How To Make A Potato And Green Bean Salad With Feta Vinaigrette

We love a big bowl of classic potato salad, but get just as excited with this simple salad of sliced potatoes, green beans, olives and a dressing made with feta cheese and sherry vinegar. For another mayo-free potato salad, take a look at our easy herb potato salad or try our easy green bean salad with crispy shallots!

We cook the potatoes whole then let them cool slightly and slice. For the green beans, we start with fresh and cook until crisp tender. Then to make the dressing, we whisk vinegar, olive oil, mustard and the lemon juice until creamy. Add the feta cheese, stir well then season with salt and pepper.

The real trick is to wait about 15 minutes before serving. In just 15 minutes the potatoes have a chance to soak up flavor from the dressing. The wait is worth it. This is perfect served as a side, but we usually enjoy it with some protein on top. Try baked chicken breast or some roasted shrimp.

My moms potato salad is better than your moms potato salad.

There, I said it and Im not taking it back! *wink*

Seriously though, my mother has magical abilities in the art of potato salad making. My mom makes traditional mustard, pickle, and hard-boiled egg potato salad. Its simple, but I have never made or tasted another potato salad better than her version And Im not the only person to think so.

Over the years Ive watched countless relatives and friends swoon over her classic potato salad.

The problem is, when you ask her for the recipe she has a hard time sharing it, because she doesnt actually have a recipe written down. She makes it by feel.

Its taken years of watching, assisting her, and asking questions to come up with what I consider to be her recipe.

What Type Of Potato Is Best For Potato Salad

Best Ever Potato Salad | 3 Ingredients | Easy Recipe | No EGG

We use white potatoes, or Yukon Golds, in our familys recipe. Because they have a thinner skin, theyre easy to peel after boiling and taste creamier, a little sweeter, and hold their shape well after cooking. Avoid using starchier potatoes like russets that too easily turn to mush in salads like this.

Also remember to choose potatoes of the same size for the most consistent cooking.

    Easy Potato Salad With Egg

Published: by · This post may contain affiliate links

This creamy, veggie-filled easy potato salad with egg is the perfect inclusion to a BBQ, family gathering, potluck, and just a summery treat. Serve it as a mashed potato salad or whole and customize to your taste requirements!

Potato salad is one of those quintessential summer dishes for me. It works so well with everything: alongside BBQ grub, as a healthy salad side, slathered onto homemade pita bread, or even eaten with a spoon straight from the bowl . This easy potato salad recipe has all my favorite elements: egg, mayo, and lots of yummy veggies. But, its also super customizable, so check out my recipe notes for some tips and suggestions.

    The Best Potatoes To Use

Small, waxy, and thin-skinned potatoes are best for potato salad. Small yellow, white or red potatoes are perfect . They are quick-cooking, and since they are already small, theres no need to chop them before cooking them.

Leave the potatoes whole. Whole cooked potatoes maintain more of their flavor and natural sweetness. Were also partial to the texture of potatoes when they are cooked whole compared to chopped.

If you dont have small, waxy potatoes available, other potatoes will work in their place the texture will be slightly different. We try not to use russet potatoes since they tend to fall apart.

If thats all you have, dont worry. Chop them before cooking they are much larger and take a long time when cooked whole.

The Main Elements Of This Easy Potato Salad

This recipe is a bit of a classic potato salad, but with a twist its mashed. Luckily, even if youre not in the mood for a mashed version, all of the elements are there for a classic potato salad, too. However, I really think you should give mashed potato salad a go.

Why you ask? Well, Im not sure about you but I love to slather my potato salad on everything: in burger buns, over pita bread, in wraps, etc. And having it as large chunks of potato can be messy. However, when mashed, you get all the flavors of potato salad but in an easy-to-spread mixture that you can add to all sorts of meals.

But first, lets get into the main ingredients needed for this recipe.

Potatoes: The best potatoes for potato salad can differ depending on who you ask. But, personally, any kind of waxy potato is usually best when wanting to keep the potatoes whole . Those types dont break down as much. However, obviously, if youre serving it mashed like me, then feel free to use any potatoes you have to hand .

Hard-Boiled Eggs: This is a personal preference, but I love the flavor and texture provided by potato salad with egg . Especially with the creamy hard-boiled egg yolks. I use Clarence Court Burford Browns eggs. These can be made in an instant pot, or on the stovetop. Personally, I pop them straight into the potato pan.

The Sauce: Ive kept things simple and classic here. However, I actually used all homemade condiments! Thats completely optional, of course, but super delicious!

    Cook’s Tips And Recipe Variations:

    • It’s important to put the potatoes in the pot of water before you heat up the water and bring it to a boil. This ensures even cooking. If you drop the potatoes into already boiling water, the outside of the potatoes will cook quickly, while the inside will stay hard.
    • Boil the potatoes whole. Do NOT dice or peel the potatoes before they go in the water. Cutting or dicing the potatoes causes them to release steam while cooking, which will result in a mushier potato.
    • The potatoes will take about 15-20 minutes in the boiling water to become fork-tender. If you’re using baby potatoes, they may only require about 10 minutes, so keep a close eye on them — you don’t want to overcook them and end up with mushy potatoes.
    • How much potato salad per person? It’s safe to assume that 1 pound of potatoes will feed about 3-4 people. In this case, 2 pounds of potatoes for the potato salad yields about 6-8 servings. If you plan to feed 20 people, you will need to triple all of the ingredients. To feed 50 people, you will need about 8 batches for 100 people, about 15 batches…and so on.
    • Optional additions to the old-fashioned potato salad: Garnish the dish with any fresh herbs that you enjoy add a sprinkling of paprika just before serving stir in cooked, crumbled bacon add a few hard-boiled eggs include a dollop of mustard or stir in some pickle relish. Take the basic recipe and make it your own!

    Recipe Tips And Variations

    • Make ahead: Make up to three days in advance and store covered in the refrigerator.
    • Shelf life: Potato salad should not sit out at room temperature longer than 2 hours. According to the USDA, If the potato salad was held in excess of 41°F for over two hours, then discard. Its better to be safe than sorry.
    • Mix-ins: Make this potato salad your own by adding cooked bacon, fresh chives or other herbs, minced pickles or relish, peas, capers, or slivered radishes.
