Costco I like Bumble Bees Wild Caught Albacore in Water in the big 12 ounce can which I can almost always find at my local grocery store. Wild Planet is a great brand of sustainably caught wild tuna.
Tuna cans will indicate both the undrained and drained weights. The amount indicated in the recipe card refers to the undrained weight .
Different brands of tuna will come in different weights but you can easily modify this recipe to work with any brand/weight. Just use the necessary number of cans to get as close to the 12 ounces indicated in the recipe as possible. For instance, Kirkland brand comes in 7 ounce cans so use two and add additional mayonnaise, if needed, to reach the desired consistency.

What Is In Lemon Pepper Seasoning
The main ingredients in all brands of Lemon Pepper Seasoning are lemon zest and cracked black pepper. From there it can vary a bit but the bottle in my pantry, Lawrys Lemon Pepper Blend, also contains salt, a bit of sugar, garlic and onion. It is a great choice for seafood, a variety of meats and pasta dishes.

Bumble Bee: New Year New You Healthy Tuna Salad With Fresh Flatbread
The Holidays are now behind us, and while I am thankful for another year, I have learned that despite the requisite holiday cheer, if one looks very closely, and pays the utmost attention, the holidays are the best time to learn what people really think.
Over the course of this past holiday season, I had the good fortune of receiving an elliptical for, of all holidays, Thanksgiving aka my birthday. As I found myself assembling the exercise machinery shortly before Christmas, I thought, admittedly reluctantlythere is perhaps a message being sent here just perhaps. After my first, arduous use of the machine, I began to realize I was starting to resemble Frosty the beloved Snowman, and not his good cheer or charitable spiritbut in all the wrong ways, and that perhaps this bit of machinery was meant as a remedy for the aforementioned resemblance.
This is a New Year, make it a New You, I resolved, while battling far too much fatigue for far too little elliptical use.
Yes, in my decade long quest for literary excellence, I had been neglecting my physicality. As this realization set in, a terribly hard one to swallow pun intended I decided that it was perhaps time to work on myself, to take hold of the New Year not just intellectually and spiritually, but physically as well.

Bumble Bee Tuna Salad Is Ready To Eat
The Bumble Bee Tuna Salad Snack Kit includes everything you need to enjoy a healthy meal on the go. Each kit includes a can of premixed creamy tuna salad. Tuna Farro Bowl + Lemon Tahini Sauce
Serves 2 to 4
2 cans Bumble Bee® Solid White Albacore, drained and flaked with a fork½ cup uncooked farro 1-2 cranks freshly ground black pepper, plus more to taste 1-2 tsp extra-virgin olive oil 2-3 cups of cooked or roasted veggies of choice Fresh herbs to taste 1 watermelon radish or 2-3 red radishes, sliced thin 1 tsp thinly sliced scallions 1 Tbsp sesame oil, or sub extra-virgin olive oil Lemon tahini sauce, to taste
1. Cook farro according to package directions, season with salt and pepper, and drizzle with olive oil.
2. Serve in bowls, and add the roasted veggies, radishes, and scallions.
3. Add the tuna, season with salt and pepper, and top with a squeeze of lemon juice, sesame oil, and lemon tahini sauce to taste.
Lemon Tahini Sauce
2 Tbsp fresh lemon juice 1 tsp sherry vinegar 2 Tbsp extra-virgin olive oil¼ cup smooth, liquid tahini 1 Tbsp white miso 1 tsp Dijon or whole grain mustard½ tsp pure maple syrup¼ cup filtered water Small pinch of kosher salt 2-3 cranks freshly ground black pepper, plus more to taste
1. Add all ingredients to a blender or food processor, and blend until incorporated and smooth. Store up to five days in the fridge.

| 1 can bumble bee tuna in vegetable oil or 1 can tuna in water, drained |
| 1 tablespoon mustard |
| 1 stalk celery, chopped nicely |
| 1 small diced white onion |
| 1/4 cup seasoned bread crumbs |
| 4 slices bread or 2 pita breads |
Steps:
- Mix tuna with dry spices
- Salt and Pepper to taste.
- Mix in mayonnaise and mustard.
- Mix in celery and bread crumbs until well mixed.
- Add in diced onion and mix well.
- Add to bread as sandwich filling or stuff into pita.
- Also good on top of a crisp lettuce bed salad with parsley sprinkled on top.
