This recipe makes about 4 servings, but can easily be doubled or tripled if you’d like to make a larger batch. This recipe makes enough to serve with one large salad.

This dressing uses primarily pantry ingredients, so it’s easy to pull together, but it still has complex flavors.

Ina Garten Honey Mustard Dressing Recipes

1/2 cup good olive oil
1 tablespoon red wine vinegar
1/2 teaspoon Dijon mustard
1/4 teaspoon freshly ground black pepper
1 tablespoon minced shallot
4 ounces mesclun mix

Steps:

  • In a small bowl, whisk together the oil, vinegar, mustard, honey, salt, pepper and shallots until the vinaigrette is emulsified.
  • Toss the greens with enough dressing to moisten and serve immediately.

How To Make This Dressing

To make this dressing, whirl all the ingredients except the oil in a blender or food processor. Then open the blender cap plug, and gradually stream in the oil with the motor running. This ensures that the dressing emulsifies and becomes slightly creamy.

If youre not feeling like breaking out a blender or food processor, dont worry! You can still make this dressing! Either whisk it aggressively in a bowl or put the ingredients in a jar with a tightly fitting lid and shake until the dressing is creamy and cohesive.

Kale And Apple Salad With Honey Dijon Dressing

YIELD:Makes 8 servings

1 -bunch kale, washed and stems removed or 14 oz. baby kale

zest and juice of 1 lemon, zest reserved for dressing

1 tsp. -salt

1 -apple, cored and thinly sliced

1 cup -toasted walnuts, roughly chopped

1/2 cup -dried cherries

3 T -white balsamic vinegar

2 T -honey

1 T -fresh rosemary, chopped finely

1/2 tsp. -freshly ground pepper

DIRECTIONS

Chop kale leaves into bite size pieces. In a large bowl toss together the kale, lemon juice and salt. Using your hands, massage the kale leaves a bit to soften them and let it sit for at least 15 minutes up to 1 hour.

While the kale is softening, whisk together the vinaigrette or shake all ingredients together in a jar, set aside.

Add the apple slices, walnuts, dried cherries, parmesan and vinaigrette to the kale and toss to combine and serve.

This salad can be made several hours ahead or even the day before! Add grilled chicken for an entree salad.

Sure, you can use any white or red wine vinegar here, too, but if you have it I think apple cider vinegar is the way to go here. My favorite combo to add this dressing to is red leaf lettuce, apples, Craisins and toasted almonds. If I would have had feta on hand, that would have been tossed over the top but, well, life didnt allow for feta at the time. Regardless, it was a delicious salad.

  • Mustard plays a major role. We prefer to use creamy Dijon mustard for this, but whole grain or even regular yellow mustard will work in its place.
