How To Do Weekly Meal Prep On Sunday For The Entire Week
I started preparing my meals and snacks ahead of time about 10 years ago. My strategy has evolved somewhat over the years as I learned what works and what doesnt for my situation, but this is what my Sunday meal prep day looks like now. Of course, you can prep any day of the week but Sunday has always worked best for me.
Mediterraan Avocado Salmon Salad
Thanks to the avocado and salmon in this dish, its loaded with healthy fats. The marinade used to cook the fish actually pulls double duty as the dressing here too. How Do You Preserve Fresh Vegetables For Meal Prep
Prepared foods are typically good for up to 4 days refrigerated. Prepped vegetables can last longeror shorter!depending on how they are prepared and how you store your fresh fruits and vegetables.
The key to long lasting fresh vegetables is to reduce as much moisture as possible. Wet vegetables will decay faster than dry ones, with the exception of carrots and celery.
Pat your veggies, such as lettuce, pepper, peas, and cucumbers dry or spin off the excess moisture in a salad spinner. Store them in airtight containers in the refrigerator.
In the case of carrots, celery, and radishes, storing them in a container of water can help extend their freshness.

Marinated White Bean Salad Jars
This salad meal prep recipe is easy and delicious. As an added bonus, the ingredients are all no-fuss. In fact, what we love most about it is that we were able to use spices and seasonings we had on hand. The salads will keep in the Mason jars for at least a few days. Using a layering technique, the veggies on top stay crisp and the beans get extra time to soak up all the good stuff.
What Containers To Prep Your Salads In

I will keep this part pretty short!! After LOTS, AND LOTS, AND LOTS of trial and error, I have found the tupperware containers that I will promote time after time.
I dont like plastic based tupperware, only because our tupperware gets used a LOT. I have found that the plastic ones just dont last as long after being run through the dishwasher.
My tupperware of choice is here!! I buy these over and over. I love the clear glass, you are able to see what is in the fridge and what is in each container.

This meal prep salad is made with some of my favorite veggies that stand up to the test of time in the fridge. Kale and Brussels sprouts are both great options for make-ahead green salads because they won’t wilt or get soggy as more tender greens tend to.

Tricks To Save Time Chop Your Veggies Ahead
Ok lets get to it! How can you have a veggie chop chop salad for lunch every day? Obviously, most of us dont have time everyday to chop up fresh salads to take to work or to put that work in on our lunch hour if working from home.
I figured out a compromise. A trick that allows me to make 2-3 salads ahead of time.
The trick is. chopping all my veggies for my salad on my meal prep Sunday! On Sundays, I put a lot of work to make healthy, whole-food breakfast, lunches, and dinner a reality. Washing and chopping all my veggies on Sunday allows me to add them to salads and wraps throughout the week!
I chop bell pepper, carrots, and cucumber and store them in a zip-lock with a paper towel. I have tried a lot of methods, a lot of expensive produce containers, and have found this to be the very best method!!
I do not add the tomatoes to the zip-lock. From trial and error I have learned that the tomato juice can make the carrot-pepper-cuke mix become soggy. Throwing in the tomatoes later is eazy peazy.
You might be askingWhy not just buy pre-chopped veggies at the store? If this is your only option to make your salad meal prep happen, then do it!! I feel like chopping my vegetables on Sunday, gives me peak freshness for the week!!
