Arugula Salad With Peaches Goat Cheese And Basil


  • 4 to 5 ounces baby arugula
  • 2 ripe peaches, pitted and cut into 1/4-inch slices
  • ½ cup julienned fresh basil leaves
  • 2 ounces creamy goat cheese, crumbled
  • 2-3 tablespoons White Peach balsamic

In a small sauté pan, toast the pine nuts over medium heat, tossing often, until golden brown, about 3 minutes. Remove from the heat. Whisk together the olive oil and balsamic in a measuring cup or bowl. Place the arugula in a large salad bowl. Pour just enough dressing over the greens to moisten and toss to coat. Add the peaches, basil, goat cheese and toasted pine nuts and toss to coat. Add more goat cheese and dressing if desired. Toss gently and serve immediately.

  • Grill on covered on medium-high heat 5-7 minutes a side. Ive found that covering the grill helps peaches to cook faster, but watch that you dont overcook and peaches become mushy.

Its tomato and peach season, people, and I am here for it! I planted four tomato plants in my garden this year and, unlike my zucchini plants, they are producing! p.s. anyone know why my zucchini plant would be flowering but not producing? GRRR!

As a result, Im looking for any and every tomato recipe that I can get my hand on. Luckily, I came up with this one early in the season and now have my go-to tomato salad. Its not just any tomato salad, either. Oh no. This is Tomato Peach and Goat Cheese Salad. Praise the flavor Gods!

Seriously, this salad is so simple but so full of flavor. The main flavor stars are the ripe juicy peaches, fresh tomatoes , thinly sliced red onion, fresh basil , and goat cheese.

Lets not forget about the dressing, either. Three simply ingredients: olive oil, white balsamic vinegar, and honey. I told you SIMPLE!

You might be wondering about the white balsamic vinegar. Was that a typo? No, friend, it was not. I love using white balsamic vinegar, especially on salads that have fruit, as its a little bit lighter in flavor than balsamic vinegar, and also keeps it looking fresh and not so.brown.

I have to let you in on a little secret. If you buy one of those big bags of chopped kale, this becomes more than an Easy Kale Salad. This becomes a REALLY EASY Kale Salad. Im all for time-saving tips when it comes to healthy eating. Buy the chopped kale and give yourself the gift of easy.

Even though the bagged chopped kale is already chopped, I chop it some more to make it really finely chopped.

Then I chop my peaches. So Im using canned or jarred peaches for this. If it happens to be that magical summer moment when peaches are in season, BY ALL MEANS use fresh peaches. But, you know, that happens for about 2 minutes.

Add the chopped peaches and goat cheese to the kale.

Youll need to toast your almonds. Place them in a dry skillet over medium heat until they are fragrant and golden brown.

To make the dressing, simply place all of the dressing ingredients into a small glass jar and shake well. This is my favorite way to make a quick and easy salad dressing.Add the almonds to the salad bowl with the kale, peaches, and goat cheese.

Toss the ingredients together.

Season well with salt and pepper. Next, drizzle with the dressing on top of the salad.

Now toss it well to coat the entire salad with the dressing.

Boom. Youre done.

And damn! Look at that salad!

Peppery arugula is combined with crisp peaches, creamy goat cheese crumble, crunchy almonds and finished with a sweet and zesty honey lemon dressing. This salad may be simple, but its light, refreshing, flavourful and totally delicious af.

Not only is this a great holiday salad but its great for lunch or dinner any day of the week topped off with your favourite protein. Id suggest tempeh, crispy tofu, grilled chicken, or salmon!

Notes On Making Arugula Salad With Peaches:

  • I use pecans, but you could substitute walnuts instead if thats what you have on hand.
  • I love this with the creamy, soft goat cheese, but you could use feta cheese or another crumbly cheese if you prefer.
  • Mostly, I prefer to make my own salad dressings, but you could certainly substitute a store-bought balsamic vinaigrette or another vinaigrette you love. I think a champagne or citrusy vinaigrette would be great here too.

Upping the summer salad game with this peach and goat cheese salad! The ideal fusion of flavour and texture is created between the sweetness from the the soft peaches, crunchy red onions and the chewy candied pecans, and the tanginess and intense flavours of the crumbly goat cheese and leafy arugula.

Summer is here to stay for a while, which means I dont have enough energy to cook for long hours. I also try to minimize as much as possible the use of the stove and the oven in these hot months. Therefore, I opt for easy, healthy and flavourful meals as this salad!

I wanted to use what is in season and local at the moment, and since in Summer many fruits are available, and the local store had the most beautiful ripe peaches, I went for a peach salad. To be honest with you, I have a weird thing for peaches. I do like them. Yet, dont make me touch a really fuzzy peach as I get the heebie-jeebies. Luckily, these were fine and all was good, but it took me quite a while to decipher if I would be all good. I served these peaches raw as they were perfectly ripe. However, you can also grill the peaches for this salad. It will add a deeper and sweeter flavour to this salad.

    Well, yesterday brought a big surprise and not the fun kind.

    Around lunchtime, our city water folks showed up and announced that we had a buried man hole in our front yard. That needed to be unburied.

    I cannot tell you the giant hole that was dug, the giant mess that was made and the unsightly man hole cover that is now a permanent part of our front yard.

    And now for distractions sake, cause this literally made me cry yesterday afternoon, lets move on to the food

    Its kind-of peach week here on the blog and that makes me smile.

    On Monday, I brought you my skillet chicken with peaches and today its my arugula salad with peaches, pecans and goat cheese.

    Its such a pretty, light salad and has all kinds of flavors weaving in and out with each other.

    I love how the peppery arugula pairs so well with the sweet, juicy peaches and then you get the nutty crunch from the pecans, topped off with the creamy goat cheese crumbles.
